Recipe Name:
Eggless Spelt Banana Chocolate Chip Pancakes

Preparation Time:
15 minutes

Serves:
4 people

Ingredients:
4-5 Medium Sized RIPE Bananas
***1.5 heaping tblspns of all purpose spelt flour per banana
1/4 cup of milk
semi-sweet organic chocolate chips (by cocoa camino) to taste

Procedure:
Preheat non-stick frying pan with a tspn of canola oil to low-medium heat.  Mash all bananas well.  Mix in flour well. Stir in milk and mix well.  Stir in chocolate chips to taste. Using a medium sized laddle, plop 1 spoonful of batter per pancake (about 3 to a large pan) tilt the pan back'n forth until batter is fairly thin.  Leave for about 4-5 minutes or until little holes poke thru the batter.  Turn over and cook on the other side for 4-5 minutes.

Nutritional Information:
Great NO sugar added, GLUTEN FREE and egg free treat!!!  The ripe bananas sweeten the batter enough that there is even NO need for syrup!  I usually use organic Whole spelt flour by "Oak Manor", organic 2% milk, and organic semi-sweet chocolate chips.   No need for all organic ingredients, it's just the way I've made it usually.  I've also made it with unbleached flour and regular mini semi-sweet chocolate chips.

Additional Notes:
Inspired by my Ecuadorian mother-in law who made my 3 year old son (with an egg allergy) egg free pancakes in Ecuador one morning with bananas and flour only!!!  I added the milk to thin the batter a bit and the chocolate chips because my son loves chocolate!  Please keep in mind that this recipe was whipped up without a recipe and I have eyeballed the measurements to the best of my knowledge.  Now my son and I have pancake Thursdays and make them every week!  I hope you all enjoy as much we do!

Dancer thank you very much for sharing this recipe here.  I've always wanted to try spelt flour and this recipe looks perfect to start with.
