Pureed fruits like mashed bananas, pears, prunes, dates and applesauce can be used to substitute both eggs and fat in a baking recipe.  Dried fruits like prunes, dates and apricots can be soaked in warm water and then pureed smoothly before use.  To make it easier baby food available in jars can be used too.

It works well in cakes, quick breads and brownies and is recommended to bake it a few minutes extra.  Use 1/4 cup of the pureed fruit to replace each egg.  It is also suggested to increase the quantity of baking powder slightly (1/4-1/2 teaspoon) while using pureed fruits.
