Happy vacation to me!  I have taken pictures for a few recipes but am not sure if I will be able to post them. <span title="W" class="cap"><span>W</span></span>hen I started EgglessCooking.com last year, I did not have big plans for it.  I was drawn towards baking but did not want to use eggs.  So I was collecting egg free baking recipes from various websites and blogs and pasting the links in a Word document, which was becoming very difficult to manage.  One fine morning I told my husband that I wanted to start a website to put all these links under one roof.  Actually I didn&#8217;t even know what a blog was then! At first he did not take it seriously.  Why would he? It was not the first time when I&#8217;m all excited about a new idea but lose interest after a couple of days!  After a lot of nagging, he listened to what I had to tell and started working on it and thankfully I too have not lost interest until now.  <span id="more-1645"></span></p>
<p>The interesting feature of having a blog as against a website is the interaction going between the blogger and the visitor.  Food bloggers visit other blogs leave comments, try their recipes, participate in their food events and build a nice relationship.  But I felt I was not giving a proper platform to other visitors (non bloggers) to communicate with each other, share their recipes, baking experiences etc.  Some of them were posting recipes in the comments section (under various posts) and I was also getting a lot of egg free recipes via email.  I thought it was high time I did something about it.  So I present to everybody Eggless Cooking Forums!</p>
<p>So non-bloggers, in this forum you can create a support group if you or your loved ones have egg allergies, brainstorm about egg substitutes, share your egg free baking recipes and upload pictures of your creation, request eggless recipes, troubleshoot a baking problem, etc.  No more excuses for not participating in the events I conduct in EgglessCooking.com.  If you have a recipe fitting the event, submit the recipe under the respective category, use Photobucket, Flickr, etc to upload the picture.  I&#8217;ll pick it from there and include your recipe in the round up.</p>
<p>Wait, wait, wait!  Let me make it clear!  This forum is open to everybody (bloggers as wells as non bloggers).  I won&#8217;t exclude you, my dear blogging buddies.  You too can post the egg free baking recipes you have posted in your blog, so it will reach the people who are looking for it.  You can also benefit from adding your blog&#8217;s URL in the Signature field.    </p>

I would have never imagined such a huge response even in my wildest dreams.  It was better than me celebrating my own birthday!  You guys made me feel so special!  I was also thrilled to know that a couple of people were inspired by me to start baking.  What else can I ask for?  I really feel a sense of accomplishment which I have not felt in a long time now. <p><span title="Y" class="cap"><span>Y</span></span>es, <strong>EgglessCooking.com</strong> has turned one today.  When I started it, I was not much of a baker.  My baking experience was limited only to <a href="http://www.nandyala.org/mahanandi/" target="_newwin"><strong>Indira&#8217;s</strong></a> <a href="http://www.egglesscooking.com/2008/03/19/carrot-cake/"><strong>Banana and Carrot cake</strong></a>.  I had tried that cake a couple of times with various modifications.  I would say that the continued success from trying that recipe only kindled my passion for baking.  Even though I was visiting her blog regularly, at that time I didn&#8217;t know that it was a blog and there were so many other food blogs maintained by people passionate about baking and cooking.  While exploring her blog I saw the food blogs list.  I started visiting each and every blog in search of eggless baking recipes, bookmarked as and when I found any.  While doing this I realized that there were many people out there searching for eggless recipes.  One day I got this idea, why not put all the eggless recipes I have collected so far under one page so it would be helpful for others too.  My husband liked the idea too. </p>

<p>Then I contacted <a href="http://www.aayisrecipes.com/" target="_newwin"><strong>Shilpa</strong></a> and Indira to know more about this food blogging.  Both gave me positive feedback.  Since Shilpa was on her vacation then, I contacted Indira for further inputs.  She was very kind enough to help me with the beginner&#8217;s stuff.  Not only that she also spoke about my blog in her blog, which really got the word going.  I really owe you a big one Indira.  I also have to thank <a href="http://jugalbandi.info/" target="_newwin"><strong>Bee</strong></a> for letting me know about <a href="http://connect.sailusfood.com/" target="_newwin"><strong>TOI RSS feed</strong></a>.  That also made a huge impact.  <a href="http://ammaluskitchen.info/" target="_newwin"><strong>Dee</strong></a>, my heartfelt thanks to you too for your invaluable suggestions and also for enriching my life with your pure friendship.</p>
<p>Next I have to thank my husband for helping me in so many different areas.  Actually helping is a very small word.  He literally took over/care of the technical stuff, marketing and mainly photography.   I&#8217;m not exaggerating when I say that he has invested more time than me in this blog.  </p>
<p>How can I forgot my food blogging buddies and other visitors who shower me with their generous compliments!  I thank each and everybody from the bottom of my heart.</p>
<p>I wanted to post some recipe today, but instead I&#8217;m going to follow Indira&#8217;s footsteps and would like to introduce <a href="http://egglesscakesnchocolates.wordpress.com/" target="_newwin"><strong>Payal</strong></a> here.  She too bakes eggless cakes and I&#8217;m floored by her cake decorating skills.  It&#8217;s really difficult to believe that those <a href="http://www.orkut.com/Main#Album.aspx?uid=9570920949570761136&#038;aid=1227691264" target="_newwin"><strong>beautiful cakes</strong></a> are egg free.  Also she uses easily available ingredients to bake these cakes.  Check it out.</p>

<span title="D" class="cap"><span>D</span></span>o you know that flax is grown both for its seeds and for fiber?  Yes, don&#8217;t be surprised.  Various parts of this versatile plant are used to make fiber, dye, paper, medicines and soap.  The next 30 days we are going to try recipes which use these flaxseeds as egg substitutes.  <a href="http://en.wikipedia.org/wiki/Flaxseed" target="_newwin" rel="nofollow"><strong>Flax seeds</strong></a> come in 2 basic varieties, brown and yellow/golden and both these types are the most concentrated source of essential omega-3 fatty acids, so it should be a part of our diet even if it is not used as an egg  substitute.  I top it on both cold and hot cereals, smoothies, milkshakes and salads.  <span id="more-952"></span></p>

<strong>How to replace eggs using flax seed meal?</strong><br />
For each egg to be replaced,  blend in a blender/food processor 1 tablespoon flax seed with 3 tablespoons water until the mixture is thick and creamy.  <strong>Update:</strong> I have a book &#8220;<strong>Sinfully Vegan</strong>&#8221; by Lois Dieterly, she has mentioned the ratio as 1 teaspoon of flax seed powder and 1/4 cup of water for every egg to be replaced.  I did try her <a href="http://www.egglesscooking.com/2008/11/05/vegan-brownie-cupcakes/"><strong>Vegan Brownies</strong></a> with that ratio and it came out very good.  &#8220;<strong>The Joy of Vegan Baking</strong>&#8221; suggests to whisk 1 tablespoon flax seed powder and 3 tablespoons water.  </p>

<strong>Buying and Storing Flax seeds:</strong>  Although ground flaxseed or flaxseed meal is readily available in the grocery stores, it is recommended to buy the whole seeds and grinding them as and when needed.  Also the ground flax seed should be stored in a well sealed container in the fridge or freezer.</p>
<p><strong>When can this be used as an egg substitute?</strong>  Flax seed has a nutty flavor and so it works in baked goods that are grainier and nuttier, such as waffles, pancakes, bran muffins, breads and oatmeal cookies.  (Source: The Joy of Vegan Cooking by Colleen Patrick-Goudreau)</p>
<p><strong>Other interesting facts about flax seed</strong> (from Bob&#8217;s Red Mill pack):<br />
1.  Just 2 tablespoons of flax seed meal delivers 4 grams of fiber, as much fiber as 1 and 1/2 cups of cooked oatmeal!  Studies prove that when this is added to the diet, harmful LDL cholesterol drops,<br />
while good HDL cholesterol stays put.</p>
<p>2.  Flax seed contains high levels of lignans, a natural antioxidant, which can maintain breast and colon health by binding circulating estrogens that might promote unchecked cell growth.  To get the<br />
lignans that are in just 2 tablespoons of flax seed meal, you&#8217;d need to eat about 30 cups of fresh broccoli.</p>
<p>3.  Flax seed is a mega-source for the plant version of omega-3 called Alpha-Linolenic Acid.  The oil in flaxseed is about 50% ALA.  One serving (which is 2 tablespoons) contains 2400 milligrams of omega-3.</p>
<p>Isn&#8217;t the above information enough to start including flax seed meal in our diet regularly?</p></div>

1.   Bake/cook anything from cookies, cakes, cupcakes, muffins, breads, tarts, pies, etc using flax seed meal and post about it in your blog between <em><strong>Oct 15th 2008 and Nov 14th 2008</strong></em>.  It can be anything sweet, salty or spicy.</p>
<p>2.  Post the recipe in your blog, with a picture and <strong>link back to this post</strong>.  Also feel free to share your experiences and tips while using the substitute regardless of the outcome.  This would provide the much needed insight about that particular egg substitute.</p>

<p><span title="I" class="cap"><span>I</span></span> have added a number of recipes to the existing list of <strong><a title="eggless cakes" href="http://www.egglesscooking.com/eggless-baking-recipes/eggless-cake-recipes/" target="_self">Eggless Cakes</a></strong>, <strong><a title="eggless cookies" href="http://www.egglesscooking.com/eggless-baking-recipes/eggless-cookies/" target="_self">Eggless Cookies</a></strong> and <strong><a title="eggless muffins" href="http://www.egglesscooking.com/eggless-baking-recipes/eggless-muffins/" target="_self">Eggless Muffins</a></strong>.  This time I have also added another page for <strong><a title="eggless bread recipes" href="http://www.egglesscooking.com/eggless-baking-recipes/eggless-breads/" target="_self">Eggless Bread Recipes</a></strong>.  Please note that all these eggless recipes are from other blogs, so we know for sure that these have been tested in a real kitchen.<span id="more-98"></span></p>
