Vegan Mango Muffins

I had some ripe mangoes at home and wanted to bake something with it. I already have a vegan mango cake recipe which I love to bake anytime. I was trying to choose between a muffin and quick bread. Muffins it was! I took some inspiration from a couple of my vegan muffin recipes and came up with this vegan mango muffins recipe. The muffins turned out pretty good but I thought it was missing some spice. Ground cardamom or nutmeg would have been a lovely addition.

I bought a pack of Cloud 9′s gluten-free, all-purpose baking mix from Costco to experiment with gluten-free, egg free baking. It’s a combination of rice flour, buckwheat flour, corn starch, potato starch, tapioca flour and xanthan gum. I tried my usual vegan waffle recipe with the mix and we all liked it. In fact my eldest son mentioned that he can barely tell any difference in the taste or texture. I tried my luck with a blueberry scone recipe but it was a total disaster. I can’t figure out what went wrong. So I had stopped trying out new recipes for a while. I didn’t want to waste the flour which is quite expensive. My successful attempt in baking these gluten-free brownies gave me the courage to experiment with the mix again. We had a lot of very ripe bananas at home and couple of boxes of unsweetened applesauce. I remembered seeing a banana applesauce muffins recipe in Canada’s 150 Best Diabetes Desserts books. So I decided to bake a gluten-free version of the same. While gathering the ingredients I also decided to make it vegan.

A couple of months back I borrowed the book 150 Best Diabetes Desserts from the library and liked the recipes in it. So I was thrilled to find the same book in our library’s used books sale for a dollar. The book has recipes for cakes, muffins, quick breads, cookies, cheesecakes, etc. These recipes are not sugar free but they use considerably lesser amount of real brown and granulated sugar instead of artificial sweeteners, which is the main reason I got this book. Most of the recipes use healthy ingredients like whole grains and flours, unsweetened applesauce, yogurt, flax seed meal. I tried a oatmeal raisin muffin recipe before and loved it. This time I wanted to bake something with pumpkin puree because I had some leftovers after baking these pumpkin cupcakes.

Vegan Vanilla Cupcakes Recipe & Video

Last week was my son’s birthday and I was in a huge dilemma about choosing a cake recipe to bake for his big day. But he made it pretty simple by saying that he wanted a cheesecake because one of his friends cut a cheesecake for his birthday. Now this was even more difficult for me because I have not baked an egg free cheesecake so far. That’s when I decided to take the easy route of making a raw vegan cheesecake, which was also quite new to me. So I wanted to have a back up if the raw cheesecake flopped and planned to bake some egg less pumpkin cupcakes with cream cheese frosting. Then I needed to have a back up for that too or let’s say that I just wanted to have an alternate for the kids to choose and wanted to bake some plain eggless vanilla cupcakes.
