Vegan Corn Muffins

Boston Market’s corn bread is my favorite and I’ve always wanted to bake something similar at home. I found a corn muffin recipe in The Taste of Home Baking Book, submitted by one of it’s reader Barb Marshall. I love The Taste of Home magazine and especially this baking book because the recipes work like a charm. Nothing can go wrong. I’ve seen a couple of recipes for corn muffin, but this one was very simple and easy to veganize also. These muffins can be prepared in no time. Vegan Chocolate Cupcakes

Yes, unlike the usual chocolate cupcakes these cupcakes are rich in fiber and protein. 18gms protein and 21gms fiber in total! Wondering how? One and half cups of pureed black beans is mixed with the batter and the beauty is, you wouldn’t taste the black beans or anything different! You can make these cupcakes even more healthy by using whole wheat pastry flour instead of all purpose flour. I adapted this black bean chocolate cupcakes recipe from the book Vegetarian Times Fast and Easy. I made a couple of changes to make it vegan. Read the rest of this entry »

Vegan Christmas Fruitcake

Merry Christmas to all! Two days ago I was browsing the Joy of Baking site for some inspiration to bake something new. I found this dried fruit and nut quick bread recipe. I’ve always wanted to bake a rich christmas fruitcake, and this recipe fit the bill because it uses only very little flour and is fully loaded with dried fruits and nuts. Another interesting thing, it does not require any oil or butter. Yes it’s true, no oil or butter absolutely. It’s also dairy free. The only thing I had to change was to use an egg substitute. Since it’s a fruitcake I decided to use applesauce to replace the eggs in the recipe. Also there is no other ingredient in the recipe to moisten it, so I added 1/4 cup of water and additional 1/4 teaspoon of baking soda to compensate the eggs. Read the rest of this entry »
