Firm tofu and soft/silken tofu are some of the varieties of tofu which can be used instead of eggs. Firm Tofu can be used to prepare scrambled eggs(tofu), frittata etc. Soft/Silken Tofu is pureed to be used as an egg substitute in baking recipes. It's best suited for rich, dense and moist cakes, breads, cookies and brownies.
For each egg to be replaced in a baking recipe/no bake dessert, measure 1/4 cup of silken tofu in a dry measuring cup and blend it into a smooth puree in a blender/food processor. I have tried this in a couple of recipes and have had success with it.
Recently I also read another method of substitution in the book Vegan Planet which is, to blend together 1/4 cup drained soft tofu and 1/2 teaspoon baking powder to replace 1 egg in baking. I have to try this out.
