Indian Tofu Tikkis

Next to cauliflower and broccoli, tofu is my husband’s favorite. Actually he would eat anything vegetarian if it’s healthy. For me the criteria is, it has to taste good. So I experiment with tofu to satisfy both our needs. So far our favorite is tofu paratha. I drain the tofu well, grate it, add some Indian spices and divide the mixture into small balls. Then proceed to prepare the parathas as usual, using the tofu stuffing.

Oven Roasted Cauliflower Fries

Cauliflower is my husband’s favorite vegetable, so I try to cook different dishes with it.  Nupur’s Cauliflower Soup has become such a hit in my house, these days even my mother is asking me to make it quite often.  While searching the net I came to know about oven roasted cauliflower and was so tempted to try it.  There are 1001 recipes available throughout the net for roasted cauliflower and this is my version.

Baked Plantain Chips

J and B’s Baked Plantain Chips has become yet another favorite in our house.  This is the 2nd time I’m making it.  Before knowing this recipe I used to find plantains everywhere but I never used to buy it because I did not not know what to do with it.  Then one day I found this recipe and believe me or not I couldn’t find plantains anywhere.  I did not take pictures the first time I made it, because my husband was snacking it away and actually we did not have anything left to be taken with rice.  This time I managed to take a picture before we could gobble them up.

Vegetarian Empanadas

In Mexico these turnovers are also called Empanaditas.  This is a Mexican Appetizer.  I found this recipe in Better Homes and Gardens’ “Off the Shelf Baking” book.  The original recipe did not have a vegetarian filling.  So I decided to use black beans instead.  Added benefit, more fiber and protein than the original version.  My husband suggested to use soy granules, but what can be more Mexican than black beans?  I think I will try his suggestion the next time.
