There are years now that I'm trying to become vegan. I always wanted to be. Unfortunately almost an year ago I found out of being a celiac. It's very difficult to bake with the gluten-free baking mixes here in Italy, because all the recipes calls for 3 or more eggs and I just don't want to use them. I want to be a vegan. I have tried to substitute the eggs in the baking recipes with the gluten free flours, some came out quite good and others not

but I'm still making different attempts. Hope to share them with all of you.
