<p><span title="I" class="cap"><span>I</span></span> had a can of mango pulp (from Indian store) and was inspired by RedChillies&#8217; <a href="http://redchillies.us/2008/10/13/banana-halwa-burfi/" target="_blank">banana halwa</a> to prepare mango <strong>halwa</strong>.  I was not sure how it would come out or how it would taste but to my surprise I was able to get perfect pieces and it tasted like the mango bars (aam papad) which we get in India.  This halwa can be prepared using just two ingredients, mango pulp and very little ghee. No need to add extra sugar because the pulp is already very sweet.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> In a heavy bottom vessel (I used a small pressure cooker) add the<br />
ghee and when it is hot add the mango pulp.</p>
<p><span class="step">2</span> Keep stirring the mixture every 10-15 minutes so that it does not stick to the vessel.</p>
<p><span class="step">3</span> The mixture will reduce in quantity, there will be a change in color and after 45 minutes transfer this mixture to a greased (with very little ghee) plate.  I used 2 and 3/4 cups of pulp and it cooked down to 3/4ths of a cup approximately.  So a very small plate is enough.</p>
<p><span class="step">4</span> I left the plate undisturbed for one more hour and then tried cutting it into pieces and it came out<br />
perfectly.  Garnish it with nuts of your choice.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> After cooking the sweet I googled Mango <strong>Halwa</strong> and found that it can be done even more quickl in a microwave oven.  A couple of food bloggers have done it but nobody has sliced it.  So I&#8217;m going to try that the next time.</p>
<p><span class="step">2</span> I have an electric range so it has taken about 45-50 minutes for me.  I think if cooked in a gas stove it should only take half the time. </p>
<p><span class="step">3</span> You could use the entire can of mango pulp too, it will measure abut 3 and 1/2 cups.  I reserved the balance to make mango milk shake.  If you use the entire can, you would have to cook it for couple more minutes.</p>

<p><span title="A" class="cap"><span>A</span></span>fter baking the <strong><a href="http://www.egglesscooking.com/2008/08/25/eggless-chocolate-cake/">Eggless Chocolate Cake using silken tofu</a></strong>, I was wondering what to do with the remaining tofu.  I didn&#8217;t want to prepare the same old berry-banana smoothie and found <a href="http://www.recipezaar.com/52305" target="_newwin">this</a>.  I always have the Kesar Mango Pulp from the Indian store in my pantry to prepare my favorite drink Mango Milkshake.  So I decided to use it instead of fresh/frozen mangoes.  I had to add the tofu and mango puree little by little to suit our taste and finally found the ratio.  <span id="more-682"></span></p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span>Blend smoothly the silken tofu, mango pulp and the flavoring of choice.  I used cardamom powder and garnished it with chopped pistachios to give it an Indian mango kulfi taste.  It tasted awesome and my 3 year old loved it.</p>

<span class='postTabs_titles'><b><strong>Notes</strong></b></span>1.  You can change the ratio of the tofu and mango pulp to suit your taste.</p>
<p>2.  I also froze the pudding to have a tofu mango ice cream.  I transferred the pudding to a stainless steel container with lid and placed it in the freezer. Around 5 hours I checked it and it was in the perfect scooping consistency.  The only thing missing was a little sweetness.  So if you decide to freeze the pudding I would suggest to add some more sugar or the mango pulp.</p>

Mango pulp &#8211; 1 cup<br />
Canned pineapple chunks in juice &#8211; 1 can (20 ounce)<br />
Orange Juice &#8211; 1 cup</p>
<p>The measurements really don&#8217;t matter, you can change the ratio as you wish.  </p>
<p><strong><span style="text-decoration: underline;">Procedure:</span></strong><br />
Empty the canned pineapple with its juice in a blender and blend it smooth.  Then add the mango pulp and orange juice and blend it once again.  That&#8217;s it.  The fruit cocktail is ready!  The juice tasted very good but the flavor of mango was dominant.  I personally like mango juice very much, but if you don&#8217;t like it you can decrease the quantity of mango pulp.</p>
