Blueberry Coffee Cake

I found this recipe for blueberry coffee cake in Taste of Home’s Baking Book. As I have mentioned a couple of times earlier, the recipes which appear in that magazine are perfect and it does not disappoint you at all. So this coffee cake recipe was no exception to it. I’m not a big blueberry fan. I buy these berries to make blueberry milk for my son and other than that we don’t do much with it. Sometimes he asks for blueberry pancakes but this time he didn’t want neither. I was looking for blueberry recipes and found this coffee cake recipe. The first thing which caught my attention was that it used only 2 tablespoons of butter and it was very easy to prepare. These days my son is so keen on helping me while baking so I have to consider the ease of preparation too while choosing a recipe. So this recipe was perfect. The only change I had to do was to use unsweetened applesauce to substitute one egg and add little apple cider vinegar and the cake turned out GREAT.

I saw this recipe for chocolate cherry pudding cake in 1001 Low Fat Vegetarian recipes long time back. I decided to bake this on Father’s Day with my son. He loves to help me while baking. He is my cute little sous chef.

Eggless Chocolate Cake

Bottle Gourd in a cake? Sounds weird right? The credit for this one goes to my friend and neighbor R. Couple of months back she wanted to try the eggless zucchini bread recipe I had posted. She didn’t have zucchini in hand and she told me that she used bottle gourd instead. We were eagerly waiting to taste the bread but she told me that the bread did not turn out good because of some problem with the oven. From then onwards I have wanted to try bottle gourd in a cake because quite often people ask me what they can substitute for zucchini. Finally I tried it in this cake and the verdict is I would use it in a rich chocolate cake but not in any other cake/muffin recipe. The cocoa masks most of the smell from the bottle gourd. Usually my husband is the first to point out things like this, but even he couldn’t notice any difference and my son too.
