I had half a dozen apples in the fridge.  I browsed the index for recipes with apples and found this <strong>apple cake recipe</strong>.  The recipe was very simple, used only one egg, so easy to substitute the egg.  The cake came out very well.  It was very moist and fluffy, but over the top sweet.  The original recipe used 1 cup sugar and the apples I used were sweet too, so the cake became very sweet.  So I have changed the recipe to 3/4 cup of sugar.  I was wondering what to do with the cake, then got this (wonderful) idea.  I was not sure whether it would work, but I was totally surprised and happy with the result.  Check the My Notes section to see what I did.  But this <strong>apple cake recipe</strong> is definitely a keeper for its easy prep and unbelievably moist and fluffy texture for a vegan cake.  <span id="more-1500"></span></p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> <span class="step">1</span> Preheat oven at 350F for 15 minutes.  Grease an 8-inch square baking dish.</p>
<p><span class="step">2</span> In a large mixing bowl, cream butter and sugar until light and fluffy.  Since the quantity of butter is very less, the creamed mixture was dry and resembled coarse crumbs.</p>
<p><span class="step">3</span> In a blender/food processor blend together Ener-G, water, soy milk and vanilla extract until nice and foamy.</p>
<p><span class="step">4</span> Add the Ener-G mixture to the creamed butter/sugar and beat everything together with the hand mixer until thoroughly combined.  This mixture looks creamy like a white sauce.</p>
<p><span class="step">5</span> In another bowl combine the flour, baking soda, salt, cinnamon and nutmeg (if using).  Add this to the wet ingredients.  The batter will be thick.</p>
<p><span class="step">6</span> Stir in apples and nuts.  Mix it thoroughly. </p>
<p><span class="step">7</span> Spread the batter in the prepared pan and bake for 35-45 minutes or until a toothpick inserted near the center comes out with just a few crumbs.  Mine was done around 38 minutes.  You can also see that the cake starts pulling from the edges.</p>
<p><span class="step">8</span> This cake can be sliced directly from the pan while its still warm, so no need to wait for the pan to cool to invert it and then slice it.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> The original recipe mentioned only 3 tablespoons butter.  Since I had only 4 tablespoons (1/2 a stick) remaining from a stick, I used it entirely.  Did not want to keep the balance 1 tablespoon in the fridge.  I think that extra tablespoon of butter helped to get the amazing texture for the cake.</p>
<p><span class="step">2</span> The apples were required to be diced, but I grated it because I was not sure if my son would eat the cake if it had chunks of apples in it.  He usually eats all fruits and especially apples and pears are his favorite. But I can never guess him.  The apples were really invisible, so if you have a picky eater sneak the apples by grating.</p>
<p><span class="step">3</span> I was wondering what to do about the sweetness.  If it&#8217;s not sweet enough you can always sprinkle some powdered sugar, have it with vanilla ice cream etc.  But how to reduce the sweetness.  Then I got this idea of coating the cake with unsweetened chocolate so that the bitterness would offset the sweetness.  I wanted to try it immediately but did not have it at home.  Sent my husband immediately to the grocery store and he got the Baker&#8217;s unsweetened baking chocolate.  It&#8217;s a pack of 8 individually wrapped squares of plain chocolate.  I wanted to test very little first.  So melted 3 squares in the microwave oven.  Cooled it a little bit.  I decided to shaped the cake into small balls and dip it in the melted chocolate so that it would resemble truffles.  Since the cake was slightly warm and moist I was able to proceed with the idea and shaped them into small balls.  Dipped the cake quickly into the melted chocolate and placed it in a baking sheet lined with parchment paper.  I had a perfect slice of cake as well.  My husband dipped 3 sides of the cake in the chocolate.  I placed the baking sheet in the fridge for the chocolate to set.  I couldn&#8217;t contain my excitement to taste it.  Managed to wait until the next day morning.  The chocolate had set perfectly and I took a bite of the apple cake truffle and was literally doing the happy dance.  It tasted so good!  The bitterness of the unsweetened chocolate took care of the sweetness perfectly.  The taste was phenomenal.  I&#8217;m very glad that I tried this <strong>apple cake recipe</strong>.       </p>

<p>At first I thought that it was difficult because <strong><a href="http://siri-corner.blogspot.com" target="_blank">Siri</a></strong> had mentioned that this month&#8217;s clue will be difficult than the previous month.  The mind was playing it&#8217;s trick telling me that it was difficult even before I could read the riddle completely.  But once I gave it a thorough reading, I was able to guess the answer right away.  That&#8217;s a brilliant riddle <strong><a href="http://culinarybazaar.blogspot.com" target="_blank">DK</a></strong>!</p>
<p>I was wondering what I can cook using apples apart from the famous pie and milkshake.  I was searching Food network&#8217;s site for some interesting recipes.  Then I saw an announcement for another event &#8220;Sweet Series&#8221;, this month&#8217;s theme being <strong><a href="http://en.wikipedia.org/wiki/Puran_poli" target="_blank">puran poli</a></strong>.  All of a sudden I got the idea of making an apple poli.  I thought of making apple halwa, like carrot halwa and then stuffing it inside the all purpose flour dough to make polis.  To my surprise it turned out very very tasty.  The halwa was so delicious by itself and so was the poli too.  Thanks once again DK and Siri, I would have not come up with this recipe if it was not for your  contest.</p>
<p>As it was my test recipe, I tried it with small quantities only.  But the next time I make this poli I&#8217;m going to double the measurements.</p>
<p><strong><span style="text-decoration: underline;">For the dough:</span></strong><br />
All purpose flour (maida) &#8211; 1 cup<br />
Salt &#8211; pinch<br />
Ghee &#8211; 1 tablespoon</p>
<p><strong><span style="text-decoration: underline;">For the stuffing:</span></strong><br />
Apple, small, grated &#8211; 1 (be sure to check that it&#8217;s sweet)<br />
Milk Khoa (Khova, Mawa) grated or crumbled &#8211; 1/4 to 1/2 cup<br />
Sugar &#8211; 2 tablespoons (or as per taste)<br />
Cardamom powder &#8211; 1/2 teaspoon<br />
Ghee &#8211; 2 teaspoons<br />
Powdered dhalia &#8211; optional<br />

1.  Combine all purpose flour, salt and water to form a ball of dough, just like chapathi dough.  Then add the ghee and knead it thoroughly.  Cover the dough and let it sit for atleast one hour.</p>

<p style="text-align: left;">6.  For the halwa/puran, add the ghee in a microwave safe bowl and the grated apples, cook it for 2 minutes. </p>
<p style="text-align: left;">7.  Then add the sugar and khoa to the cooked apples.  </p>

<p style="text-align: left;">8.  Cook it for another 3 minutes or until you don&#8217;t smell raw apples.  Alternatively you can prepare this on stove top also.  Add 2 teaspoons of ghee in a frying pan and sautee the grated apples, until they are cooked well.  Then add the sugar, let it dissolve and then add the khoya and combine it toghether.  If this mixture is a bit watery add some more khoya or the powdered dhalia, so that the stuffing will hold together properly.</p>

<p style="text-align: left;">9.  Now divide the dough into 4 equal size balls.  Also take 4 equal portions of the stuffing.  Make the stuffing smaller in size than the dough.  Eat the rest of the halwa just like that.  Everybody will ask for more.</p>

So this morning I went to food tv&#8217;s site and got the <span style="text-decoration: underline;"><a href="http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_36574,00.html" target="_blank"><strong>recipe</strong></a></span>. The original recipe yields 5 dozen mini muffins. I did not want to bake so much because it was the first time I was gonna try it. So I scaled down the recipe and it did come out well.<span id="more-11"></span></p>

<p>Combine the above 3 ingredients in a large bowl.  Add the cooled mixture to it and stir until blended. </p>

<p>Fill them in lined mini muffin tins and bake for 15 minutes at 350F.</p>

<p><strong><span style="text-decoration: underline;">My Notes:<br />
</span></strong>1. The above measurements yielded exactly 2 dozen mini muffins.<br />
2. The original recipe called for granulated sugar only, but I added a mixture of both light brown sugar and white sugar because I personally feel that the combination of these 2 results in a better taste.<br />
3. I did not add clove powder because I did not have it.<br />
4. After combining the wet ingredients with the dry, I felt that it required some more liquid, so I added some milk.<br />
5. I also topped the muffins with turbinado sugar before putting them in the oven.<br />
6. I baked a dozen first for 15 min and tested with a tooth pick to check if it was done. The tooth pick did not come out clean from some of the muffins so I baked it for another 2 minutes. By the time the first batch came out the remaining batter became a little more firm, so I added some more milk and baked the second dozen for 17 min and the tooth pick came out clean.<br />
7. It passed the taste test by my husband and son.</p>
<p><strong><span style="text-decoration: underline;">Update:</span></strong></p>
<p>Originally I used 3/4th cup of sugar both brown sugar and white sugar combined. But some of my friends told me that it was very sweet. I think I would reduce the quantity of sugar to 1/2 cup instead of 3/4th of a cup  the next time I bake it. So I have changed the recipe to 1/4 cup of each sugar.</p>
