Oven Baked Eggless Zucchini Fries

As long as there is Parents magazine, I will not have any problem finding easy baking recipes.  This is one such simple and tasty recipe.  I tried it for the first time yesterday with one zuchini.  It was crispy on the outside and tender inside.  Zucchini being a soft vegetable, when it cooks, the inside is not as firm as the potato fries. It tastes similar to the South Indian appetizer Bhaji, which has a crunchy exterior and soft/mushy inside. Read the rest of this post »

A couple of months back I saw Giada preparing chocolate pizzas in her Food TV show, Everyday Italian.  It looked so delicious that I wanted to try it.  To make the pizza I used the store bought refrigerated pizza dough.  First I thought of cutting a big circle using a plate, then I got an idea of making it into bite sized pizzas, so I used a cookie cutter and cut out 6 small circles.  With the rest of the dough, I tried to form it into one big circle (which was a bit difficult) and baked a regular vegetable pizza. Eggless Carrot Muffins

I have also updated the carrot cake post with 2 pictures and some additional notes.  This is Indira’s recipe and I have baked it a couple of times with many variations.  This is my mother in law’s favorite cake also.  She is leaving for India today.  When I made this cake for her the first time, she told that she liked it very much and also told me to bake it once again before she leaves, so that she can take it with her.  Usually mothers and mother in laws make our favorite snacks and sweets and bring them here from India.  So when she asked me to bake the cake to take it with her, I was really very happy.  I baked them as muffins instead of one big cake for easy packing.  I think that’s the least I can do for her, living so far away from each other.


Easy Basundi or Paneer Payasam

I came across the recipe for Paneer Kheer/Paneer Payasam in a Tamil Magazine.  The original recipe required for pressure cooking paneer, so I modified it.  It was a hit with my husband the first time itself, in spite of the fact that he is not a big fan of paneer.  The kheer tasted like Basundhi, because of the the grated paneer.  So I modified my recipe again, by increasing the quantity of paneer so that it would have the exact texture of Basundi.  This is my mother-in-law’s favorite too, so she asked me to make this for Ugadi.  This time I made another modification, I used Evaporated Milk instead of regular milk.  Wow!
