<td><strong>Meeta&#8217;s Coconut &#038; Milk Cookies</strong><br/>Very simple recipe for cookies made with non fat milk powder and powdered coconut.  Prepare the dough while the oven is preheating and you can have freshly baked eggless coconut cookies in no time.<br/>Recipe:<br/><br />
<span style="text-decoration:underline;background-color:transparent;">Ingredients:</span><br />
1 CUP- ALL PURPOSE FLOUR<br />
½ CUP- NONFAT MILK POWDER<br />
3 tsp – UNSALTED BUTTER<br />
1/3 CUP – SUGAR<br />
2-3 tsp – WHOLE MILK<br />
PINCH – BAKING SODA<br />
1CUP- COCONUT POWDER<br />
3-4- CARDAMOM</p>
<p><span style="text-decoration:underline;background-color:transparent;">Procedure:</span><br />
1) Mix all purpose flour and milk powder in a mixing bowl. See that they mix well and there are no lumps. Then add  butter, sugar and baking soda.<br />
2) Now add milk I tsp at a time and knead the mixture into a soft dough.<br />
3) Preheat oven to 375 degree. Grease a cookie sheet now and then powder it with all purpose flour. Form small balls of dough and flatten them pressing coconut powder on top.<br />
4) The mixture will form 30-35 cookies. But it depends on the size you choose.<br />
5) Place the cookie sheet  on middle rack. They will take 12-13 min to bake.<br />
6) Take them out and let them cool for some time before taking them off the cookie sheet.

We had a &#8216;Summer Dessert Bake Off&#8217; at work. I was really scared by the look of it; Nonetheless it was a huge hit.  I did not add any nuts to keep it fat free. But for next time my parents have already advised me to add nuts and substitute Honey/Maple Syrup for half of the sugar. I was left with extra batter. I added Light Vanilla Soy milk, water and made pancakes.

4. Before baking, I made many deep holes in the dough with fingers.<br />
5. I baked it in a 9 inch round cake pan.<br />
6. I did not add red chili flakes or any other seasoning. Thus we can not call it a Focaccia Bread but me and my roommates enjoyed it a lot with Indian Style Chick Pea Curry (Chole) and Black Eye Peas Curry.<br />
7. I also like to eat it for my breakfast with homemade Hummus or Peanut Chutney. </p>

As I mentioned in the event announcement I think we have covered all the major egg substitutes.  Others not covered are agar-agar, lecithin, soy flour etc.  <strong><a href="http://pg-kitchenstories.blogspot.com/" target=" _blank">PG</a></strong> and Zankhna (a visitor) suggested conducting an event for agar-agar, which I plan to announce in a month or two. <p><img alt="Oatmeal Cookies" src="http://www.egglesscooking.com/images/food-events/ere/yogurt/mukta-oatmeal-cookie-bars.jpg" title="oatmeal Cookies" class="alignleft" width="150" height="113" />This is my favorite homemade cookie/granola bar recipe. I have been baking them with egg substitutes for quite a long time and thought it was an appropriate recipe for Madhuram&#8217;s Egg Substitute Event-Yogurt/Buttermilk.  Check out the original recipe <a href="http://www.quakeroats.com/cooking-and-recipes/content/recipes/recipe-detail.aspx?recipeId=474" target=" _blank"> here.</a></p>
<p>I have made the following few changes to the above recipe:</p>
<p>1. The recipe mentions the use of 2 eggs. I always substitute it with 1/2 a cup of fat free milk and 2 tsp of vinegar (which is actually a substitute for buttermilk as well). I am sure Vegans can use Soy Milk/Rice Milk/Almond Milk. I got to know that each egg can be substituted by ¼ th cup milk and 1 tsp of vinegar (Courtesy: <strong><a href="http://cooks.ndtv.com/showreply.asp?id=18145" target="_newwin">Chef Niru Gupta</a></strong>.<br />
2. I have tried Lime Juice as well in the same amount (after confirming from Chef Niru Gupta via emails) and it works fine. However recently I came to know that if you need to use lime juice instead of vinegar, the ratio of lime juice to vinegar must be 2:1. Hence next time I plan try this recipe with 4 tsp of lime juice instead of 2 tsp of vinegar.<br />
3. I prefer ‘King Arthur Unbleached White Whole Wheat Flour’ for all my baking and cooking.<br />
4. Oatmeal of Generic Brand can be used. I use old fashioned oats. I have observed that bars made with old fashioned oats become more crispy (the way my friends like it) than those made with quick oats.<br />
5. I use 1 ¼ cup of white sugar.<br />
6. I usually avoid salt.<br />
7. I use ¾ th cup of vegetable (or canola) oil instead of the 1 cup of unsalted butter. (Refer here for <a href="http://www.foodsubs.com/Fatsoils.html" target=" _blank"><strong>fat substitutions</strong></a>) It has been mentioned that 4 parts of solid fat can be substituted by 3 parts of oil.<br />
8. Though the recipe mentions raisins, I have tried using chopped  almonds. I believe any variety of chopped nuts and/or chocolate chips can be added. They also taste really good without any nuts or dried fruits as well.<br />
9. I prefer them to be crispy and hence I bake them on a greased cookie sheet for 25-30 minutes on the top rack in a conventional oven (please refer to the original recipe for baking time). I let them cool for 5 minutes outside the oven, cut them into small size pieces and then again let them cool completely for an hour before storing.</p>
<div style="text-decoration:underline; font-weight:bold;">Zankhna&#8217;s Eggless Glazed Lemon Cake</div>
<div class="jkprocedure">Ingredients</div>
<p>For the cake:<br />
1-1/4th sticks unsalted room temperature butter<br />
1 cup granulated sugar<br />
1 tablespoon vinegar (I used white vinegar)<br />
1/6th Cup grated lemon zest<br />
1 ½ cups flour<br />
¾ teaspoon baking powder<br />
¼  teaspoon baking soda<br />
½ teaspoon salt<br />
1 tablespoon freshly squeezed lemon juice<br />
6 tablespoons yogurt (I used fresh homemade one)<br />
½ teaspoon vanilla extract</p>
<p>For the syrup:<br />
1/4th cup granulated sugar<br />
1/4th cup freshly squeezed lemon juice</p>
<p>For the glaze:<br />
1 cup confectioner’s sugar sifted<br />
1 3/4th tablespoons freshly squeezed lemon juice</p>
<p>Preheat the oven to 350 degrees F. Grease and flour 1 8/12 by ¼ by 2/12 inch <a href="http://www.amazon.com/Wilton-Excelle-Elite-4-Cup-Mini/dp/B0000DIX7P" target="_newwin"><strong>loaf pan</strong></a> that could make 4 mini loaves and this recipe yielded 3 mini loaves)</p>
<div class="jkprocedure">Directions</div>
<p>For the Cake:<br />

Cream the butter and sugar together with an electric mixer or by hand until it is light and fluffy. Mix the lemon zest to this and keep aside.<br />
2. Sift the flour, baking powder, baking soda and salt together.<br />
3. In another bowl combine the lemon juice, yogurt and vanilla.<br />
4. Add the flour mixture from 2 and yogurt mixture from 3 above, alternatively to the creamed butter.<br />
5. Lastly add vinegar to this and pour it in the pan and bake for about 45 minutes to an hour until a cake tester comes out clean (I had to bake mine only for about 30-33 minutes as the same amount of batter was spread over a larger surface area.)<br />
6. Cool the cakes for about 10-15 minutes. Remove them from the pan and set them on a rack.</p>
<p>For the syrup:<br />
1. Combine granulated sugar with lemon juice and cook over low heat until the sugar dissolves.<br />
2. Pour this syrup over the cake that has cooled for about 10-15 minutes.(Remember to set your cooling rack over a plate to catch the syrup that runs down the cakes)<br />
3. After this allow the cakes to cool completely (I cooled mine overnight).</p>
<p>For the glaze:<br />
1. Combine the confectioner’s sugar and the lemon juice until smooth. Pour over the cakes and set aside (covered) until the glaze sets.</p>
<div class="jkprocedure">Notes</div>
<p>I love the taste of lemon or orange in a cake and was always looking for an eggless recipe for it. I found this <a href="http://www.foodnetwork.com/recipes/ina-garten/lemon-cake-recipe/index.html" target="_newwin"><strong>recipe</strong></a> on food network by Ina Garten but it was for 2 big loaves. So I scaled it down to make one loaf. Also when I tried the original recipe, I only made these substitutions:<br />
   • Substituted eggs with Yogurt + 2 tablespoons vinegar<br />
   • Increased the amount of butter and baking powder to help the elimination of egg</p>
<p>By making these changes, the cake had a great texture and cooked perfectly. But it was too sweet and very sour (not just lemony). So then the next time, I reduced the amount of sugar, vinegar and lemon juice in the recipe (the above recipe lists the revised measurements).  </p>
<p>A couple of other combination I would like to try are 1) to use condensed milk instead of vinegar as an egg substitute &#038; 2) to try to bake these in a large loaf pan instead of a mini loaf pan. I am wondering whether the cake will hold the shape if cooked in a bigger pan and cook evenly like it did in the mini loaf pan. Both the times I baked these, I was going to have company and didn’t want to risk the results. Hence I baked them in the mini loaf pan. But I will try to bake it in a larger loaf next time. </p>
<p>This cake has the best taste an eggless lemon cake can have. It has a great texture, cuts nicely into slices and looks great. </p>

<p>2 2/3 cups Plain Flour<br />
1 1/3 cups Caster Sugar<br />
2 tsp Soda-bi-carb<br />
2 tsp Baking Powder<br />
6 tbsp Cocoa Powder<br />
2 tbsp Lemon Juice<br />
1 tsp Vanilla essence<br />
2/3 cup Oil<br />
1 1/4 &#8211; 1 1/2 cups Cold water </p>

<p>1. Mix dry ingredients and seive few times to incorporate air.<br />
2. Mix wet ingredients (mix only 1 cup water at this point as more can be added later, if needed)<br />
3. Mix wet ingredients gradually with dry ingredients (preferably electric beater).<br />
4. Bake in preheated oven at Gas Mark 4/160C for about 30 minutes. </p>
<p>I have decorated this cake with fresh whipped cream and fresh fruits. </p>
<p>This recipe is very simple and easy to make. </p>

When I chose egg replacer powder (EnerG) as the egg substitute for last month&#8217;s theme, I was really not sure if they would take the trouble to find it, buy it and bake with it.  Boy was I wrong!  The entries have poured in more than ever this time.  Many of them have sent more than 3 entries.  I thank each and everyone of you for such an enthusiastic participation.  <span id="more-1513"></span></p>
<p>Priya has outnumbered her previous record by sending 10 entries this time.  I can&#8217;t appreciate her enough for taking the trouble to get the egg substitute powder and baking so many delicious and healthy treats with it, when she usually bakes with eggs.  Debra, another amazing egg free baker has sent 5 entries.  It&#8217;s difficult to believe that the amazing cakes she bakes and decorates are eggless.  Look it for yourself. Hope to start this new week with more energy and vigor after the past two weeks&#8217; crazy schedule. <p class="first-child "><span title="I" class="cap"><span>I</span></span>t&#8217;s long time since I posted for the &#8220;<a href="http://www.egglesscooking.com/2008/05/04/your-recipe-rocks/"><em><em><strong>Your Recipe Rocks</strong></em></em></a>&#8221; series.  It&#8217;s not that I have not been trying out recipes from all your fabulous blogs.  Don&#8217;t laugh, but the real reason is I&#8217;m not able to get good pictures of the dishes.  Fall has started and we really don&#8217;t have enough sunlight in our place to take good photos.  It may sound like a lame excuse, but believe me or not that&#8217;s the truth.  Even the stew which I&#8217;m posting today, I had to reserve a small quantity of the stew, to take a decent picture the next day.  <span id="more-906"></span></p>
<p><img alt="" src="http://www.egglesscooking.com/images/static/yrr-150.jpg" title="Your Recipe Rocks!" class="alignright" width="150" height="150" />This <a href="http://earthvegan.blogspot.com/2008/09/moroccan-chickpea-stew.html" target="_newwin"><strong>chickpea stew</strong></a> can be prepared in no time, if you have all the vegetables in hand.  The recipe mentions to soak 15 red chillies for 2 hours to prepare the harissa paste and I totally forgot about it.  Moreover the measurement will also yield a lot of paste.  Instead I just soaked 3 chillies, while the vegetables were cooking for the stew.  The taste was phenomenal.  We had it with whole wheat bread toasts and couldn&#8217;t get enough of it.  My husband was so close to emptying the pot, but as I have mentioned above I had to reserve a small portion to get a picture.  Vaishali Your Recipe Rocks!</p>

Now after receiving 12 entries and a lot more feedback I&#8217;m very glad that I&#8217;m conducting this event.  Seeing so many entries from other food bloggers also motivated me to try more recipes using silken tofu.  In the course of the journey I did stumble a lot, but at the end it&#8217;s all worth it.  Our blogger friends have whipped up so many dishes using tofu.  Frittatas, quiche, cakes and cookies.  What&#8217;s more amazing is, for most of them it&#8217;s the first time they are using tofu.  Thank you very much friends for taking the time and interest in trying something new.  I really appreciate your efforts.<span id="more-1000"></span></p>

<p><span title="W" class="cap"><span>W</span></span>hen I saw <a href="http://annaparabrahma.blogspot.com/2008/07/broken-wheat-idli.html" target="_blank"><strong>Broken Wheat Idlis</strong></a> in Anjali&#8217;s blog, I had to try it immediately because we all like cracked wheat very much.  <span id="more-478"></span></p>
<p><img alt="" src="http://www.egglesscooking.com/images/static/yrr-150.jpg" title="Your Recipe Rocks!" class="alignright" width="150" height="150" />These dosas are very easy to prepare.  Just soak 1/2 cup of urad daal and grind it.  At the end add 2 cups of cracked wheat also and grind it to combine well with the urad daal batter.  The first time I made it, I also soaked the cracked wheat, just like soaking idli rava while preparing regular idlis.  But it<br />
became so sticky and stringy and I had tough time mixing it with the urad daal batter.  But finally it all came together.  At first I greased just one idli plate and poured the batter in the 4 moulds and steamed it a little longer than the rice idlis.  Even though it was flat, the taste was very good.  I think I should have prepared a nice thick batter.</p>
<p>So I ended up preparing the <a href="http://annaparabrahma.blogspot.com/2008/07/broken-wheat-roast.html" target="_blank"><strong>Broken Wheat Dosas</strong></a> she has mentioned, using the same batter and my vote is definitely for the dosas.  I used the reddish/brownish color cracked wheat and the dosas had an amazing golden color.  The speciality of this batter is, you can make nice crispy dosas as well as soft sponge like dosas.  The cracked wheat we get here is not fine like regular rava (sooji), so I had to run it in the blender for a couple of minutes, to get a fine texture.</p>
<p>The second time I prepared the batter without soaking the cracked wheat, incorporated it to the urad daal batter directly and ran the wet grinder for a couple of minutes.  This time also we loved the dosas.  This is way healthy than our regular rice dosas and good for diabetics also. </p>
<p>Anjali, Your Recipe Rocks and this recipe is definitely a keeper.</p>
