Ingredients:
1 box cake mix
1 can (15oz) pumpkin

Procedure:
- Mix cake mix and pumpkin with electric mixer
- Bake according to box directions

Nutritional Information:
- Very low fat because no vegetable oil is needed

Additional Notes:
Pumpkin works very well to replace eggs, water, and oil.  With vanilla cake mix, the pumpkin flavor is very, very mild.  Use a spice cake mix for a great cake with fall flavors.  I used this recipe to make cupcakes for my egg-allergic son's first birthday.
