<p><span title="L" class="cap"><span>L</span></span>ast week I received three packs of granola from <strong><a href="http://enjoylifefoods.com/index.php" target="_newwin">Enjoy Life Foods</a></strong>.  They specialize in allergen free food products like granola, snack bars, bagels, cookies, chocolate chips and chocolate bars to name a few.  Their product contains no wheat, dairy, peanuts, tree nuts, egg, soy, fish or shellfish (the 8 common allergens).</p>

<p>The product under review is their nut and gluten free granola; 1) Very Berry Crunch, 2) Cranapple Crunch and 3) Cinnamon Crunch.  The pack claims that the granola is made in a dedicated nut and gluten free bakery.  I also see that it is certified gluten free and vegan.</p>

<p>Reading the nutrition label and ingredients list, I gather that it is low in fat, has no saturated and trans fat, has less sugar (Refined white sugar is not used.  Instead brown rice syrup, evaporated cane juice and honey is used.  Also the dried fruits lend its natural sweetness to the granola).  The main ingredient is brown rice flakes.  Each serving also contains 17-18gm whole grain.  The serving size listed is 1/2 cup (52g).  I compared a couple of other granola products in the market and found that 1/4 cup serving has as much calories, carbohydrates, sugar and much more fat than 1/2 cup serving of Enjoy Life Foods&#8217; granola.  So I&#8217;m pretty sure this one is healthy as well.  I think all three have 3 WW POINTS value per 1/2 cup serving.  (I calculated it myself from the Weight Watchers&#8217; guide, not listed in the pack).</p>
<p>Now coming to the important factor, TASTE!  How did it fare?  Like many others, I&#8217;m also a proud mother of a very picky eater.  So I thought, who is better than my son to test it!  He is a kind of a guy who loves the presentation more than the actual stuff.  If I bake a cookie or a bar he does not eat it, but if it comes in a colorful wrapper he loves it.  So he was very excited to see the colorful packs of granola.  He wanted to try little of each the same day. First he tried the green color pack (Cranapple Crunch).  He continued eating after the first bite, which means it&#8217;s a winner!  He also mentioned that he liked it. He wanted to taste the red color pack (Very Berry Crunch) next.  That was a winner too and so was the violet color pack (Cinnamon Crunch). Now I cannot come to a conclusion based on one day because he usually does not like it the next day.  So over the week I gave him (and he asked too) a couple of times and ate it without any complaints.  Now I can really declare that it&#8217;s a winner!</p>
<p>As for me, I liked the Cranapple Crunch and Very Berry Crunch than Cinnamon Crunch because I&#8217;m not a cinnamon fan.  All three were not very sweet unlike the regular granola.  It was perfect for me.  I was surprised to see that 1/2 cup serving had about 9-11 gms sugar because it did not feel sweet at all.  I have tasted the Multi-grain Rice Krispies which has only 7gm sugar and it&#8217;s too sweet.</p>
<p>Cranapple Crunch is sweet and sour.  The tartness of dried cranberries balances the sweetness of the apple.  Very Berry Crunch contains small pieces of raspberries and strawberries.  It&#8217;s mildly sweet and not as sour as the cranapple.  The Cinnamon Crunch has raisins too.</p>
<p>Since I had 3 packs of granola, I wanted to bake something with it.  I searched the net for recipes using granola and decided to bake these <strong><a href="http://www.recipelink.com/cgi/msgbrd/msg_script.pl?printer=1&#038;board=31&#038;thread=40224" target="_newwin">granola muffins</a></strong>.  I have made some changes to the original recipe.  <em>Note that these muffins are not nut free and gluten free.</em>  It&#8217;s egg free though!  I used the Cinnamon Crunch granola for these muffins.  The original recipe had ground cinnamon, I have omitted that.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat oven to 400F.  Grease the muffin tin or line it with paper liner.  If using a paper liner, after lining grease the liner by spraying with a non stick spray so the muffins will come out of the paper easily.</p>
<p><span class="step">2</span> Combine the dry ingredients together in a big bowl.  From granola to baking soda.</p>
<p><span class="step">3</span> In another medium size bowl, whisk together the applesauce, milk, brown sugar, oil and yogurt.</p>
<p><span class="step">4</span> Add the wet ingredients to the flour mixture and mix until just combined.</p>
<p><span class="step">5</span> Divide evenly into prepared muffin tin, approximately 3 tablespoons of batter per muffin or 3/4th of the tin.  Sprinkle little granola/oats on top.</p>
<p><span class="step">6</span> Bake 18-20 minutes or until toothpick inserted in center comes out clean.  I baked mine for about 26 minutes.  Always set the timer for the minimum time mentioned in the recipe, test for doneness and if it&#8217;s not done, increase the time for 2-3 minutes at a time.  (Check My Notes, point  5)</p>
<p><span class="step">7</span> Let cool slightly in the tin and then remove to a cooling rack.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> I have to say that I did not like the muffins immediately (unlike my son), but started liking it from the next day.  These granola muffins don&#8217;t have a fluffy texture but feel more like a dense cake.  Also they are not overly sweet, in fact the sweetness is very mild, which is perfect for me.  The mini chocolate chips and the raisins which you bite on here and there give the right balance.  Also they did not taste cinnamony (I know it&#8217;s not a word, but you get it right!)</p>
<p>Will I be baking it again? Definitely.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> I measured the applesauce using a dry measuring cup, not the liquid measuring mug. </p>
<p><span class="step">2</span> If you prefer sweet muffins, either use sweetened applesauce or increase the quantity of brown sugar to 1/2 cup.</p>
<p><span class="step">3</span> The original recipe did not use oat flour, I used it because I had it.  So if you don&#8217;t have oat flour just use 1 cup of all purpose flour or in a food processor finely powder quick cooking oats.</p>
<p><span class="step">4</span> Walnuts and semi sweet chocolate chips were not mentioned in the recipe.  I added it to lure my son to eat something healthy and it worked! The chocolate chips also gave the sweetness.  Always try using mini chocolate chips because you can cut down on calories, sugar and fat.  In place of using 1 cup of chocolate chips, you can use just 1/2 cup of the mini without affecting the taste.</p>
<p><span class="step">5</span> I had some flavored yogurt (which we did not like by itself) so I used it instead of eggs.  I used peach flavored yogurt.  Also while using yogurt to replace eggs, instead of measuring exactly 1/4 cup of yogurt, use 3 tablespoons of yogurt and 1 tablespoon of water or any liquid.  For this recipe I emptied directly two small containers of yogurt and while mixing felt that the muffin batter was very thick and then I had to add extra water, which made it very watery.  I think this is the reason I had to bake it for around 26 minutes.  So while using yogurt measure 3 tablespoons of yogurt and 1 tablespoon of water in a cup, whisk it well and then mix it to the other ingredients or simply use buttermilk.</p>

I have baked <a href="http://www.egglesscooking.com/2008/09/02/eggless-chocolate-chip-cookies/"><strong>crispy</strong></a> and <a href="http://www.egglesscooking.com/2008/10/06/eggless-chewy-chocolate-chip-cookies/"><strong>chewy</strong></a> variety of eggless <strong>chocolate chip cookies</strong> earlier, but hands down this is the BEST.  This recipe is from one of my favorite cookbooks &#8220;The Joy of Vegan Baking&#8221;.  I didn&#8217;t have non dairy butter and non dairy semi sweet chocolate chips, so used regular butter and semi sweet chocolate chips.  Other than that I did not make any changes in the recipe.  The cookies turned out awesome.  Crisp around the edges and chewy in the center.  Just perfect.  If you want to bake eggless chocolate chip cookies, then this is the recipe you must have.  <span id="more-1499"></span> </p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> <span class="step">1</span> Preheat the oven to 375F/190C.  If using a non stick pan greasing is not necessary, otherwise use parchment paper to line the cookie sheets.</p>
<p><span class="step">2</span> In a large bowl, cream together the butter, granulated sugar, brown sugar and vanilla.  </p>
<p><span class="step">3</span> In a food processor/blender whip together the egg replacer powder and water together, until it&#8217;s thick and creamy.  Add this mixture to the creamed butter and sugar, combine thoroughly.</p>
<p><span class="step">4</span> In another bowl, sift together the flour, baking soda and salt.</p>
<p><span class="step">5</span> Gradually beat the flour mixture into the wet mixture until it begins to form a dough.</p>
<p><span class="step">6</span> When it is almost thoroughly combined stir in the chocolate chips and nuts, if using.</p>
<p><span class="step">7</span> I greased a tablespoon to scoop the dough and drop it easily onto the baking sheet.</p>
<p><span class="step">8</span> Bake 8-10 minutes, or until golden brown.</p>
<p><span class="step">9</span> Let stand for 2 minutes on the baking sheet itself.  Then transfer the cookies to wire racks to cool<br />
completely before storing.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> My first batch of cookies did not turn golden brown even after 11 minutes.  I removed it anyway and noticed that the bottom was very brown.  So from the second batch onwards I removed it from the oven around 9 minutes itself.  Even though the cookies had a pale yellow color, they were baked enough and tasted very good.  I guess using dark brown sugar instead of light brown sugar would give the golden brown color.</p>
<p><span class="step">2</span> For vegan <strong>chocolate chip cookies</strong> use non-hydrogenated, non dairy butter and nondairy semisweet chocolate chips.  </p>

These <strong>pudding cookies</strong> are very easy to put together and taste very good.  You don&#8217;t need eggs, baking soda, baking powder or sugar.  With only 3 ingredients (nuts optional) butter, pudding mix and flour you can bake these amazing <strong>pudding cookies</strong> in no time.  If you are interested in baking but have not baked before this is &#8220;the recipe&#8221; you should try.  Nothing can go wrong and I guarantee that everybody who taste these cookies will be asking you for the recipe. <span id="more-1484"></span></p>

<p>Since it&#8217;s Christmas season, I&#8217;ve decided to bake goodies and give it to the people in my community, like the firefighters, ER workers, librarians, post men, etc.  So I decided to bake these <strong>pudding cookies</strong> in 3 different flavors, create an assorted cookie tray and hand it over to some of them.</p>
<p>This time I tried the instant pistachio pudding mix and french vanilla flavors.  Simply follow the <a href="http://www.egglesscooking.com/2008/08/03/eggless-butter-pecan-cookies/"><strong>butter pecan cookies recipe</strong></a> and substitute the butterscotch pudding mix with pistachio pudding mix for 1 batch and french vanilla pudding mix for another batch.  Also substitute the pecans with chopped pistachios and mini semi sweet chocolate chips respectively.</p>
<p>The 2 changes I made this time was:</p>
<p><span class="step">1</span> Toasting the nuts before adding it to the dough.  This gave a nice crunch to the cookies.  Toast the nuts in the oven itself while it is preheating.</p>
<p><span class="step">2</span>  Shaping the dough into balls and then flattening it with my palm.  For this I first dropped tablespoonsful of dough on the baking sheets.  I got 21 cookies for each mix.  Then I greased my hands by with little butter (from the butter wrapper) and then rolled each into ball and then flattened it by pressing it with my palm.  So this time I got beautiful round cookies for all the batches.  Last time I just dropped a tablespoonful of dough and used a fork to press it down.</p>

<p><span title="Y" class="cap"><span>Y</span></span>esterday there was the annual Christmas party in my husband&#8217;s office.  I wanted to bake something special and not very time consuming also.  Long time back I had preserved a recipe for <strong>cookie bars</strong> which came with a condensed milk can.  I thought it should be perfect because it was simply layering of ingredients, baking and then cutting them into bars.  But the only drawback, I gained 2 pounds simply reading the recipe!  I&#8217;m not kidding here.  The recipe had way too much sugar.  <span id="more-1482"></span></p>
<p>So I have made few changes to the original recipe, like using fat free condensed milk, reducing the amount of chocolate chips by using miniature chips, reducing the quantity of coconut flakes and adding some dried cranberries.  Even then the <strong>cookie bars</strong> were very sweet.  It was more like a caramel candy with nuts and dry fruits.  They are so tasty and very addictive too.  So bake these when you are having a lot of company only. </p>
<p>I got around 45 pieces and few scraps.  I just retained the scraps and sent everything to the party.  My husband told me that everybody in his office liked it very much.    </p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span> <span class="step">1</span> Preheat oven to 350F (325F for glass baking dish).</p>
<p><span class="step">2</span> If not using ready to use graham cracker crumbs, place the crackers in a ziploc bag, seal it and use a rolling pin to powder it.  Alternatively pulse it a few times in a food processor.</p>
<p><span class="step">3</span> Cut the butter into small pieces, place it in a microwave safe bowl and melt it.  First time it for 15 seconds, stir it once and keep increasing the time as needed.  Mine took 1 minute to melt completely.  Let it cool enough to handle with your hands.</p>
<p><span class="step">4</span> In a bowl, combine the graham cracker crumbs and butter; mix well.</p>
<p><span class="step">5</span> Press crumb mixture firmly on bottom of 13&#215;9 inch baking pan.</p>
<p><span class="step">6</span> Pour sweetened condensed milk evenly over the crumb mixture.</p>
<p><span class="step">7</span> First add 1/4 cup of the semi sweet chocolate chips evenly over the condensed milk layer.  Next add the coconut similarly.</p>
<p><span class="step">8</span> Evenly spread the nuts over the coconut layer.  Then top it off with the dried cranberries and the remaining 1/4 cup of the chocolate chips.</p>
<p><span class="step">9</span> Bake 25 minutes or until lightly browned.  Cool completely.  I kept it in the freezer for 10 minutes.  Cut into bars or diamonds.  Store the <strong>cookie bars</strong> covered.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> Always remember that miniature chocolate chips can be substituted for the regular ones and only half as much as the regular is required if using the mini chips.  For instance, the original recipe mentions to use 2 cups of semi sweet chocolate chips, which is way too much sugar and calories.  I substituted it with mere 1/2 cup of miniature chocolate chips.</p>
<p><span class="step">2</span> Dried cranberries was also not mentioned in the recipe.  I added it to balance the sweetness of the bars.</p>
<p><span class="step">3</span> I think lining the pan with aluminum foil and then layering it with the crumbs and other toppings will make the clean up and cutting easier, because you just lift the entire bar with foil and cut it outside.  I lined it with wax paper, the clean up was easy and I was able to lift it up, but the paper got stuck to the bars a little bit.</p>
<p><span class="step">4</span> During the Christmas season (or Diwali) if you plan to bake goodies and give it to friends and relatives preserve the plastic boxes which you get while buying strawberries, baby spinach, blueberries etc.  You can use these boxes to gift your homemade cookies etc.  Below I have used a box which came with baby spinach.  On the cover there was a big sticker of the product.  I was wondering what to do and I got this idea.  Anyhow I had to write the ingredients used in the bars because of the food allergies prevalent here, so that people in the office can decide whether they can have it or not. So I cut the plain side of a greeting card which I had received, wrote the ingredients in that card and taped it on top of that sticker.</p>

First I started with the <a href="http://www.egglesscooking.com/2008/07/21/eggless-coconut-macaroons/"><strong>Eggless Coconut Macaroon</strong></a> recipe.  One of my friends wanted a substitute for coconuts.  I thought that carrots might work out and tried the exact same recipe with grated carrots instead.  What was I thinking?  Not all light bulb flashes are as good as <a href="http://www.egglesscooking.com/2008/03/26/eggless-ice-cream-cake/"><strong>this one</strong></a> or <a href="http://www.egglesscooking.com/2008/06/27/apple-puran-poli/"><strong>this one</strong></a>.  Fortunately I test baked only 4 or 5.  The carrots were not cooked and had a raw smell and I did not have the patience to bake it further.  So I abandoned it halfway.  Now what to do with the rest of the batter?  Recently in a magazine I came across a recipe for Carrot Appams (deep fried dumplings).  Already this batter had all purpose flour, carrots and condensed milk, so I asked my mother to tweak it a little and prepare appams, which by the way tasted so much better than my carrot macaroons.</div>
<p><span id="more-643"></span></p>
<div class="noPrint">With a beautiful climate and abundant sunshine, I did not want to waste the day, when my husband and myself always complaint that we don&#8217;t have enough sunlight to take good pictures.  So I decided to try another recipe inspite of the &#8220;not-so-good-result&#8221; in the morning.  This time I did not want to experiment anything on my own, so went with a recipe from the book &#8220;Cookies&#8221; by Pippa Cuthbert and Lindsay Cameron Wilson.</p>
<p>The condensed milk chocolate chip cookies is the first recipe in the book and is also egg less, so I did&#8217;nt have to modify anything at all.  Good for me!  As always I test baked 3 cookies first and was waiting eagerly to see how it turns out.  As I have not used all purpose flour alone as mentioned in the recipe, I was not able to check for the golden brown color, to take it out from the oven.  I checked the cookies after 17 minutes and it felt right.  When I touched it in the middle, it did look like it was not baked, but once I left it in the baking sheet itself for 5 minutes, it became hard.  It had the proper shape, thickness and looked like store bought cookies.  It tasted amazingly delicious.  Crisp on the outside, chewy on the inside, but little sweet for our taste.  I think the sweetness was because of the white chocolate chips I used.  I can&#8217;t wait to try the original recipe (with all purpose flour and semi sweet chocolate chips) to taste the traditional chocolate chip cookies, but egg less. </p></div>

<p>1. Preheat the oven to 350F (180C).<br />
2. Grease baking sheets or line it with parchment paper.<br />
3. Beat the butter and sugar together in a large bowl until pale and creamy (for 5 minutes).<br />
4. Pour in the condensed milk, vanilla extract and beat to combine.<br />
5. In a separate bowl, sift the flour, cocoa and baking powder and combine well.<br />
6. Stir into the butter mixture, then add the chocolate chips, nuts (if using).<br />
7. Combine it well using a spatula.  Don&#8217;t beat it.<br />
8. Take a tablespoonful of dough, roll it and flatten it using your fingers.  Grease the tablespoon, so that the dough will fall off easily.<br />
9. Bake it for 15-18 minutes, or until golden brown. (The color check can be done  if using all purpose flour only.  Mine were done at 17 minutes).<br />
10. Let the cookies cool for 5 minutes in the baking sheet itself.  Don&#8217;t try to remove it.  It may look unbaked but it will become hard on the baking sheet itself.<br />
11. After 5-10 minutes, using a spatula transfer the cookies to a wire rack to cool completely.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> 1.  I had only white chocolate chips in my pantry.  White chocolate chips with all purpose flour, will have a pale look, so to give a contrast in color, I mixed 1/4 cup of baking cocoa (Dorste) to 2 cups of all purpose flour, not changing the 2.25 cups of flour mentioned in the original recipe.  So if you have semi-sweet chocolate chips, you can just use all purpose flour alone to bake the usual chocolate chip cookies.</p>
<p>2.  The cookies were very sweet.  I would suggest reducing the chocolate chips to 1.25 cups and add some chopped nuts or quick cooking oats instead.</p>
<p>3.  If you are using a dark (black) color non stick baking sheet, reduce the baking time by 1 or 2 minutes, so that the bottom does not get burnt. </p>
<p>4.  The cookies were crispy, not chewy.  So if you want a chewy chocolate chip cookie, I think decreasing the quantity of butter or increasing the all purpose flour would be helpful.</p>

<p><strong><a href="http://www.harish-nandu.blogspot.com/" target="_blank"><span title="K" class="cap"><span>K</span></span>amala of Mom&#8217;s Recipes</a></strong>  had sent me Cinnamon for the <strong><a href="http://theyumblog.wordpress.com/2007/10/31/boondhi-laddoo-diwali-special-and-arusuvai-friendship-chain/" target="_blank">Arusuvai Friendship Chain</a></strong>.  Thank you very much for including me in this chain and for sending me my favorite chocolates too.  When I sent her a mail after receiving the ingredient she replied back that she chose cinnamon because she thought that since I bake a lot I would be using it quite often.  So thoughtful of you Kamala.  Since this is such a special ingredient, I wanted to try something special and interesting. <span id="more-60"></span></p>
<p>I was going through a couple of books I have and found this recipe in the Baking for Dummies book, by Emily Nolan.  This was the first book I bought to learn to bake.  It has all the basic information on principles of baking, tools and techniques, a number of recipes, troubleshooting tips and lot more.</p>
<p>This bread is also called pull apart bread because it has to be pulled apart with your hands, instead of cutting it.</p>
<p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p>
<p>First I will write down the ingredients as it is in the original recipe.  Later I will mention the changes I made.</p>

<p><strong><span style="text-decoration: underline;">Part 1:</span></strong><br />
All Purpose Flour 2 cups<br />
Sugar 1/2 cup<br />
Baking Powder 1 tablespoon<br />
Salt 1/2 teaspoon<br />
Cold Butter 5 tablespoons cut into 5 pieces.</p>
<p><strong><span style="text-decoration: underline;">Part 2:</span></strong><br />
Semisweet chocolate chips 1 cup<br />
Milk 2/3 milk</p>
<p><strong><span style="text-decoration: underline;">Part 3:</span></strong><br />
Sugar 1/4 cup<br />
Ground Cinnamon 1.5 teaspoons<br />
Butter 3 tablespoons melted</p>
<p><strong><span style="text-decoration: underline;">Procedure:</span></strong><br />
1.  Preheat the oven to 350F.  Grease an 8-inch square baking pan.<br />
2.  In a mixing bowl sift and combine all the ingredients mentioned in Part 1 except butter.<br />
3.  Using a pastry blender or a few pulses of a food processor, cut the cold butter into the flour mixture until the mixture resembles coarse meal.</p>

<p>4.  Stir in the Part 2 ingredients and combine to form a dough.</p>

<p>5.  The final dough would look like this.</p>

<p>6.  Divide the dough into 16 balls and place in the prepared baking pan.  The balls will touch.</p>

<p>7.  Drizzle the balls with the melted butter. </p>

<p>7.  Combine the remaining 1/4 cup sugar and the cinnamon.  Sprinkle them with the cinnamon-sugar mixture.</p>

<p>8.  Bake for 30 minutes, until light brown.  Cool in the pan set on a wire rack before removing from the pan.</p>

<p><strong><span style="text-decoration: underline;">My Notes:</span></strong><br />
1.  For this recipe the butter has to be used straight from the refrigerator. </p>
<p>2.  If you don&#8217;t have a food processor or a pastry blender you can use 2 knives or 2 forks to cut in the fat.  To use a pastry blender, mix the ingredients while cutting into the fats with the blender using a rocking, up and down bouncing motion.</p>
<p>3.  To divide the dough into 16 balls you can follow my method.  First divide the entire dough into 2 equal parts.  Roll the 2 parts into 2 separate logs.  Cut each log into 8 pieces.  While doing this, flour the surface generously.  I also sprayed both my hands with non stick oil spray, so handling the dough was easy.</p>
<p>4.  Similarly for greasing the baking pan, use the butter wrapper.</p>
<p>5.  I pretty much followed the recipe, but for the 6th step.  I melted the 3 tablespoons of butter in the microwave oven and that was really a lot of butter.  My husband was having &#8220;are you crazy to pour so much butter and sugar&#8221; look in his face.  So instead of using the entire butter and sugar as mentioned in the recipe, I followed his advice of just brushing the dough with little butter,  sprinkled very little sugar, but took another 1.5 teaspoons of cinnamon, little cocoa and sprinkled over the balls of dough.</p>
<p>6.  I baked the bread for 32 minutes.  I would advice to cool it in the pan for atleast an hour before taking it out.  I tried to remove the bread after 30 minutes and the bread started to fall apart and crumble.  Anyway I managed to get 10-12 good pieces.  The bread was very moist inside, but a little bit dry on the tops.  I guess it was because I did not use the entire 3 tablespoons of butter as mentioned in the original recipe.  But the taste was phenomenal, with the melted chocolate chips, a hint of sweetness and the aroma of freshly ground cinnamon.</p>

<p><span title="I" class="cap"><span>I</span></span> was searching for zucchini recipes and found this one in Food Network&#8217;s site.  It&#8217;s by Paula Deen.  The <strong><a title="Chocolate Chip Zucchini Bread" href="http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_138913,00.html" target="_blank">original recipe</a></strong> yields 2 loaves, so I scaled down the ingredients to 50% to bake 1 loaf and used bananas to make it eggless.  <span id="more-54"></span></p>
<p><strong><span style="text-decoration: underline;">Ingredients: </span></strong></p>
<p><strong><em>(PART 1)</em></strong><br />
All Purpose Flour 1.5 cups<br />
Baking Powder 1/4 tspn<br />
Baking Soda 1/2 tspn<br />
Cinnamon 1/4 tspn ( I used even little because I&#8217;m not a big fan of cinnamon)<br />
Salt 1/2 tspn</p>
<p><strong><em>(PART 2)</em></strong><br />
Zucchini peeled and grated, 1 cup (I used 1 medium zucchini, the gratings measured nearly 1.5 cups)<br />
Semi Sweet Chocolate Chips 1/2 cup (I used mini chocolate chips)<br />
Pecans 1/2 cup, chopped</p>

Bananas 2 medium size, mashed<br />
Vanilla essence 1 tspn</p>
<p><strong><span style="text-decoration: underline;">Procedure:</span></strong><br />
1. Pre-heat the oven at 350 F.<br />
2. Combine ingredients in Part 1 and sieve them.<br />
3. To this add the ingredients in Part 2.<br />
4. Combine ingredients in Part 3 in a blender/or cream it using an electric hand mixer.  I used my magic bullet blender to blend it.  Add this mixture to the above dry ingredients and mix it well.  You may add a little milk, if you feel that the mixture requires some more liquid.  I had to add a couple of tablespoons of milk because I increased the quantity of zucchini.<br />
5. Pour it in a greased bread loaf pan.</p>

<p>6. Bake it at 350F for 50 min or until a skewer inserted in the middle of the loaf comes out clean.<br />
7. Cool the bread in the pan for 30 minutes before transferring it to a wire rack.  Wait for another 30-45 minutes before slicing the bread.</p>

<p><strong><span style="text-decoration: underline;">My Notes:</span></strong><br />
1. This is similar to the <strong><a title="Eggless carrot cake" href="http://www.egglesscooking.com/2008/03/19/carrot-cake/" target="_self">carrot cake</a></strong> recipe, but uses zucchini and chocolate chips instead.  Next time I will add both carrots and zucchinis.</p>
<p>2. I feel that the Magic Bullet Blender is very versatile.  I bought it 2 years back to puree steamed vegetables and fruits in small quantities for my infant son.  But it does a lot more.  The recipe booklet which comes along with the blender is also very useful.  I have made muffins and soups as mentioned in the recipe book and it has come out very well also.  Even in the above recipe I add all the ingredients in Part 3 in the blender&#8217;s big jar and gave it a few pulses and it&#8217;s ready within few minutes.  I find it more easy than using an electric hand mixer.</p>
<p>3.  Use Vegan chocolate chips/carob chips to make this bread100% vegan.</p>
