I have a potato casserole recipe that uses one egg and I'm trying to figure out the best substitute. 

The recipe is:
instant potato flakes
diced onion
cream cheese
butter
milk
1 egg
boiling water

I believe the egg is used as a binder - what would be the best substitue that wouldn't alter the flavor?  Thanks in advance for any suggestions.
