<p><strong><span title="B" class="cap"><span>B</span></span>arley flour</strong> is quite a new addition in my kitchen pantry.  This cookie recipe is my first experiment with barley flour and I&#8217;m happy to tell that it&#8217;s a huge success. Unlike whole wheat, barley flour did not impart a raw smell and taste in the cookies.  It&#8217;s finely ground so there is no grittiness too. I found Bob&#8217;s Red Mill Whole Barley flour in the organic aisle of the grocery store.  Like any other whole grain flour, barley flour too should be stored in the freezer.  Be sure to bring it to room temperature before baking.  Barley flour is less glutenous, so if you want to experiment with it start with cookie recipes first. Since cookies need very less or no rising at all, substituting upto half the quantity of all purpose flour in a cookie recipe should be fine.</p>

<p>The following <strong><a href="http://www.albertabarley.com/barley/recipe.aspx?a=27" target=" _blank">cookie recipe</a></strong> uses only barley flour and we couldn&#8217;t tell it at all.  Be sure to use whole grain barley flour.  Some grocery stores carry a pure white color flour under the name barley flour but it&#8217;s not whole grain.  It&#8217;s made from pearled barley. </p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat the oven at 375F (190C).  Grease with non stick spray or line baking sheets with parchment paper.</p>
<p><span class="step">2</span> In a large mixing bowl add peanut butter, margarine and sugars.  Beat together well until smooth and creamy.</p>
<p><span class="step">3</span> In a blender (I used the small jar of my Magic Bullet), blend together the egg replacer and warm water until it&#8217;s frothy.</p>
<p><span class="step">4</span> To the creamed sugar mixture add the egg replacer liquid and vanilla.  Beat once again until it&#8217;s combined well.</p>
<p><span class="step">5</span> To this add the barley flour, baking soda and salt and stir well.</p>
<p><span class="step">6</span> Add remaining ingredients and mix well.</p>
<p><span class="step">7</span> Spoon the batter onto a cookie sheet and bake for 10 to 12 minutes.  I took mine out after 11 minutes.</p>
<p><span class="step">8</span> Leave the cookies on the sheet for 5 minutes.  Then transfer it to a cooling rack for the cookies to cool completely.  Transfer the cooled cookies to an airtight container.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> These <strong>barley flour cookies</strong> taste very much like chocolate chip cookies.  It was qutie crisp after an hour of baking but became chewy the next day.  It still gets a light crunchiness from the Rice Krispies cereal.  We didn&#8217;t feel any difference in taste due to the use of barley flour. I was surprised that it tasted just like cookies made out of all purpose flour.  </p>
<p>I&#8217;m not a peanut butter fan, but I used it to just finish it off.  So I was very happy because the presence of peanut butter was not at all felt from the 2nd day onwards.</p>
<p>I bought very little amount of carob chips and used it in this recipe instead of chocolate chips to make it completely vegan.  When tasted it by itself, I found that there was a slight difference in taste when compared to chocolate chips.  I didn&#8217;t like it that much.  But I literally couldn&#8217;t feel any difference (maybe a little or it was just psychological) when I tasted the cookies and my son didn&#8217;t find it.  The original recipe had called for 1/2 cup of chocolate chips, since I was using carob chips I used only 1/4 cup of it and I used 1/4 cup of dried cranberries.  However I&#8217;m not sure if I would substitute carob chips for chocolate chips in a chocolate chip cookie recipe.  Maybe it would be too much.  I think the better bet is to try other dairy free vegan chocolate chips instead.  </p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> For the margarine I used Fleischman&#8217;s Non Hydrogenated no salt added margarine.</p>
<p><span class="step">2</span> The original recipe mentions to use cornflakes.  I used Rice Krispies because I had only that in hand.</p>
<p><span class="step">3</span> Similarly you could use all nuts, or all chocolate chips or any dried fruits etc.  Just be sure to keep the measurements same though.</p>
<p><span class="step">4</span> At first I thought the quantity of sugar was more in the recipe with 1/3 cup each of brown sugar and granulated sugar, but it was perfect when we tasted the cookies.  Maybe it would have been even sweeter, had I used 1/2 cup of chocolate chips and raisins instead of cranberries.  </p>
<p><span class="step">5</span> The cookies don&#8217;t spread like the usual chocolate chip cookies.  So I think if you flatten it with a fork you may get crispier cookies but you would have to adjust the baking time.  Also I overlooked the 1 teaspoon of water in the recipe.  Maybe if I had added that the cookies would have spread a little bit.</p>
<p><span class="step">6</span> I have mentioned this a couple of times, but writing it once again.  If using a dark coated non stick pan, stay alert and take the sheet out of the oven 2-3 minutes earlier because the bottoms burn quite quickly.  The same thing happened in this recipe too.  Even after being careful and lining the cookie sheet with parchment paper the bottom of the cookies went black.  Maybe double lining the sheet would help.  I&#8217;m going to try it the next time.</p>

I have made a couple of changes to make it even more healthy and was floored by the taste.  I really can&#8217;t believe that healthy can taste so good.  So if you have kids who drive you crazy without having breakfast, then this recipe is for you.  These breakfast cookies are packed with proteins, fiber, vitamins and minerals and low in fat too.  What better way to start a day than this? With a glass of milk or orange juice it&#8217;s sure to fill up even adults.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat the oven to 350F.  Line 2 cookie sheets with parchment paper.</p>
<p><span class="step">1</span> Pulse the oats in a food processor until it resembles coarse flour.  To this also add the whole wheat flour, baking powder, baking soda, cinnamon and salt and process until combined.  Transfer this mix to a large mixing bowl.</p>
<p><span class="step">2</span> Put the drained and rinsed beans in the food processor and pulse until smoothly pureed.  You may add 2-3 tablespoons of water to make it easier.  Add the butter/margarine and process until well blended.</p>
<p><span class="step">3</span> Now add the brown sugar, applesauce and vanilla and pulse until smooth, scraping down the sides of the bowl.</p>
<p><span class="step">4</span> Pour the bean mixture into the oat mixture and stir using a spatula.  Add the peanut butter chips/chocolate chips, raisins/dried cranberries, nuts and flax seed meal and stir until blended.</p>
<p><span class="step">5</span> Drop by large spoonfuls of dough onto the prepared cookie sheets.  Flatten each one a little with your hand.  Have a bowl of water nearby to dampen your palms, so that flattening the cookies will be easy.</p>
<p><span class="step">6</span> Bake for 14-16 minutes, until pale around the edges but still soft in the middle.  The cookies baked in a dark coated cookie sheet started browning after 14 minutes itself but the pale coated cookie sheet was done after 16 minutes.</p>
<p><span class="step">7</span> Place the the cookie sheets on individual wire racks.  Let it cool for 5 minutes.  Transfer the cookies to the cooling rack after that.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> These cookies tasted very much like the <strong><a href="http://www.egglesscooking.com/2008/12/08/fiber-one-breakfast-cookies/">Fiber One Cereal</a></strong> <strong>breakfast cookies</strong> I have baked earlier.  These are very soft cookies, more like a muffin.  The presence of whole grain flours like whole wheat pastry flour and oat flour did not affect the taste at all.  You cannot detect the navy beans too.  It&#8217;s not very sweet also.  If &#8220;healthy&#8221; tastes so good, I&#8217;m ready to eat healthy always.  My son takes it to school as a treat after having his lunch and he likes it so much.  </p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> You can use all purpose flour instead of whole wheat pastry flour, white beans instead of navy beans, butter or margarine, chocolate chips instead of peanut butter chips, raisins, pecans instead of walnuts.</p>
<p><span class="step">2</span> For chocolate flavored cookies use 1/2 cup of unsweetened cocoa powder instead of the flour.</p>
<p><span class="step">3</span> <strong><em>Updated:</em></strong> I stored these cookies in a cookie jar over the counter and it became very soft.  This is okay if you are going to consume it within 2-3 days.  The longer it stays on the counter the softer it gets.  Recently I borrowed Moosewood Restaurant Low Fat Favorites from the library and found a tip for storing low-fat cookies.  It says that the best way to store low-fat cookies is in layers separated by wax paper or plastic wrap in an airtight container in the freezer.  Defrost at room temperature for about 20 minutes before serving.  But I think storing in the refrigerator should be fine because it gives instant gratification</p>

It&#8217;s nothing but finely powdered oats.  You can prepare it yourself using quick cooking oats and a food processor.  I also noticed that cookies baked with oat flour is not as dense as the ones baked with whole wheat flour.  I recently baked fat free chocolate chip cookies using part all purpose flour and part oat flour and I didn&#8217;t feel any difference at all taste-wise.  Though the cookies were not the exact replica texture-wise because I had used unsweetened applesauce instead of butter.  It felt more like a muffin/cake than a cookie.  I&#8217;m still working to perfect a low fat chocolate chip cookie recipe.  Until then here&#8217;s a recipe for cranberry muffins using oat flour.  The original recipe is from Better Homes and Gardens&#8217; Off the Shelf Baking.  I have made a couple of changes to make it egg free and healthy. </p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat oven to 400F.  Line muffin pans with paper liners.</p>
<p><span class="step">2</span> In a medium bowl sift together the flours, salt, baking powder.  Add sugar, dried fruit and the nuts. Combine well.  Make a well in the center and set aside.</p>
<p><span class="step">3</span> In a liquid measuring mug measure the milk, add the yogurt, orange juice (or peel) and whisk well.</p>
<p><span class="step">4</span> Add the wet ingredients to the flour all at once and stir just until combined.  Do not over mix.  At this point I felt that the batter was very thick, so I added another 2 tablespoons of milk.  The consistency felt right after adding the milk.</p>
<p><span class="step">5</span> Now spoon batter into prepared muffin cups, filling each two thirds full.  I have a ladle which holds 3 tablespoons of batter and it&#8217;s the perfect amount to bake the perfect sized muffins.  Sprinkle oats on top, if using.</p>
<p><span class="step">6</span> Bake in the preheated oven for 18-20 minutes or until golden and a wooden toothpick inserted in centers comes out clean.  Mine was done by 19 minutes.</p>
<p><span class="step">7</span> Cool in muffin cups on a wire rack for 5 minutes.  Remove from muffin cups; serve warm (See Taste).</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> The tartness of the dried cranberries and the orange flavor is a winning combination.  But don&#8217;t try tasting it warm if you are using whole wheat flour.  The original recipe used all purpose flour but I have used a combination of whole wheat flour and <strong>oat flour</strong>, so it did not taste good when the muffins were still warm.  It was a sticky and bitter mass of dough inside, which really freaked me out.  Thank God I was patient enough to come to a conclusion the next day morning and was relieved that it tasted good.  Actually good enough that my son had it for breakfast everyday.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> The original recipe used 1 and 3/4th cup of all purpose flour.  You can go with it if you are not a fan of whole wheat flour or don&#8217;t have it.  Baked goods with whole wheat flour definitely don&#8217;t taste exactly like it&#8217;s white counterpart.  Like tofu, whole wheat pasta, it&#8217;s an acquired taste.  We have got used to it now.  So you may want to start slowly, maybe 1 cup of all purpose flour and 3/4th cup of whole wheat flour/oat flour. </p>
<p><span class="step">2</span> <strong>Oat flour</strong> is readily available in some of the grocery stores.  You can make it at home too by finely processing quick cooking oats in a food processor/mixer.  Since oat flour does not contain gluten, it cannot substitute 100% of all purpose flour/whole wheat flour.  Baked goods will not rise if it is only used.  So it has to be used in combination with either all purpose flour or whole wheat flour.</p>
<p><span class="step">3</span> I didn&#8217;t have fresh oranges to make the zest, so I went with 2 tablespoons of store bought orange juice. This does not give that fresh orange flavor, but be careful not to go overboard with the juice because sometimes the store bought juice has a bitter after-taste and it spoils the taste of the baked goods. </p>
<p><span class="step">4</span> I have used 2 tablespoons of yogurt in place of one egg white mentioned in the recipe.  Even after using 2 tablespoons of orange juice I found that the batter was very thick, so I had to use another 2 tablespoons of milk.  I think the whole wheat flour and the oat flour absorbed more moisture.  So consider what type of flour you are using and add water as required.</p>
<p><span class="step">5</span> The original recipe is supposed to yield 12 muffins but I got only 9.</p>

<p><span title="I" class="cap"><span>I</span></span>n my previous post I had mentioned that I had to bake cookies for my son&#8217;s class.  This was the other cookie I baked for his friends.  I used <a href="http://www.egglesscooking.com/2008/10/06/eggless-chewy-chocolate-chip-cookies/"><strong>this</strong></a> recipe, but instead of using silken tofu as the egg replacement, I used EnerG egg replacer powder.  The instructions in the EnerG box mention that it does not work well with store bought mixes.  I took a chance anyway and was surprised that the cookies came out so well.  These cookies were also chewy and did not spread as much as the silken tofu ones.  Last time I had used Duncan Hines cake mix and this time I used Betty Crocker&#8217;s german chocolate cake mix and I felt that the latter ones had a smell which I didn&#8217;t relish.  I think the flavorings in the Betty Crocker cake mix gave that smell.  Nobody else could really feel it.  I&#8217;m known for my exceptional &#8220;nose-power&#8221;.  So the next time I bake these cookies I&#8217;m definitely going to use Duncan Hines.  Also this time I used dried cranberries instead of raisins, reduced the amount of chocolate chips and increased the quantity of dried fruit. <span id="more-1505"></span>  </p>

<p><span title="Y" class="cap"><span>Y</span></span>esterday there was the annual Christmas party in my husband&#8217;s office.  I wanted to bake something special and not very time consuming also.  Long time back I had preserved a recipe for <strong>cookie bars</strong> which came with a condensed milk can.  I thought it should be perfect because it was simply layering of ingredients, baking and then cutting them into bars.  But the only drawback, I gained 2 pounds simply reading the recipe!  I&#8217;m not kidding here.  The recipe had way too much sugar.  <span id="more-1482"></span></p>
<p>So I have made few changes to the original recipe, like using fat free condensed milk, reducing the amount of chocolate chips by using miniature chips, reducing the quantity of coconut flakes and adding some dried cranberries.  Even then the <strong>cookie bars</strong> were very sweet.  It was more like a caramel candy with nuts and dry fruits.  They are so tasty and very addictive too.  So bake these when you are having a lot of company only. </p>
<p>I got around 45 pieces and few scraps.  I just retained the scraps and sent everything to the party.  My husband told me that everybody in his office liked it very much.    </p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> <span class="step">1</span> Preheat oven to 350F (325F for glass baking dish).</p>
<p><span class="step">2</span> If not using ready to use graham cracker crumbs, place the crackers in a ziploc bag, seal it and use a rolling pin to powder it.  Alternatively pulse it a few times in a food processor.</p>
<p><span class="step">3</span> Cut the butter into small pieces, place it in a microwave safe bowl and melt it.  First time it for 15 seconds, stir it once and keep increasing the time as needed.  Mine took 1 minute to melt completely.  Let it cool enough to handle with your hands.</p>
<p><span class="step">4</span> In a bowl, combine the graham cracker crumbs and butter; mix well.</p>
<p><span class="step">5</span> Press crumb mixture firmly on bottom of 13&#215;9 inch baking pan.</p>
<p><span class="step">6</span> Pour sweetened condensed milk evenly over the crumb mixture.</p>
<p><span class="step">7</span> First add 1/4 cup of the semi sweet chocolate chips evenly over the condensed milk layer.  Next add the coconut similarly.</p>
<p><span class="step">8</span> Evenly spread the nuts over the coconut layer.  Then top it off with the dried cranberries and the remaining 1/4 cup of the chocolate chips.</p>
<p><span class="step">9</span> Bake 25 minutes or until lightly browned.  Cool completely.  I kept it in the freezer for 10 minutes.  Cut into bars or diamonds.  Store the <strong>cookie bars</strong> covered.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> Always remember that miniature chocolate chips can be substituted for the regular ones and only half as much as the regular is required if using the mini chips.  For instance, the original recipe mentions to use 2 cups of semi sweet chocolate chips, which is way too much sugar and calories.  I substituted it with mere 1/2 cup of miniature chocolate chips.</p>
<p><span class="step">2</span> Dried cranberries was also not mentioned in the recipe.  I added it to balance the sweetness of the bars.</p>
<p><span class="step">3</span> I think lining the pan with aluminum foil and then layering it with the crumbs and other toppings will make the clean up and cutting easier, because you just lift the entire bar with foil and cut it outside.  I lined it with wax paper, the clean up was easy and I was able to lift it up, but the paper got stuck to the bars a little bit.</p>
<p><span class="step">4</span> During the Christmas season (or Diwali) if you plan to bake goodies and give it to friends and relatives preserve the plastic boxes which you get while buying strawberries, baby spinach, blueberries etc.  You can use these boxes to gift your homemade cookies etc.  Below I have used a box which came with baby spinach.  On the cover there was a big sticker of the product.  I was wondering what to do and I got this idea.  Anyhow I had to write the ingredients used in the bars because of the food allergies prevalent here, so that people in the office can decide whether they can have it or not. So I cut the plain side of a greeting card which I had received, wrote the ingredients in that card and taped it on top of that sticker.</p>

<p><span title="I" class="cap"><span>I</span></span>&#8217;m back with another healthy breakfast recipe from The Sneaky Chef.  Kids love cookies and won&#8217;t they be thrilled if we serve it for breakfast?  Then bake these <strong>breakfast cookies</strong>, made with fiber one cereal, a brilliant flour blend, dried cranberries and walnuts.  Sometimes healthy stuff is not tasty, like whole wheat bread, bagel or pita for example.  Even though these cookies are made of whole wheat pastry flour and wheat germ, they tasted very good to my surprise.<span id="more-1471"></span></p>
<p>I was skeptical about using wheat flour because I have baked with it earlier and sometimes the baked goodies does not smell/taste right.  This is the first time I have had success using whole wheat pastry flour.  I did not get the raw smell of wheat.  I did not miss white flour at all in the cookies.  You can<br />
take my word on that.  The cereal gave a nice crunch to the otherwise chewy cookies.  I would suggest adding dried cranberries and walnuts (this was not mentioned in the original recipe) because it enhances the taste, gives a very good texture to the cookies, also it has nutritional benefits.  We adults can also munch on these healthy cookies without any guilt.</p>
<p>My son ate the first cookie so fast, telling me that it was very nice, etc, but then as usual he stopped liking it from the next day.  Try your luck with your kids!  But touch wood, the <a href="http://www.egglesscooking.com/2008/11/28/blueberry-flavored-milk/"><strong>blueberry milk</strong></a>, <a href="http://www.egglesscooking.com/2008/12/04/strawberry-milk/"><strong>strawberry milk</strong></a> and cherry chocolate milk are still his favorites.</p>

<div class="longingredients">Canola oil &#8211; 1/4 cup</div>

<p><span style="text-decoration: underline;"><strong>Procedure</strong></span><br />
Combine the flours and wheat germ in a bowl.  Store it in an air-tight container or sealed bags and use it for baking anything from cakes, cookies, brownies etc.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> <span class="step">1</span> Preheat oven at 400F/200C and line/grease a baking sheet.</p>
<p><span class="step">2</span> Coarsely crush the cereal either using a rolling pin or pulse it a couple of times in the food processor.</p>
<p><span class="step">3</span> In a large mixing bowl, whisk together the flour combo, crushed cereal, baking soda, salt and cinnamon.</p>
<p><span class="step">4</span> In another bowl, whisk together applesauce, brown sugar, oil, vanilla and ricotta cheese.</p>
<p><span class="step">5</span> Add the dry ingredients to the wet mixture and combine gently.</p>
<p><span class="step">6</span> Drop by tablespoonful onto the baking sheets, leaving about an inch between cookies.</p>
<p><span class="step">7</span> Flatten cookies with the back of a fork and sprinkle tops with sugar.</p>
<p><span class="step">8</span> Bake about 18 to 20 minutes, or until nicely browned and crispy around the edges.</p>
<p><span class="step">9</span> Leave it in the baking sheet for 5 minutes and then transfer to a wire cooling rack to cool it completely.  Serve it with blueberry milk or strawberry milk.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> For crushing the cereal:  Put the cereal in a ziploc bag, seal it and then use a rolling pin to crush it.</p>
<p><span class="step">2</span> The cookies baked in the aluminum pan were done in 18 minutes.  But the batch baked in a dark colored pan became very brown around 17 minutes itself.  So keep an eye.  I think reducing the oven temperature to 375F/190C should be fine if using a dark colored pan.</p>
<p><span class="step">3</span> I think the only mistake I did was not storing the cookies in the refrigerator.  The cookies had a nice crunch on the day I baked.  Like always I stored them in a cookie jar, because nothing was mentioned about the storage.  In the following days it became more chewy and soft.  I guess storing them in the fridge, once the cookies cool would retain it&#8217;s freshness.</p>

<p><span title="I" class="cap"><span>I</span></span>t&#8217;s long time since I have baked a quick bread.  The last time I baked <a href="http://www.egglesscooking.com/2008/04/28/eggless-chocolate-chip-zucchini-bread/"><strong>this</strong></a> for my friends and it was a hit.  I had used bananas instead of eggs, so the bread tasted more like bananas.  That&#8217;s the only reason I don&#8217;t like using bananas as an egg substitute because it&#8217;s flavor/smell will dominate the baked dish.  Whether it&#8217;s a carrot cake or chocolate cake, it&#8217;s going to taste like a banana only.  So this time I decided to use flax seed meal as the egg substitute.<span id="more-1219"></span></p>
<p><em><strong>What is a Quick Bread?</strong></em>  As the name suggests, &#8220;Quick Breads&#8221; can be baked quickly, when compared to the traditional yeast breads.  Quick breads are leavened with baking powder and/or baking soda, not yeast.  So you can mix, bake and enjoy these baked goods in less time.  Quick breads can be sweet or savory.  One important thing to be noted while baking quick breads is, mixing the wet and dry ingredients only until moistened.  Few lumps in the batter is fine, because over-mixing causes the gluten in the flour to develop and the result would be a coarse and tough bread.  </p>
<p>Quick breads such as banana, zucchini and cranberry slice and taste best when served a day after baking.  Wrap the cooled bread in foil or plastic wrap; leave at room temperature overnight.  Use a serrated knife for breads that have fruits and/or nuts.  Corn bread and coffee cakes are best served warm.  (Source: The Taste of Home Baking Book)</p>
<p>I had some dried cranberries left after preparing these <a href="http://www.egglesscooking.com/2008/11/07/crispy-vegan-breakfast-bars/"><strong>&#8220;no-bake&#8221; bars</strong></a>, so I wanted to use it before I could forget all about it and find it out after 3 months while cleaning the pantry.  I also had 2 cranberry bread recipes in hand.  One was the traditional yeast bread and another one a cranberry orange quick bread (from the book Baking for Dummies).  Hands down my choice is the latter, because I&#8217;m not yet ready to bake with yeast.  I have this preconceived notion that I cannot handle yeast, it&#8217;s difficult.  But the quick bread required fresh cranberries which I didn&#8217;t have.  So I came up with a recipe combining those 2 recipes, making few changes here and there.  The bread came out quite decently.</p>

<span class='postTabs_titles'><b><strong>Ingredients</strong></b></span>
<div class="ingredients">All Purpose Flour &#8211; 2 cups (I used 1 cup all purpose flour and 1 cup whole wheat pastry flour)</div>
<div class="ingredients">Fresh Cranberries, coarsely chopped &#8211; 1 cup (I used dried cranberries)</div>
<div class="ingredients">Sugar &#8211; 3/4 cup</div>
<div class="ingredients">Pecans or Walnuts, coarsely chopped &#8211; 1/2 cup (I used pecans)</div>
<div class="ingredients">Baking Powder &#8211; 2 teaspoons</div>
<div class="ingredients">Salt &#8211; 1/4 teaspoon</div>
<div class="ingredients">Flax Seed Meal &#8211; 1 teaspoon and Water &#8211; 1/4 cup (Substitute for 1 egg)</div>
<div class="ingredients">Orange zest, grated &#8211; 1 teaspoon (I omitted)</div>
<div class="ingredients">Orange Juice &#8211; 1/2 cup (I used freshly squeezed orange juice)</div>
<div class="ingredients">Vegetable Oil &#8211; 1/2 cup (I used 1/4 cup canola oil and 1/4 unsweetened applesauce)</div>
<p>Yield: <strong>1 Loaf</strong></p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> 1.  Preheat oven to 350F/180C.  Grease and flour a 9&#215;5 inch loaf pan.</p>
<p>2.  In a large bowl sift together the flour, baking powder and salt.  Also add the cranberries, sugar and nuts and combine it thoroughly.  If using dried cranberries, add a tablespoon of flour to the dried berries and stir it well before adding it to the flour mixture.  Otherwise all the berries will stick to<br />
each other and settle at the bottom of the bread.</p>
<p>3.  Whisk/blend together the flax seed meal and water until white and foamy.  I used Magic Bullet to blend it.</p>
<p>4.  In a small bowl, mix together the flax seed mixture, orange zest, orange juice, oil and applesauce (if using).</p>
<p>5.  Stir the wet ingredients into the dry ingredients and mix until just blended.  I felt that the batter was thick, so I added another 2 tablespoons of orange juice.  You can also dilute it with water or any type of milk.  Do not over-mix.  Few lumps should be fine, it would dissolve while baking.</p>
<p>6.  Pour the batter into the prepared pan and bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.  I checked mine for doneness around 48 minutes and the toothpick came out clean.  I removed the pan out of the oven after 50 minutes.</p>
<p>7.  Cool the loaf for 15 minutes before removing it from the pan.</p>
<p>8.  Finish cooling the loaf on a wire rack.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> 1.  I&#8217;m not a patient person when it comes to tasting something I have baked.  Also I did not notice the tip about slicing banana/zucchini and cranberry breads the day after baking it, so I sliced it anyway and it did crumble.  So be patient because they slice and taste better the next day.</p>
<p>2.  Everybody liked the taste of the bread, the sweetness was right but it did have a mild raw smell.  I&#8217;m not sure whether the culprit was the whole wheat pastry flour or the baking time.  Even though the time given in the original recipe was 60 minutes, the toothpick came out clean after 48 minutes itself.  Maybe I should try using only all purpose flour the next time. </p>

<p><span title="I" class="cap"><span>I</span></span>&#8217;m a mother of a preschooler and like many others of his age he is also picky when it comes to food.  Earlier I didn&#8217;t have any problem at all with him during mealtime.  He used to eat a lot of veggies, rice, chapathis and fruits etc.  But not anymore.  So these days I&#8217;m hunting for healthy and tasty recipes which appeal kids.  While browsing the &#8220;Vegetarian Times &#8211; Fast and Easy&#8221; book I found many such recipes. <span id="more-1119"></span></p>
<p>The crispy <strong>breakfast bar</strong> recipe, especially caught my attention because these were &#8220;no bake&#8221; bars which can be prepared in a jiffy and are healthy too.  These are crunchy chewy bars.  They get fiber and iron from whole-grain puffed cereal and protein from almond butter and almonds.  The original recipe does not have almonds, but I added it to give the extra crunchiness and protein boost.  </p>
<p>Following the basic method, one can come up with a couple of variations, like using peanut butter and peanuts, chocolate chips, etc to mention a few.  A variety of whole-grain puffed cereals are available in the grocery stores these days.  I saw puffed millet and other puffed cereals too.</p>
<p>The prep time is only 15 minutes, which includes the time to take out the stuff you need from your pantry and you have to freeze the mixture for 30 minutes.  So in 45 minutes you have a healthy treat ready, without any elbow grease.  </p>
<p>So how does it taste?  As I have mentioned earlier, my son &#8220;the picky eater&#8221; loved it so much, he ate 2 pieces as soon as he got home from school.  We adults also liked it very much.  Actually it&#8217;s a fancy &#8220;<a href="http://culinarybazaar.blogspot.com/2007/10/karthigai-deepam-rci-entry.html" target="_newwin"><strong>Pori Urundai</strong></a>&#8221; (puffed rice balls) with almond butter, raisins and honey instead of the jaggery syrup we Indians use.  </p>

<span class='postTabs_titles'><b><strong>Ingredients</strong></b></span>
<div class="ingredients">Whole Grain Puffed Cereal &#8211; 7 cups(I used the store brand Puffed Wheat Cereal)</div>
<div class="ingredients">Dried Cranberries &#8211; 3/4 cup</div>
<div class="ingredients">Raisins or Dried Blueberries &#8211; 3/4 cup (I used raisins)</div>
<div class="ingredients">Sliced Almonds, toasted &#8211; 3/4 cup (Not mentioned in the recipe, but I added it) </div>
<div class="ingredients">Ground Cinnamon &#8211; 1 teaspoon (I omitted it)</div>
<div class="ingredients">Brown Rice Syrup or Honey &#8211; 3/4 cup (I used honey)</div>
<div class="ingredients">Almond Butter &#8211; 3/4 cup</div>
<div class="ingredients">Soy Margarine/Unsalted Butter &#8211; 2 tablespoons (I used Earth Balance Vegan Butter)</div>
<p>Yield: <strong>15 big size bars or 30 smaller bars.</strong></p>

<span class='postTabs_titles'><b><strong>Step-by-Step Procedure</strong></b></span> 1.  Stir together cereal, dried fruit, nuts and cinnamon (if using) in large bowl.</p>
<p>2.  Put syrup, almond butter and soy margarine (whichever you are using) in large, microwave-safe measuring cup.</p>
<p>3.  Microwave 1 and 1/2 minutes on high, or until hot and margarine has melted.</p>
<p>4.  Stir well, then pour over cereal mixture.</p>
<p>5.  Stir to coat.</p>
<p>6.  Dampen hands with cold water.</p>
<p>7.  Press cereal mixture firmly into 9&#215;9 inch baking pan (I didn&#8217;t have this, so I used 13&#215;9 inch nonstick baking pan), re-wetting hands if necessary to keep mixture from sticking.</p>
<p>8.  Freeze 30 minutes.  I covered the pan with plastic wrap before putting it in the freezer.</p>
<p>9.  Cut into 15 bars, and store in refrigerator up to 5 days.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> 1.  For toasting almonds, heat a frying pan on the stove and add the sliced almonds, toss it for a couple of seconds.  Be careful not to burn the almonds.</p>
<p>2.  If you are not into organic stuff, you can find almond butter very cheap in Trader Joe&#8217;s.  The organic brand is also cheaper there when compared to the price in the regular grocery store.  The grocery store near my house carries only Nature&#8217;s Promise Organic Almond Butter which is $12, but the organic butter in Trader Joe&#8217;s is only $8 and if you choose to buy the inorganic it&#8217;s only $4.59.  That&#8217;s a considerable amount of savings for me.  You can also make your own <a href="http://jugalbandi.info/2007/10/a-heart-healthy-cookie/#nut_butter" target="_newwin"><strong>almond butter</strong></a>.</p>
