Eggless Bran Muffins Recipe

It’s been a while since I baked anything in the past 2 months. Finally got a chance to pull out my baking stuff. I was supposed to go to a pot luck party at my friend’s house last week and wanted to bake something to take with me. I also wanted to use the very ripe bananas that was sitting in the fruit basket. If you are a frequent visitor here you know by now that I have a LOT of baking recipes using bananas. Cookies, cakes, cupcakes, breads, muffins, and more. You name it and I have it. Today’s recipe is egg free banana bran muffins.

One Bowl Eggless Chocolate Cupcakes

Happy Diwali Wishes to all readers of Eggless Cooking. We celebrated my little one’s 4th birthday last week. He has always been a strawberry fan. He has been telling that he wants a strawberry cake right from August. So it was a no-brainer for me. All I had to do was to find a good strawberry cake recipe. But it was not as easy as I thought. More about that in the strawberry cake post. On the eve of his birthday party while I was baking the strawberry cake and pineapple sheet cake (yes baked that one too), he came next to me and asked in the cutest possible way that he wanted chocolate cupcakes. How can I say no to that adorable little guy!

Decadent Banana Nutella Muffins

Banana Nutella Muffins

Until recently the vegan blueberry muffins was my favorite muffin recipe ever. God knows how many times I have baked it with so many variations! But all that changed one day when I baked these banana Nutella muffins. I don’t know if I’m being bias because I’m a chocoholic. The love for Nutella doesn’t help either! So I think I have to push the blueberry muffins recipe down, give that the second place and these absolutely decadent beauties move to the sweet first spot. My kids loved these muffins so much that they are deliberately avoiding eating bananas so that it would ripen very much and I can make these banana Nutella muffins again.

Vegan Lemon Poppy Seed Muffins

A couple of days back I had asked my Facebook fans a question about recipe requests, which is if they have any recipe they would like to see here. I got a lot of feedback. Poppy seed cupcakes or muffins, choux pastry, eclairs, yeast breads, pies, cheesecakes were asked the most. I didn’t have time to bake something as elaborate as pies, cheesecakes or choux pastry so decided to go with a rather simple one.
