But I was surprised that  it does work and many food bloggers and two non bloggers have also tried it and have sent in their entries as well.  So thank you everybody for participating in this event.  As I mentioned in the event announcement I think we have covered all the major egg substitutes.  Others not covered are agar-agar, lecithin, soy flour etc.  <strong><a href="http://pg-kitchenstories.blogspot.com/" target=" _blank">PG</a></strong> and Zankhna (a visitor) suggested conducting an event for agar-agar, which I plan to announce in a month or two.  Thank you once again for making this Egg Substitution series a grand success.  <span id="more-1617"></span></p>

<p><img alt="Oatmeal Cookies" src="http://www.egglesscooking.com/images/food-events/ere/yogurt/mukta-oatmeal-cookie-bars.jpg" title="oatmeal Cookies" class="alignleft" width="150" height="113" />This is my favorite homemade cookie/granola bar recipe. I have been baking them with egg substitutes for quite a long time and thought it was an appropriate recipe for Madhuram&#8217;s Egg Substitute Event-Yogurt/Buttermilk. <p>I have made the following few changes to the above recipe:</p>
<p>1. The recipe mentions the use of 2 eggs. I always substitute it with 1/2 a cup of fat free milk and 2 tsp of vinegar (which is actually a substitute for buttermilk as well). I am sure Vegans can use Soy Milk/Rice Milk/Almond Milk. I got to know that each egg can be substituted by ¼ th cup milk and 1 tsp of vinegar (Courtesy: <strong><a href="http://cooks.ndtv.com/showreply.asp?id=18145" target="_newwin">Chef Niru Gupta</a></strong>.<br />
2. I have tried Lime Juice as well in the same amount (after confirming from Chef Niru Gupta via emails) and it works fine. However recently I came to know that if you need to use lime juice instead of vinegar, the ratio of lime juice to vinegar must be 2:1. Hence next time I plan try this recipe with 4 tsp of lime juice instead of 2 tsp of vinegar.<br />
3. I prefer ‘King Arthur Unbleached White Whole Wheat Flour’ for all my baking and cooking.<br />
4. Oatmeal of Generic Brand can be used. I use old fashioned oats. I have observed that bars made with old fashioned oats become more crispy (the way my friends like it) than those made with quick oats.<br />
5. I use 1 ¼ cup of white sugar.<br />
6. I usually avoid salt.<br />
7. I use ¾ th cup of vegetable (or canola) oil instead of the 1 cup of unsalted butter. (Refer here for <a href="http://www.foodsubs.com/Fatsoils.html" target=" _blank"><strong>fat substitutions</strong></a>) It has been mentioned that 4 parts of solid fat can be substituted by 3 parts of oil.<br />
8. Though the recipe mentions raisins, I have tried using chopped  almonds. I believe any variety of chopped nuts and/or chocolate chips can be added. They also taste really good without any nuts or dried fruits as well.<br />
9. I prefer them to be crispy and hence I bake them on a greased cookie sheet for 25-30 minutes on the top rack in a conventional oven (please refer to the original recipe for baking time). I let them cool for 5 minutes outside the oven, cut them into small size pieces and then again let them cool completely for an hour before storing.</p>
<div style="text-decoration:underline; font-weight:bold;">Zankhna&#8217;s Eggless Glazed Lemon Cake</div>
<div class="jkprocedure">Ingredients</div>
<p>For the cake:<br />
1-1/4th sticks unsalted room temperature butter<br />
1 cup granulated sugar<br />
1 tablespoon vinegar (I used white vinegar)<br />
1/6th Cup grated lemon zest<br />
1 ½ cups flour<br />
¾ teaspoon baking powder<br />
¼  teaspoon baking soda<br />
½ teaspoon salt<br />
1 tablespoon freshly squeezed lemon juice<br />
6 tablespoons yogurt (I used fresh homemade one)<br />
½ teaspoon vanilla extract</p>
<p>For the syrup:<br />
1/4th cup granulated sugar<br />
1/4th cup freshly squeezed lemon juice</p>
<p>For the glaze:<br />
1 cup confectioner’s sugar sifted<br />
1 3/4th tablespoons freshly squeezed lemon juice</p>
<p>Preheat the oven to 350 degrees F. Grease and flour 1 8/12 by ¼ by 2/12 inch <a href="http://www.amazon.com/Wilton-Excelle-Elite-4-Cup-Mini/dp/B0000DIX7P" target="_newwin"><strong>loaf pan</strong></a> that could make 4 mini loaves and this recipe yielded 3 mini loaves)</p>
<div class="jkprocedure">Directions</div>
<p>For the Cake:<br />

Cream the butter and sugar together with an electric mixer or by hand until it is light and fluffy. Mix the lemon zest to this and keep aside.<br />
2. Sift the flour, baking powder, baking soda and salt together.<br />
3. In another bowl combine the lemon juice, yogurt and vanilla.<br />
4. Add the flour mixture from 2 and yogurt mixture from 3 above, alternatively to the creamed butter.<br />
5. Lastly add vinegar to this and pour it in the pan and bake for about 45 minutes to an hour until a cake tester comes out clean (I had to bake mine only for about 30-33 minutes as the same amount of batter was spread over a larger surface area.)<br />
6. Cool the cakes for about 10-15 minutes. Remove them from the pan and set them on a rack.</p>
<p>For the syrup:<br />
1. Combine granulated sugar with lemon juice and cook over low heat until the sugar dissolves.<br />
2. Pour this syrup over the cake that has cooled for about 10-15 minutes.(Remember to set your cooling rack over a plate to catch the syrup that runs down the cakes)<br />
3. After this allow the cakes to cool completely (I cooled mine overnight).</p>
<p>For the glaze:<br />
1. Combine the confectioner’s sugar and the lemon juice until smooth. Pour over the cakes and set aside (covered) until the glaze sets.</p>
<div class="jkprocedure">Notes</div>
<p>I love the taste of lemon or orange in a cake and was always looking for an eggless recipe for it. I found this <a href="http://www.foodnetwork.com/recipes/ina-garten/lemon-cake-recipe/index.html" target="_newwin"><strong>recipe</strong></a> on food network by Ina Garten but it was for 2 big loaves. So I scaled it down to make one loaf. Also when I tried the original recipe, I only made these substitutions:<br />
   • Substituted eggs with Yogurt + 2 tablespoons vinegar<br />
   • Increased the amount of butter and baking powder to help the elimination of egg</p>
<p>By making these changes, the cake had a great texture and cooked perfectly. But it was too sweet and very sour (not just lemony). So then the next time, I reduced the amount of sugar, vinegar and lemon juice in the recipe (the above recipe lists the revised measurements).  </p>
<p>A couple of other combination I would like to try are 1) to use condensed milk instead of vinegar as an egg substitute &#038; 2) to try to bake these in a large loaf pan instead of a mini loaf pan. I am wondering whether the cake will hold the shape if cooked in a bigger pan and cook evenly like it did in the mini loaf pan. Both the times I baked these, I was going to have company and didn’t want to risk the results. Hence I baked them in the mini loaf pan. But I will try to bake it in a larger loaf next time. </p>
<p>This cake has the best taste an eggless lemon cake can have. It has a great texture, cuts nicely into slices and looks great. </p>

<p>2 2/3 cups Plain Flour<br />

2 tsp Soda-bi-carb<br />

6 tbsp Cocoa Powder<br />

1 tsp Vanilla essence<br />
2/3 cup Oil<br />
1 1/4 &#8211; 1 1/2 cups Cold water </p>

<p>1. Mix dry ingredients and seive few times to incorporate air.<br />
2. Mix wet ingredients (mix only 1 cup water at this point as more can be added later, if needed)<br />
3. Mix wet ingredients gradually with dry ingredients (preferably electric beater).<br />
4. Bake in preheated oven at Gas Mark 4/160C for about 30 minutes. </p>
<p>I have decorated this cake with fresh whipped cream and fresh fruits. </p>
<p>This recipe is very simple and easy to make. </p>

<p><span title="L" class="cap"><span>L</span></span>ike always I have received a lot of entries for the Vinegar event too.  This time I have also received recipes from 2 visitors who are not food bloggers.  I will post their recipes this week and do the round up next week.</p>
<p>I have chosen yogurt as this month&#8217;s theme.  Buttermilk is also included.  Vegans can use soy yogurt.  I think this will be the last substitute in this series.  I see that lecithin, gelatin, arrowroot powder, soy flour etc are also mentioned as egg substitutes, but I think that they are not as versatile as the ones which we have covered already.  One of the visitor here (Sadhana) mentioned about <a href="http://www.veganbaking.net/eggless-binders/chia-seed-binder.html"><strong>Chia seeds as egg substitute</strong></a>.  I found out that it is similar to that of flax seed powder substitution.  You have to powder the chia seeds and blend it with water.  So I&#8217;m going to take a pass on that.   If anybody has any other egg substitute in mind, please let me know. <span id="more-1523"></span></p>
<p>I&#8217;ve not used either yogurt or buttermilk as an egg substitute.  From various sources I understand that if there are no other ingredients to make the baked item rise, then one of these can be used in place of the egg. Replace the liquid in the recipe with same amount of buttermilk or thinned yogurt.  But I&#8217;m also going to try using 1/4 cup of yogurt/buttermilk in place of 1 egg.  Let&#8217;s wait and see which one works.</p>
<p>Now for the rules of the event:</p>

1.   Bake anything from cookies, cakes, cupcakes, muffins, breads, tarts, pies, etc using yogurt/buttermilk/soy yogurt and post about it in your blog between <em><strong>March 18th and April 18th 2009</strong></em>.   </p>
<p>2.  Post the recipe in your blog, with a picture and <strong>link back to this post</strong>.  Also feel free to share your experiences and tips while using the substitute regardless of the outcome.  This would provide the much needed insight about that particular egg substitute.</p>
<p>3.  Since the idea behind the event is to help those who are searching for tried and tested eggless baking recipes, <strong>you can also send me the recipes which you have posted earlier in your blog using yogurt/buttermik/soy yogurt as an egg substitute</strong>.  <em><strong>Reposting is not necessary, but link it to this event</strong></em>.  That being said, I would really appreciate if you could try new recipes too and post it, because eggless recipes are never enough.</p>
<p>4.  Also multiple entries are welcome more than ever for this event.</p>

<p><span title="F" class="cap"><span>F</span></span>irst I would like to thank all my blogging buddies for flooding my inbox with recipes using EnerG egg replacer powder.  You all know that my husband only does the round up right!  I have to give him the content and he will take care of the presentation part.  Since he is extremely busy with his office work, he can work on this only on Sunday.  So wait until Monday to see what wonders you can create with egg replacer powder.</p>
<p>This month&#8217;s egg substitute is vinegar.  I read in a couple of books that 1 tablespoon of vinegar along with 1 teaspoon of baking soda can be substituted for 1 egg.  Both white distilled vinegar and apple cider vinegar can be used.  This combination works best in cakes, cupcakes and quick breads.  I also read in few forums that 2 tablespoons of lemon juice can be used in place of the 1 tablespoon vinegar.  So for this event you could use either, but I have to mention here that I have not tried the lemon juice substitution.  <span id="more-1509"></span></p>
<p>Also I see a lot of baking recipes with vinegar, especially in various vegan books, websites and forums.  You can try those recipes also.  That is, you could either take a recipe which has eggs and substitute it with vinegar or try recipes which already has vinegar in it and is eggless too.   </p>
<p>Now for the rules of the event:</p>

1.   Bake anything from cookies, cakes, cupcakes, muffins, breads, tarts, pies, etc using vinegar/lemon juice and post about it in your blog between <em><strong>Feb 13th 2009 and March 14th 2009</strong></em>.   </p>
<p>2.  Post the recipe in your blog, with a picture and <strong>link back to this post</strong>.  Also feel free to share your experiences and tips while using the substitute regardless of the outcome.  This would provide the much needed insight about that particular egg substitute.</p>
<p>3.  Since the idea behind the event is to help those who are searching for tried and tested eggless baking recipes, <strong>you can also send me the recipes which you have posted earlier in your blog using vinegar/lemon juice as an egg substitute</strong>.  <em><strong>Reposting is not necessary, but link it to this event</strong></em>.  That being said, I would really appreciate if you could try new recipes too and post it, because eggless recipes are never enough.</p>
<p>4.  Also multiple entries are welcome more than ever for this event.</p>

<p><span title="I" class="cap"><span>I</span></span>n my previous post I had mentioned that I had to bake cookies for my son&#8217;s class.  This was the other cookie I baked for his friends.  I used <a href="http://www.egglesscooking.com/2008/10/06/eggless-chewy-chocolate-chip-cookies/"><strong>this</strong></a> recipe, but instead of using silken tofu as the egg replacement, I used EnerG egg replacer powder.  The instructions in the EnerG box mention that it does not work well with store bought mixes.  I took a chance anyway and was surprised that the cookies came out so well.  These cookies were also chewy and did not spread as much as the silken tofu ones.  Last time I had used Duncan Hines cake mix and this time I used Betty Crocker&#8217;s german chocolate cake mix and I felt that the latter ones had a smell which I didn&#8217;t relish.  I think the flavorings in the Betty Crocker cake mix gave that smell.  Nobody else could really feel it.  I&#8217;m known for my exceptional &#8220;nose-power&#8221;.  So the next time I bake these cookies I&#8217;m definitely going to use Duncan Hines.  Also this time I used dried cranberries instead of raisins, reduced the amount of chocolate chips and increased the quantity of dried fruit. <span id="more-1505"></span>  </p>

The last time I baked these <a href="http://www.egglesscooking.com/2008/11/05/vegan-brownie-cupcakes/"><strong>vegan brownies</strong></a> and <a href="http://www.egglesscooking.com/2008/11/05/vegan-brownie-cupcakes/"><strong>vegan pumpkin cookies</strong></a>.  This time I decided to bake rich cocoa <strong>crinkle cookies</strong> from Hershey&#8217;s Holiday Favorites.  This is a small book with recipes for decadent cakes, cookies, brownies and more.  I chose this recipe because it was simple to bake and also saw that the recipe yielded 6 and 1/2 dozen cookies and I need that much.  I was not sure for one reason because it used 4 eggs and it would be the first time I will be replacing 4 eggs with an egg substitute and especially with EnerG.  Finally I decided to go with it and baked it.  The <strong>crinkle cookies</strong> were real good.  I was expecting a crisp cookie, but it was chewy.  I think the quantity of sugar can be reduced.  Since it was for the kids I made it small (2 bites size).  I used approximately 1/2 tablespoon dough for each cookie and got exactly 100 cookies.  My son liked the cookies.  He usually narrates me everything that happens in class and from what he told I gathered that his friends liked it as well. </div>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> <span class="step">1</span> In a mixing bowl, stir together flour, baking powder and salt.  Keep it aside.</p>
<p><span class="step">2</span> In another large mixing bowl, beat together the oil and sugar.  Then add the cocoa and beat once again until well blended.</p>
<p><span class="step">3</span> In a blender, blend together the EnerG powder and warm water for 2-3 minutes until it&#8217;s foamy.</p>
<p><span class="step">4</span> Add the EnerG mix and vanilla extract to the wet ingredients and beat it once again.</p>
<p><span class="step">5</span> Add the flour mixture gradually to the cocoa mixture, beating well.  At this stage the cookie dough becomes very thick.  My electric hand beater stopped working and I had to mix the dough with my hand.  It had the consistency of stiff chapathi dough.</p>
<p><span class="step">6</span> Cover and refrigerate the dough for at least 6 hours.</p>
<p><span class="step">7</span> Preheat oven to 350F for 15 minutes.  Prepare cookie sheets by greasing or lining with parchment paper. </p>
<p><span class="step">8</span> Shape the dough into balls (I used around 1/2 tablespoon of dough); roll in powdered sugar to coat.  Place about 2 inches apart on prepared cookie sheets.</p>
<p><span class="step">9</span> Bake 10 to 12 minutes or until almost no indentation remains when touched lightly and tops are crackled.  I baked mine for 11 minutes.  Cool slightly.  Remove from cookie sheet to wire rack and cool completely. </p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> The instructions in the EnerG pack suggests to use warm water while blending the powder.  I didn&#8217;t do that in my earlier recipes but did this time and I think it foams up more while using warm water.  Also the suggested ratio for the powder and water is 1 and 1/2 teaspoons and 2 tablespoons water.  So it is 6 teaspoons powder and 8 tablespoons water in this recipe.  I did the same first and while mixing the dough I found that it did not come together.  It was crumbly.  So I added 1 tablespoon water at a time to the dough and felt the texture was right after adding 4 tablespoons of water in total.</p>
<p><span class="step">1</span> I first test baked 2 cookies.  When tasted I found that it was very sweet.  So for the subsequent batches I rolled the cookies with very less powdered sugar.  For the final batch, I rolled the shaped cookie dough in cocoa powder to balance the sweetness.  With the first bite you can taste a very light bitterness but it gets sweeter and the cookies were a little sticky.</p>
<p><span class="step">2</span> The next time I bake it I&#8217;m going to try reducing 1/4 cup of sugar.<br />

I had half a dozen apples in the fridge.  I browsed the index for recipes with apples and found this <strong>apple cake recipe</strong>.  The recipe was very simple, used only one egg, so easy to substitute the egg.  The cake came out very well.  It was very moist and fluffy, but over the top sweet.  The original recipe used 1 cup sugar and the apples I used were sweet too, so the cake became very sweet.  So I have changed the recipe to 3/4 cup of sugar.  I was wondering what to do with the cake, then got this (wonderful) idea.  I was not sure whether it would work, but I was totally surprised and happy with the result.  Check the My Notes section to see what I did.  But this <strong>apple cake recipe</strong> is definitely a keeper for its easy prep and unbelievably moist and fluffy texture for a vegan cake.  <span id="more-1500"></span></p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> <span class="step">1</span> Preheat oven at 350F for 15 minutes.  Grease an 8-inch square baking dish.</p>
<p><span class="step">2</span> In a large mixing bowl, cream butter and sugar until light and fluffy.  Since the quantity of butter is very less, the creamed mixture was dry and resembled coarse crumbs.</p>
<p><span class="step">3</span> In a blender/food processor blend together Ener-G, water, soy milk and vanilla extract until nice and foamy.</p>
<p><span class="step">4</span> Add the Ener-G mixture to the creamed butter/sugar and beat everything together with the hand mixer until thoroughly combined.  This mixture looks creamy like a white sauce.</p>
<p><span class="step">5</span> In another bowl combine the flour, baking soda, salt, cinnamon and nutmeg (if using).  Add this to the wet ingredients.  The batter will be thick.</p>
<p><span class="step">6</span> Stir in apples and nuts.  Mix it thoroughly. </p>
<p><span class="step">7</span> Spread the batter in the prepared pan and bake for 35-45 minutes or until a toothpick inserted near the center comes out with just a few crumbs.  Mine was done around 38 minutes.  You can also see that the cake starts pulling from the edges.</p>
<p><span class="step">8</span> This cake can be sliced directly from the pan while its still warm, so no need to wait for the pan to cool to invert it and then slice it.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> The original recipe mentioned only 3 tablespoons butter.  Since I had only 4 tablespoons (1/2 a stick) remaining from a stick, I used it entirely.  Did not want to keep the balance 1 tablespoon in the fridge.  I think that extra tablespoon of butter helped to get the amazing texture for the cake.</p>
<p><span class="step">2</span> The apples were required to be diced, but I grated it because I was not sure if my son would eat the cake if it had chunks of apples in it.  He usually eats all fruits and especially apples and pears are his favorite. But I can never guess him.  The apples were really invisible, so if you have a picky eater sneak the apples by grating.</p>
<p><span class="step">3</span> I was wondering what to do about the sweetness.  If it&#8217;s not sweet enough you can always sprinkle some powdered sugar, have it with vanilla ice cream etc.  But how to reduce the sweetness.  Then I got this idea of coating the cake with unsweetened chocolate so that the bitterness would offset the sweetness.  I wanted to try it immediately but did not have it at home.  Sent my husband immediately to the grocery store and he got the Baker&#8217;s unsweetened baking chocolate.  It&#8217;s a pack of 8 individually wrapped squares of plain chocolate.  I wanted to test very little first.  So melted 3 squares in the microwave oven.  Cooled it a little bit.  I decided to shaped the cake into small balls and dip it in the melted chocolate so that it would resemble truffles.  Since the cake was slightly warm and moist I was able to proceed with the idea and shaped them into small balls.  Dipped the cake quickly into the melted chocolate and placed it in a baking sheet lined with parchment paper.  I had a perfect slice of cake as well.  My husband dipped 3 sides of the cake in the chocolate.  I placed the baking sheet in the fridge for the chocolate to set.  I couldn&#8217;t contain my excitement to taste it.  Managed to wait until the next day morning.  The chocolate had set perfectly and I took a bite of the apple cake truffle and was literally doing the happy dance.  It tasted so good!  The bitterness of the unsweetened chocolate took care of the sweetness perfectly.  The taste was phenomenal.  I&#8217;m very glad that I tried this <strong>apple cake recipe</strong>.       </p>

I have baked <a href="http://www.egglesscooking.com/2008/09/02/eggless-chocolate-chip-cookies/"><strong>crispy</strong></a> and <a href="http://www.egglesscooking.com/2008/10/06/eggless-chewy-chocolate-chip-cookies/"><strong>chewy</strong></a> variety of eggless <strong>chocolate chip cookies</strong> earlier, but hands down this is the BEST.  This recipe is from one of my favorite cookbooks &#8220;The Joy of Vegan Baking&#8221;.  I didn&#8217;t have non dairy butter and non dairy semi sweet chocolate chips, so used regular butter and semi sweet chocolate chips.  Other than that I did not make any changes in the recipe.  The cookies turned out awesome.  Crisp around the edges and chewy in the center.  Just perfect.  If you want to bake eggless chocolate chip cookies, then this is the recipe you must have.  <span id="more-1499"></span> </p>

<p>Yield: <strong>3 and 1/2 dozen cookies</strong></p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> <span class="step">1</span> Preheat the oven to 375F/190C.  If using a non stick pan greasing is not necessary, otherwise use parchment paper to line the cookie sheets.</p>
<p><span class="step">2</span> In a large bowl, cream together the butter, granulated sugar, brown sugar and vanilla.  </p>
<p><span class="step">3</span> In a food processor/blender whip together the egg replacer powder and water together, until it&#8217;s thick and creamy.  Add this mixture to the creamed butter and sugar, combine thoroughly.</p>
<p><span class="step">4</span> In another bowl, sift together the flour, baking soda and salt.</p>
<p><span class="step">5</span> Gradually beat the flour mixture into the wet mixture until it begins to form a dough.</p>
<p><span class="step">6</span> When it is almost thoroughly combined stir in the chocolate chips and nuts, if using.</p>
<p><span class="step">7</span> I greased a tablespoon to scoop the dough and drop it easily onto the baking sheet.</p>
<p><span class="step">8</span> Bake 8-10 minutes, or until golden brown.</p>
<p><span class="step">9</span> Let stand for 2 minutes on the baking sheet itself.  Then transfer the cookies to wire racks to cool<br />
completely before storing.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> My first batch of cookies did not turn golden brown even after 11 minutes.  I removed it anyway and noticed that the bottom was very brown.  So from the second batch onwards I removed it from the oven around 9 minutes itself.  Even though the cookies had a pale yellow color, they were baked enough and tasted very good.  I guess using dark brown sugar instead of light brown sugar would give the golden brown color.</p>
<p><span class="step">2</span> For vegan <strong>chocolate chip cookies</strong> use non-hydrogenated, non dairy butter and nondairy semisweet chocolate chips.  </p>

<p>This is a very simple and colorful quick bread recipe.  Also Uma has used only 2 tablespoons of oil.  Instead of using chopped nuts, she has used semi sweet chocolate chips and I&#8217;m sure that kids would love that combination very much.</p>

<p>Actually I have to name this as Indira&#8217;s Eggless Banana and Carrot cake.  This was the recipe which got me hooked on baking and eventually inspired me to start this blog.  This is a no fail recipe.  I must have baked these cakes at least a dozen times.</p>

<p>Check out here for cute looking spiced carrot muffins.  It doesn&#8217;t look like its an eggless muffin.  I was encouraged by her to use prune puree as an egg substitute.</p>

<p>Black beans in cupcakes?  Don&#8217;t be skeptical about this one because I can assure you that nobody can find it out.  You can&#8217;t taste both black beans as well as the prune puree.</p>

<span title="I" class="cap"><span>I</span></span>n the past 4 months we have baked a lot of goodies using <a href="http://www.egglesscooking.com/2008/10/17/egg-replacement-event-silken-tofu-round-up/"><strong>silken tofu</strong></a>, <a href="http://www.egglesscooking.com/2008/11/20/egg-replacement-event-flax-seed-meal-round-up/"><strong>flax seed powder</strong></a> and <a href="http://www.egglesscooking.com/2009/01/12/pureed-fruit-as-egg-substitute-round-up/"><strong>pureed fruit</strong></a> as <a href="http://www.egglesscooking.com/egg-replacements/"><strong>egg substitutes</strong></a>.  This month I&#8217;m calling all of you to bake with egg replacer powder like EnerG.  I see that more people are using the commercial egg replacer powder and EnerG in particular these days.  I for one do not have any experience baking with EnerG.  I did buy a packet 3 months back, but have not opened it until now. <span id="more-1490"></span></p>
<p>I think there are 2 brands of commercial egg replacer powder available.  One being EnerG and the other one Bob&#8217;s Red Mill.  I was able to find EnerG in the regular grocery store in the natural foods/organic aisle.  Alternatively you can buy it online from Amazon or directly from the manufacturer itself.</p>
<p>EnerG is a combination of potato starch, tapioca flour and leavening agents.  It&#8217;s dairy free too.  The packet comes with instructions and recipe ideas.</p>
<p><em><strong>Instructions for use:</strong></em>  EnerG suggests 1 and 1/2 teaspoons powder mixed in 2 tablespoons warm water in place of 1 egg.  Food allergies cookbook author Carol Fenster recommends using 2-3 times as much powder in the same amount of water for better results.  She also mentions to whip the mixture in a food processor or blender for 30 seconds for added lightness.  EnerG also suggests that it works best in scratch recipes and not in all store bought mixes.  Trial and error is the only way to determine its effectiveness with a particular mix.  Detailed information on measuring the powder and substituting it for egg whites, egg yolks is also available in the packet.</p>
<p>Now for the rules of the event:</p>

1.   Bake/cook anything from cookies, cakes, cupcakes, muffins, breads, tarts, pies, etc using EnerG or any other commercial egg replacer powder and post about it in your blog between <em><strong>Jan 6th 2009 and Feb 10th 2009</strong></em>.  It can be anything sweet, salty or spicy.</p>
<p>2.  Post the recipe in your blog, with a picture and <strong>link back to this post</strong>.  Also feel free to share your experiences and tips while using the substitute regardless of the outcome.  This would provide the much needed insight about that particular egg substitute.</p>

Since the idea behind the event is to help those who are searching for tried and tested eggless baking recipes, <strong>you can also send me the recipes which you have posted earlier in your blog using EnerG as an egg substitute</strong>.  Reposting is not necessary, but link it to this event.  That being said, I would really appreciate if you could try new recipes too and post it, because eggless recipes are never enough.</p>
<p>4.  Also multiple entries are welcome more than ever for this event.</p>
<p>5.  Email me your name, blog URL, name of the recipe, recipe URL, photo in 150wx120h size to <strong>ere(at)egglesscooking.com</strong> with EnerG as the subject.</p>
<p>6.  Non bloggers are also welcome to send your recipes, tips and picture of your creation and I will include it in the round up.</p>
