<p><span title="I" class="cap"><span>I</span></span> was looking for some cornmeal recipes for the Corn event and remembered that I had bookmarked one healthy <strong>snack cake</strong> recipe from my friend <strong><a href="http://vcuisine.blogspot.com" target=" _blank">Viji&#8217;s blog</a></strong>.  Her blog has an amazing collection of traditional and innovative recipes.  I have made a couple of changes to the original recipe keeping the measurement same.  Since her blog is private, I&#8217;m reproducing her recipe (along with changes made by me) here with her permission.</p>

<div class="noPrint">To make it vegan friendly, I used brown rice milk instead of dairy milk, canola oil and unsweetened applesauce instead of butter in the original recipe. If you are able to find vegan chocolate chips or use carob chips this snack cake recipe will be 100% vegan. Even after all these changes the cake tasted very good. </p>
<p>Speaking of which, <strong><a href="http://ryza.ca/english/about.htm" target=" _blank">brown rice milk</a></strong> is a new addition in our diet.  Earlier I have baked with regular rice milk and <strong><a href="http://store.bluediamond.com/Almond-Breeze_c_4.html" target=" _blank">almond milk</a></strong>, but this is the first time I have used brown rice milk.  I prefer rice milk to soy milk, especially while baking.  I feel that some brands of soy milk leaves an unpleasant odor in baked goods.  I have tried a couple of vegan cake recipes with soy milk and felt that the texture was not good too, very sticky.  So I usually go with rice milk or almond milk.  Now brown rice milk is my favorite too.  It tastes good by itself too.  My son has it with his cereal.  So if a 4 year old likes it, then it should be definitely good, right?</div>

<p>Yield: 16 pieces (I used a 9&#215;13 inch pan)</p>
<h2>Procedure:</h2>
<p>1. Preheat the oven for 15 minutes at 175C/350F.  Grease a 9&#215;13 inch baking pan with butter/non stick cooking spray.  I lined it with parchment paper and then greased it also with cooking spray.</p>
<p>2. In a large bowl combine together all the dry ingredients reserving the 1 tablespoon of chocolate chips.</p>
<p>3. Mash 1 large ripe banana with a fork.  I chopped the banana and used some of the milk to grind it into a creamy paste.  Mix together all the wet ingredients together and stir it well.  </p>
<p>4. Pour the wet ingredients to the dry ingredients and combine it well without any lumps.  I used another 1/4 cup of water to get the required consistency.</p>
<p>5. Spread the batter in the prepared pan.  Smooth it out with a spatula dipped in hot water and top it with the reserved chocolate chips.</p>
<p>6. Bake it for 20-25 minutes or until a toothpick inserted in the middle of the cake comes out clean.  Mine was done in 22 minutes.</p>
<p>7. Transfer the pan to a wire rack and let it cool completely before you can remove the cake from the pan.  After it is completely cooled, invert the cake pan to remove the cake and cut it into pieces.</p>
<h2>My Notes:</h2>
<p>1. I have included a couple of healthy substitutes to the already healthy <strong>snack cake</strong>.  Instead of 1 cup of regular size butterscotch chips, I have used 1/2 cup of mini chocolate chips.  Instead of 1 cup of melted butter I have used 1/3 cup of oil, 2/3 cup of unsweetened applesauce and increased the quantity of mashed bananas from 1 cup to 1 and 1/4 cups.</p>
<p>2. I have also used brown rice milk instead of dairy milk.  The original recipe used whole wheat flour and regular cornmeal, which I have substituted with whole wheat pastry flour and whole cornmeal.</p>
<p>3. Where I live I was able to fine almond meal and walnut meal ready made.  If you are not able to find it readily, process nuts of your choice in a food processor until its finely powdered.</p>
<p>4. The sweetness was just right for us.  Viji had used 1 cup of dates, which I replaced with 1/2 cup of dried cranberries and also included 1 cup of chopped pistachios.  Maybe that&#8217;s the reason my cake was not very sweet.  I think if I had used the dates the cake would have been very sweet.</p>
<p>5. With so many ingredients in the cake, we couldn&#8217;t feel the presence of cardamom.  So if you are a spice fan increase the quantity to 1 teaspoon instead of 1/2 teaspoon.</p>
<p>6. I was on a tight schedule on the day I was going to bake this cake.  So I prepared the dry ingredients the previous night itself.  So it was just mixing in the wet ingredients and baking the next day.</p>

Since so many people are visiting the website, I have to be very careful about the authenticity of the information I post and for that I&#8217;m doing quite a bit of research too.  When I announced the Corn event, one of my blogger friend had a doubt if the makai ki atta (maize flour) available in India is whole grain.  I also had a similar doubt, if Masa di harina I see in the stores here is whole grain.  So I set off to find some information on the following:</p>

<p>From the information I have gathered so far I&#8217;m pretty sure that masa di harina and makai ki atta are one and the same.  To get both, maize (corn) is dried and soaked in a lime solution.  The process is called slaking.  The hull loosens after soaking, which is removed and then the damp corn is ground into fine flour.  Actually this flour is nutritionally superior to <strong>cornmeal</strong> (I&#8217;m thinking that the cornmeal mentioned here is the degerminated cornmeal and not whole cornmeal) because the lime water adds calcium to the corn and makes the niacin in the corn nutritionally available.</p>
<p>Now that we know that masa de harina and makai ki atta are one and the same and they are nutritionally superior too.  Are they whole grain forms of corn?  I&#8217;m guessing the answer is &#8220;no&#8221; because the hull is removed during the slaking process.  That being said I think that it is less refined than all purpose flour and also has the added benefit of calcium.  This is my take on this topic.  Please feel free to share your views here and correct me if I&#8217;m wrong.</p>
<p>Shall we move on to the recipe now?  If somebody asks me to pick my most favorite recipe, it would be without a doubt this <strong><a href="http://www.egglesscooking.com/2009/07/03/low-fat-blueberry-coffee-cake/">low fat blueberry coffee cake</a></strong>.  I have sung it&#8217;s praises in that post and am going to do it again here because it is that good.  Before trying that cake, blueberries was not in the list of my favorite fruits, but after baking that coffee cake I stock blueberries so much that one day my husband (and others too) might start calling me &#8220;that crazy blueberry lady&#8221;.  So one day last week, as I was raiding my fridge, what do I find? 3 packs of blueberries and a cup of blueberry soy yogurt.  You know what I would have decided to do.  Of course bake the blueberry coffee cake, but with few changes.  Since I&#8217;m hosting the &#8220;Corn&#8221; event, I wanted to incorporate that too in the recipe and now here we have a very light, not so sweet, vegan blueberry <strong>cornmeal</strong> coffee cake.</div>

<p><span class="step">1</span> Preheat oven to 350F for 15 minutes.  Grease a 8 inch square baking dish.  Line it with parchment paper and spray with non stick cooking spray.   In a small bowl combine the almonds, brown sugar and cinnamon; set aside.  The oil spread can be melted on stove top or microwave oven or even in the oven while it&#8217;s preheating.</p>
<p><span class="step">2</span> Combine together the flour, whole <strong>cornmeal</strong>, sugar, baking powder, salt and baking soda in a large bowl.  I found medium grind whole cornmeal.  It is not as fine as the regular cornmeal you find in the grocery stores.  So I had to powder it in the food processor a couple of times, to get a fine texture.  </p>
<p><span class="step">3</span> The original recipe uses 1/2 cup buttermilk.  Since I wanted to make it vegan and also had some blueberry flavored soy yogurt I decided to use that.  So I measured approximately 1/3rd cup of yogurt blended it with water to get 1/2 cup measurement.  To that add the melted butter, extracts, vinegar and applesauce.  Whisk until well blended.</p>
<p><span class="step">4</span> Stir the wet ingredients into dry ingredients until just moistened.  Fold in 2/3 cup blueberries.  If using frozen blueberries, do not thaw before adding to batter, because the color will bleed.</p>
<p><span class="step">5</span> Pour the batter into the prepared pan.  Top with remaining blueberries.  Sprinkle the almond mixture on top.  Tap the pan lightly a couple times so that the topped blueberries and almonds sticks to the batter.</p>
<p><span class="step">6</span> Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean.  Cool the pan on a wire rack.</p>
<p><span class="step">7</span> Remove the cake from the pan after 10 minutes and transfer the cake directly to the wire rack.  The cake is quite light, so you will have to be very careful while tilting the pan.      </p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span></p>
<p>This blueberry cornmeal coffee cake was as good as the one which I had baked earlier with all purpose flour.  This time I did have the almond extract and it definitely gave a nice flavor to the cake.  As I have mentioned in my earlier post, this cake is very light, so handle with care while removing it from the pan.  I thought that using cornmeal would give a harder texture than using all purpose flour alone, but it was light only.  The sweetness was just right.  So if you have a sweet tooth you can add another 2-3 tablespoons of sugar.  We liked it just the way it was.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> Butter and buttermilk was used in the original recipe which I have substituted with vegetable oil spread and soy yogurt to make it vegan.</p>
<p><span class="step">2</span> I used Bob&#8217;s Red Mill brand of medium grind whole corn meal.  I test baked something with the cornmeal just like that and saw that the corn did not cook completely.  It was gritty.  So either find fine grind whole cornmeal or process in a food processor/blender thoroughly if using the medium grind.  I see that even coarse grind is available, I would suggest not to get that unless you have a food mill or a very efficient food processor, because the medium one itself took a lot of time for me to get a fine texture.</p>

<p>After trying the <strong><a href="http://www.egglesscooking.com/2009/11/26/vegan-barley-flour-chocolate-cake/">barley flour chocolate cake</a></strong> I was confident that barley flour would be good in brownies too.  I decided to use barley flour in the <strong><a href="http://www.egglesscooking.com/2009/09/30/oat-flour-and-beet-brownies/">oat flour-beet brownies recipe</a></strong> which I had tried earlier.  This time I wanted to make it vegan too, so I used unsweetened chocolate instead of semi-sweet chocolate and increased the quantity of sugar.  If you don&#8217;t want to make it vegan simply follow that recipe but use barley flour instead of oat flour and pumpkin puree instead of beet puree or use beet puree itself.</p>

<p><span class="step">1</span> Preheat the oven to 350F.  Coat and 8 inch square pan with cooking spray or line it with aluminum foil like me leaving enough foil hanging on both the sides so that lifting the brownies with the foil is easy and so is cutting the brownies too.</p>
<p><span class="step">2</span> Melt the chocolate and margarine in the microwave oven, in a large bowl.  Take care while doing so or else the chocolate will get burnt.  So increase the time little by little.  Stir it well, it should be smooth. </p>
<p><span class="step">3</span> In the same bowl, combine the pumpkin puree, sugar, cocoa powder, vanilla and unsweetened applesauce and whisk it well.  This mixture should be smooth and creamy.  I found that this mixture was very stiff, so added 1/4 cup of water (pumpkin cooked water) too.</p>
<p><span class="step">4</span> Sift the barley flour over the liquid ingredients directly.  Then stir the baking powder, chopped pecans and salt with a wooden spoon.</p>
<p><span class="step">5</span> Pour the batter into the prepared pan, smooth it out with a spatula and bake it for about 35-40 minutes.  Mine was done after 38 minutes.  Brownies should spring back when touched or simply do the toothpick test.</p>
<p><span class="step">6</span> Cool completely in the pan on a wire rack.  Since I lined the pan with aluminum foil I lifted it after an hour and I cooled it on a wire rack.  After another 2 hours I was able to cut them into neat squares without any trouble.  If baking it directly in the pan, it will take some more (actually a lot more) time for the brownies to cool completely and getting neat pieces will also be difficult.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> The barley flour brownies tasted awesome.  It was mildly sour which I think is because of the applesauce.  See My Notes section for more details.  Like the oat flour brownies I felt a slight difference in the texture but it&#8217;s not a big deal.  Once refrigerated you hardly realize any difference at all.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> I wanted to use only pumpkin puree for these brownies but I had only 1/2 cup of homemade puree left.  So I had to use unsweetened applesauce for the rest.  I think the brownies were mildly sour (others did not feel this though) because of this.  So you can either increase the quantity of sugar by 1/4 cup or use more of pumpkin puree/beet puree than applesauce.  For the oat flour and beet brownies I had used 1 cup of beet puree and just 1/4 cup of applesauce and did not find it sour.  You could follow the same measurement for these barley flour brownies too.</p>
<p><span class="step">2</span> You can use all purpose flour too instead of barley flour.</p>
<p><span class="step">3</span> You could use store bought canned pumpkin too.  I think in that case you would have to add additional water because the canned puree is very stiff.  I always cook the puree at home.  Actually I prepare three vegetable purees at the same time and freeze it.  It&#8217;s carrots, pumpkin and beets.  I use a big pressure cooker for this.  Clean, peel and chop the vegetables into bite size pieces.  Take 3 utensils which will fit the cooker and add each vegetable to one utensil each and add enough water to cover them and leave the cooker for 1 whistle.  Once it is cool enough drain the vegetables and use a blender to get a smooth puree or puree it while it&#8217;s still hot with an immersion blender.  Save the vegetable cooked water and use it while preparing soups.  Transfer the puree into 1/2 cup size containers and freeze it and use it whenever needed.  Thaw it overnight in the fridge if you want to use it the next day.</p>
<p><span class="step">4</span> Home made pumpkin puree is not as stiff as the canned one.  After thawing I found that it had way<br />
too much water.  So I had to strain the puree in a fine meshed sieve to separate the water.  </p>

If you are interested in baking, want to include whole grains while doing so and also want the baked goods to be very tasty, then you will have to check King Arthur Flour&#8217;s Whole Grain Baking book and I&#8217;m sure you will become a fan like me.  It is not just a book with recipes but talks in detail about the different types of whole grain flours, their characteristics and how to use them effectively so the result is very delicious baked goods.  It&#8217;s a 600 pages cookbook, so you can understand the in-depth coverage of the subject matter.  You have abundant choice with recipes for breakfast, quick breads, yeast breads, cookies, cakes, desserts etc.  It&#8217;s like any other baking book when it comes to the huge collection of baking recipes but what makes it the best is that all these recipes are made with a variety of whole grain flours.</p>

<p>I had to bake a <strong>layer cake</strong> for for the final class of Course 1 of Wilton&#8217;s Cake Decorating series.  I decided to go with one of the cake recipes in the King Arthur&#8217;s Whole Grain Baking book.  Since I&#8217;m on the look out for a good egg free white cake recipe, I decided to try the butter cake recipe using whole wheat pastry flour.  I made a couple of changes to that recipe to make it egg free and healthy.</p>

<p>Is this cake really healthy?  The answer is both yes and no.  Yes, because I have used trans fat free non hydrogenated margarine instead of butter in the original recipe, thereby reducing the fat and eliminating cholesterol.  No, because I have frosted the cake and it is made with shortening.  So if you really want a healthy cake either avoid frosting or make a simple vegan frosting or a low fat frosting.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat the oven to 350F.  Grease and flour two 8-inch round pans or line with  parchment paper.  Nowadays I prefer lining the pan with parchment paper in the bottom as well as on the sides.  The cake comes out of the pan perfectly each and every time.  </p>
<p><span class="step">2</span> Whisk together the flours, baking powder and baking soda in a medium bowl.</p>
<p><span class="step">3</span> Cream together the margarine, sugar and salt in a large mixing bowl with an electric mixer until light and fluffy.</p>
<p><span class="step">4</span> Add 1/4 cup of applesauce at a time, beating well after each addition and scrape the sides and bottom of the mixing bowl once or twice.  It curdles but don&#8217;t worry.</p>
<p><span class="step">5</span> Add 1/3rd of the flour mixture, mixing until incorporated.</p>
<p><span class="step">6</span> Measure 1 cup of yogurt in a liquid measuring mug.  To that add the vanilla and vinegar and whisk together well.</p>
<p><span class="step">7</span> Add half of this mixture to the large bowl, again beating until the mixture is very fluffy. Meanwhile scrape the sides and bottom of the bowl also.</p>
<p><span class="step">8</span> Then add another 1/3rd of the flour and beat well.  Next add the remaining yogurt mixture, then the remaining 1/3rd cup of flour, mixing well after each addition.  Stop once or twice to scrape the sides and bottom of the bowl.</p>
<p><span class="step">9</span> Pour the batter into the prepared pans. (It was not watery but more in a semi solid state).  Bake the cake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.  Mine was done in about 32 minutes.  The cake was in golden brown color and started to pull from the sides of the pan.  If you are baking a 9&#215;13 inch cake the baking time will vary, so do the toothpick test to find if the cake is done.</p>
<p><span class="step">10</span> Remove from the oven and cool for 15 minutes before removing from the pan.  Then pull out the parchment paper from the side of the pan and invert the pan and the cake falls without sticking to the pan.  Remove the parchment paper sticking to the bottom of the cake and transfer it to a cooling rack.  The cake has to cool completely before frosting.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> In our house we have got used to whole wheat pastry flour in baked goods so much that we hardly notice any difference in taste or texture.  It takes quite sometime to get accustomed to that taste, especially if you are using traditional whole wheat flour instead of whole wheat pastry flour.  Together with the frosting the cake was awesome and we did not miss the white flour at all.  It was not only us but I gave the cake to a couple of people and all of them loved it.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> I used Fleischman&#8217;s no salt added soft tub margarine instead of butter.</p>
<p><span class="step">2</span> If you don&#8217;t find whole wheat pastry flour then use equal portion of all purpose flour and whole wheat flour.  If you are using traditional whole wheat flour add 1/4 cup of freshly squeezed orange juice to reduce the bitterness and raw smell/taste.  This is the tip given in the book, which I have not tried so far.</p>

<p><span title="I" class="cap"><span>I</span></span> found this recipe for wholesome <strong>breakfast cookies</strong> in the book One Smart Cookie by Julie Van Rosendaal.  I have made a couple of changes to make it even more healthy and was floored by the taste.  I really can&#8217;t believe that healthy can taste so good.  So if you have kids who drive you crazy without having breakfast, then this recipe is for you.  These breakfast cookies are packed with proteins, fiber, vitamins and minerals and low in fat too.  What better way to start a day than this? With a glass of milk or orange juice it&#8217;s sure to fill up even adults.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat the oven to 350F.  Line 2 cookie sheets with parchment paper.</p>
<p><span class="step">1</span> Pulse the oats in a food processor until it resembles coarse flour.  To this also add the whole wheat flour, baking powder, baking soda, cinnamon and salt and process until combined.  Transfer this mix to a large mixing bowl.</p>
<p><span class="step">2</span> Put the drained and rinsed beans in the food processor and pulse until smoothly pureed.  You may add 2-3 tablespoons of water to make it easier.  Add the butter/margarine and process until well blended.</p>
<p><span class="step">3</span> Now add the brown sugar, applesauce and vanilla and pulse until smooth, scraping down the sides of the bowl.</p>
<p><span class="step">4</span> Pour the bean mixture into the oat mixture and stir using a spatula.  Add the peanut butter chips/chocolate chips, raisins/dried cranberries, nuts and flax seed meal and stir until blended.</p>
<p><span class="step">5</span> Drop by large spoonfuls of dough onto the prepared cookie sheets.  Flatten each one a little with your hand.  Have a bowl of water nearby to dampen your palms, so that flattening the cookies will be easy.</p>
<p><span class="step">6</span> Bake for 14-16 minutes, until pale around the edges but still soft in the middle.  The cookies baked in a dark coated cookie sheet started browning after 14 minutes itself but the pale coated cookie sheet was done after 16 minutes.</p>
<p><span class="step">7</span> Place the the cookie sheets on individual wire racks.  Let it cool for 5 minutes.  Transfer the cookies to the cooling rack after that.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> These cookies tasted very much like the <strong><a href="http://www.egglesscooking.com/2008/12/08/fiber-one-breakfast-cookies/">Fiber One Cereal</a></strong> <strong>breakfast cookies</strong> I have baked earlier.  These are very soft cookies, more like a muffin.  The presence of whole grain flours like whole wheat pastry flour and oat flour did not affect the taste at all.  You cannot detect the navy beans too.  It&#8217;s not very sweet also.  If &#8220;healthy&#8221; tastes so good, I&#8217;m ready to eat healthy always.  My son takes it to school as a treat after having his lunch and he likes it so much.  </p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> You can use all purpose flour instead of whole wheat pastry flour, white beans instead of navy beans, butter or margarine, chocolate chips instead of peanut butter chips, raisins, pecans instead of walnuts.</p>
<p><span class="step">2</span> For chocolate flavored cookies use 1/2 cup of unsweetened cocoa powder instead of the flour.</p>
<p><span class="step">3</span> <strong><em>Updated:</em></strong> I stored these cookies in a cookie jar over the counter and it became very soft.  This is okay if you are going to consume it within 2-3 days.  The longer it stays on the counter the softer it gets.  Recently I borrowed Moosewood Restaurant Low Fat Favorites from the library and found a tip for storing low-fat cookies.  It says that the best way to store low-fat cookies is in layers separated by wax paper or plastic wrap in an airtight container in the freezer.  Defrost at room temperature for about 20 minutes before serving.  But I think storing in the refrigerator should be fine because it gives instant gratification</p>

<p><span title="I" class="cap"><span>I</span></span> had a cup of pureed beets in the freezer and wanted to use it up.  I had the idea of pairing it up with chocolate because I have seen a couple of such recipes.  So I was browsing through one of my favorite books &#8220;Deceptively Delicious&#8221; and my eyes fell on the Brownies recipe.  It used 1/2 cup each carrot puree and spinach puree.  I thought why not use the 1 cup of beet puree instead.  I&#8217;m glad that I did because the brownies turned out very tasty.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat the oven to 350F.  Coat and 8 inch square pan with cooking spray.  For brownies I line the pan with aluminum foil and grease it with cooking spray, so cutting it is easy and also we can get perfect squares.</p>
<p><span class="step">2</span> Melt the chocolate in a double boiler or over a very low flame.  I melted the chocolate in the microwave oven, in a medium size bowl.  Take care while doing so or else the chocolate will get burnt.  So increase the time little by little.  Stir it well, it should be smooth. </p>
<p><span class="step">3</span> In the same bowl, combine the beet puree, sugar, cocoa powder, margarine, vanilla and unsweetened applesauce and whisk it well.  This mixture should be smooth and creamy.</p>
<p><span class="step">4</span> Stir in the <strong>oat flour</strong>, baking powder, chopped walnuts and salt with a wooden spoon.</p>
<p><span class="step">5</span> Pour the batter into the prepared pan and baked 35-40 minutes.  I checked it after 35 minutes and felt that it was not done.  Brownies should spring back when touched, but it did not.  So baked it for another 5 minutes.</p>
<p><span class="step">6</span> Cool completely in the pan on a wire rack.  Since I lined the pan with aluminum foil I lifted it after an hour and I cooled it on a wire rack.  After another 2 hours I was able to cut them into neat squares without any trouble.  If baking it directly in the pan, it will take some more (actually a lot more) time for the brownies to cool completely and getting neat pieces will also be difficult.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> The taste was simply superb.  The <strong>oat flour</strong> or the beet puree did not affect the taste at all.  It tasted like any other regular brownie.  The only difference I felt was in the texture, but it was nothing huge.  The brownies were chewy and also pudding(y) in the middle.  I don&#8217;t mean that it was in a semi-solid state, it had set properly, but the texture was a bit different than the usual brownies, which I think is because of the beet puree.  Also the brownies are more reddish than brown.  This did not stop my son or the rest of us from finishing it off.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> I have used 1/4 cup unsweetened applesauce instead of 2 egg whites mentioned in the original recipe.  If you have extra beet puree you can use 1/4 cup of that itself.  I had only 1 cup of beet puree so I used applesauce. </p>
<p><span class="step">2</span> <strong>Oat flour</strong> is readily available in stores.  I didn&#8217;t have that in hand, so I powdered quick cooking oats in a blender.  Be sure to powder it finely, sieve it a couple times.</p>
<p><span class="step">3</span> You can use all purpose flour too instead of oat flour.</p>
<p><span class="step">4</span> To prepare beet puree you can either buy canned beets and blend it smoothly in a blender or do like what I did.  I peeled and cooked the beets in a pressure cooker.  Cut into small pieces once cooled and then blend it.  I had prepared this a month back.  So I put it in cup, covered with plastic wrap and froze it.  To use the puree, thaw it in the fridge overnight and by the following afternoon it should be alright.</p>

If I make a such a list, this recipe for <strong>chocolate chip muffins</strong> will definitely find place in it.  This healthy muffin recipe is from the book Deceptively Delicious by Jessica Seinfeld.  This book is full of tips, tricks and recipes to prepare healthy and tasty meals.  The only change I had to make was to substitute the egg white.  The author had suggested to use either whole wheat pastry flour or all purpose flour.  I decided to go with the pastry flour and I&#8217;m so glad that I did it because the muffins came out so well; tasted excellent, had a wonderful texture and was very satisfying. </p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat oven to 350F for 15 minutes.  Line a 12-cup muffin tin with paper liners and use a non stick cooking spray to grease the liners.  In a baking sheet toast the wheat germ while the oven is preheating.  Have a close watch or else it might burn.  Around 5 minutes should be enough.</p>
<p><span class="step">2</span> In a large mixing bowl, beat the margarine and sugar until creamy using a hand held electric mixer.  Stir in the buttermilk.  The mixture appears to be curdled but don&#8217;t worry.  Also add the prune puree.  Add the 1 tablespoon water to the baby food jar and shake it well and then pour it to the rest of the ingredients.  Stir in the applesauce and vanilla extract too.</p>
<p><span class="step">3</span> Add the rest of the dry ingredients (flour to salt) except the wheat germ to the wet ingredients and stir until just combined; do not over-mix.  Lumps in the batter is fine.</p>
<p><span class="step">4</span> Divide the batter among the muffin cups.  Sprinkle the tops with wheat germ (around 1 teaspoon for each muffin). I usually fill 3 tablespoons of batter for each muffin.  Even though the measurement is for 12 muffins, I was able to fill only 11 cups.  So fill the 12th cup with water (3/4th of the tin should be enough), to ensure even baking of the muffins.</p>
<p><span class="step">5</span> Bake around 20-25 minutes or until a toothpick inserted in the center comes out clean.  I baked mine for 23 minutes.</p>
<p><span class="step">6</span> Remove the muffin tin from the oven and cool it on a wire rack for 5 minutes.  After 5 minutes take the muffins out of the pan and let it cool on a wire rack.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> If you think that healthy and tasty don&#8217;t go together, you have to taste these muffins to change your belief.  It is unbelievably tasty for a muffin made with whole wheat pastry flour.  No raw smell or bitter after taste, right amount of sugar and amazing texture!  I don&#8217;t think I will like any other <strong>chocolate chip muffin</strong> more than this one or try any other recipe, because this is PERFECT.  I did skimp on the wheat germ topping because I was not sure if I would like it, but what a surprise, it blended well with the muffin and did not affect the taste.  My son loved these muffins.  </p>
<p>Another interesting thing, these muffins tasted so good on the day I baked them itself.  Usually whole wheat baked goods don&#8217;t taste good the same day, it gets better the next day.  I know that I cannot resist my temptation to taste it immediately, so I baked these after dinner assuming that it can cool overnight and we can have it for breakfast the following day.  But I was able to be patient only for 3 hours.  I skeptically took piece of the muffin and was really blown away by the texture and taste and ended up eating the entire muffin.  Initially you will be able to smell the baking powder (very mild) but not after the second day.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> As per the original recipe you can use either prunes or dates.  Blend 1/4 cup chopped prunes or dates with 1/4 cup hot water and puree until smooth.  I had a jar of pureed prune, so I used it instead.  The 2.5oz jar measures exactly 1/4 cup.  </p>
<p>The muffins are brown in color because of the prune puree but that does not affect the taste at all.  I think using dates will leave it&#8217;s taste in the muffins.</p>
<p><span class="step">2</span> The original recipe required one egg white, which can be substituted with 2 tablespoons of any egg substitute.  I think the egg white acts as a binder in this recipe.  So I used a tablespoon of water (to wash the prune puree jar) and 1 tablespoon applesauce.  If you have extra prune/date puree you can use 2 tablespoons of the same.</p>

<p><span title="I" class="cap"><span>I</span></span> found this recipe for <strong>blueberry coffee cake</strong> in Taste of Home&#8217;s Baking Book.  As I have mentioned a couple of times earlier, the recipes which appear in that magazine are perfect and it does not disappoint you at all.  So this coffee cake recipe was no exception to it.  I&#8217;m not a big blueberry fan.  I buy these berries to make <strong><a href="http://www.egglesscooking.com/2008/11/28/blueberry-flavored-milk/">blueberry milk</a></strong> for my son and other than that we don&#8217;t do much with it.  Sometimes he asks for blueberry pancakes but this time he didn&#8217;t want neither.  I was looking for blueberry recipes and found this coffee cake recipe.  The first thing which caught my attention was that it used only 2 tablespoons of butter and it was very easy to prepare.  These days my son is so keen on helping me while baking so I have to consider the ease of preparation too while choosing a recipe.  So this recipe was perfect.  The only change I had to do was to use unsweetened applesauce to substitute one egg and add little apple cider vinegar and the cake turned out GREAT.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat oven to 350F for 15 minutes.  Grease a 8 inch square baking dish.  In a small bowl combine the almonds, brown sugar and cinnamon; set aside.  The butter can be melted on stove top or microwave oven or even in the oven while it&#8217;s preheating.</p>
<p><span class="step">2</span> Combine together the flour, sugar, baking powder, salt and baking soda in a large bowl.</p>
<p><span class="step">3</span> Measure the buttermilk in a liquid measuring cup (or any other bowl).  To that add the melted butter, vinegar, extracts and applesauce.  Whisk until well blended.  If you add the butter while its still hot, the mixture will look curdled, but its okay.</p>
<p><span class="step">4</span> Stir the wet ingredients into dry ingredients until just moistened.  Fold in 2/3 cup blueberries.  If using frozen blueberries, do not thaw before adding to batter, because the color will bleed.</p>
<p><span class="step">5</span> Pour the batter into the prepared pan.  Top with remaining blueberries.  Sprinkle the almond mixture on top.  Tap the pan lightly a couple times so that the topped blueberries and almonds sticks to the batter.</p>
<p><span class="step">6</span> Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean.  Cool the pan on a wire rack.</p>
<p><span class="step">7</span> Remove the cake from the pan after 10 minutes and transfer the cake directly to the wire rack.  The cake is quite light, so you will have to be very careful while tilting the pan.  A couple of almonds will fall down.   </p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> I have baked a lot in the past one year but this <strong>blueberry coffee cake</strong> will definitely make it to the Top 5 if I prepare such a list.  I&#8217;m not exaggerating here but it was unbelievably good.  So good that my husband asked for seconds and had it too!  This has never happened before.  I didn&#8217;t have almond extract, I think it would have tasted even better with it.  </p>
<p>This cake doesn&#8217;t rise much, around 1/2-3/4th inch only.  As for the texture, it was very lighty and fluffy, unusual for an egg less cake.  I think the vinegar did the trick.  The sweetness was perfect, the addition of almonds gave a nice crunch to the cake.  The only thing to look for while baking this cake is that it&#8217;s very light and has to be handled very carefully while removing from the pan.     </p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> The original recipe had mentioned 2/3 cup buttermilk, which is what I did for the first batch and as I have mentioned earlier, the cake was so fluffy that I felt that it would fall apart while removing from the pan.  I had to be very careful.  So while preparing the next batch (yes we liked it so much that I baked it again the next day to share it with my new friends here) I reduced the quantity of buttermilk to 1/2 cup and this time it was quite manageable.</p>
<p>The cake is very light (just like a cake with eggs) when kept at room temperature.  It hardens up a little when stored in the refrigerator.  So I was thinking that the next time I bake it, I would cool it in the fridge itself, so that removing it from the pan will be easy.</p>
<p><span class="step">2</span> If you leave the cake in the pan itself for much longer time, the bottom of the cake will become soggy from the heat and the condensation.  It happened to my first batch and I had to blot it with paper towel.  </p>
<p><span class="step">3</span> I think this recipe without the blueberries would make a perfect eggless white cake.      </p>

<p>This pudding cake recipe is originally low in fat (oil free and butter free).  If it had been any other day I would have substituted the all purpose flour with whole wheat pastry flour and made it vegan by using soy milk instead of dairy milk.  I didn&#8217;t do either because I was (or we were) baking it for my husband and didn&#8217;t want to mess it up.  He doesn&#8217;t like soy milk sometimes and I really can&#8217;t predict it when!  Also it was suggested that the cake had to be served warm and from my prior experiences with whole wheat flour I know that it does not taste good immediately after baking.  So I went with all purpose flour.  Even after putting so much thought into this cake it sort of flopped but continue to read further to know how I gave it a tasty makeover.  Yes, yes I know what you all are thinking, showing off my (kitchen) disaster management skills! </p>

<p><span class="step">2</span> In a large bowl, combine together the flour, granulated sugar, 1/3 cup cocoa and baking powder.</p>
<p><span class="step">3</span> Stir in milk and applesauce to the dry ingredients until just moistened.</p>
<p><span class="step">4</span> Fold in the cherries and nuts.  The cake batter is very thick at this stage.  </p>
<p><span class="step">5</span> Spoon into the greased pan.  </p>
<p><span class="step">6</span> Mix the brown sugar, hot water and 1/4 cup cocoa in the same large bowl, until smooth; pour over batter.</p>
<p><span class="step">7</span> Bake for 35-40 minutes or until set (cake will have a pudding like texture).  Serve warm or at room temperature.</p>

<p>As the name suggests, this is a <strong>pudding cake</strong>. There is pudding in the bottom and cake on top.  Frankly the three of us did not like it.  The chocolate cake alone was very good, especially for a fat free one it was quite tasty, but we did not like the combination of pudding and a cake.  First you bite into a firm cake then follows this ooey gooey pudding.  To be more specific, it&#8217;s kozha kozha (non Tamilians please excuse me. I had to use this word to be very clear at least for Tamilians.)  So if you have already tasted a pudding cake and like it you can go ahead and try this low fat version.</p>
<p>But what did we do with such a big cake, when we didn&#8217;t like it?  That&#8217;s when a light bulb flashed and I put the cake (of course with the pan) in the freezer.  I thought that it would taste like an ice cream cake and I was right.  Yay!  Freeze it for a couple of hours and remove it from the freezer and leave it on the kitchen counter for 15-25 minutes before serving, so that the pudding layer would soften up a little bit making it easy to eat (but not ooey gooey at all).  Then cut them into slices and enjoy. Refreeze the rest of the cake.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> I reduced the quantity of sugar by 1/2 cup and we felt that the sweetness was just right enough.  If you have been following my recipes you know by now that we don&#8217;t eat very sweet baked stuff.  So if you like it sweeter go with the original recipe by adding another 1/4 of white sugar and 1/4 of dark brown sugar.</p>
<p><span class="step">2</span> While using a glass baking pan it is suggested to reduce the oven temperature by 25F or to bake 5-10 minutes less than the specified time.  I have used a glass baking pan and so baked the cake at 325F.  If you are using any other pan set the oven at 350F.</p>
<p><span class="step">3</span> While reading the recipe I was not sure if the quantity of baking powder (3 tablespoons) was correct.  I proceeded anyhow and was relieved that the cake did not have the after taste of baking powder.</p>
<p><span class="step">4</span> Measure the 3 cups of boiling water in a liquid measuring mug.  While pouring it over the cake batter it may look like that it&#8217;s a lot, but don&#8217;t worry the cake will turn out fine.</p>

They specialize in allergen free food products like granola, snack bars, bagels, cookies, chocolate chips and chocolate bars to name a few.  Their product contains no wheat, dairy, peanuts, tree nuts, egg, soy, fish or shellfish (the 8 common allergens).</p>

<p>The product under review is their nut and gluten free granola; 1) Very Berry Crunch, 2) Cranapple Crunch and 3) Cinnamon Crunch.  The pack claims that the granola is made in a dedicated nut and gluten free bakery.  I also see that it is certified gluten free and vegan.</p>

<p>Reading the nutrition label and ingredients list, I gather that it is low in fat, has no saturated and trans fat, has less sugar (Refined white sugar is not used.  Instead brown rice syrup, evaporated cane juice and honey is used.  Also the dried fruits lend its natural sweetness to the granola).  The main ingredient is brown rice flakes.  Each serving also contains 17-18gm whole grain.  The serving size listed is 1/2 cup (52g).  I compared a couple of other granola products in the market and found that 1/4 cup serving has as much calories, carbohydrates, sugar and much more fat than 1/2 cup serving of Enjoy Life Foods&#8217; granola.  So I&#8217;m pretty sure this one is healthy as well.  I think all three have 3 WW POINTS value per 1/2 cup serving.  (I calculated it myself from the Weight Watchers&#8217; guide, not listed in the pack).</p>
<p>Now coming to the important factor, TASTE!  How did it fare?  Like many others, I&#8217;m also a proud mother of a very picky eater.  So I thought, who is better than my son to test it!  He is a kind of a guy who loves the presentation more than the actual stuff.  If I bake a cookie or a bar he does not eat it, but if it comes in a colorful wrapper he loves it.  So he was very excited to see the colorful packs of granola.  He wanted to try little of each the same day. First he tried the green color pack (Cranapple Crunch).  He continued eating after the first bite, which means it&#8217;s a winner!  He also mentioned that he liked it. He wanted to taste the red color pack (Very Berry Crunch) next.  That was a winner too and so was the violet color pack (Cinnamon Crunch). Now I cannot come to a conclusion based on one day because he usually does not like it the next day.  So over the week I gave him (and he asked too) a couple of times and ate it without any complaints.  Now I can really declare that it&#8217;s a winner!</p>
<p>As for me, I liked the Cranapple Crunch and Very Berry Crunch than Cinnamon Crunch because I&#8217;m not a cinnamon fan.  All three were not very sweet unlike the regular granola.  It was perfect for me.  I was surprised to see that 1/2 cup serving had about 9-11 gms sugar because it did not feel sweet at all.  I have tasted the Multi-grain Rice Krispies which has only 7gm sugar and it&#8217;s too sweet.</p>
<p>Cranapple Crunch is sweet and sour.  The tartness of dried cranberries balances the sweetness of the apple.  Very Berry Crunch contains small pieces of raspberries and strawberries.  It&#8217;s mildly sweet and not as sour as the cranapple.  The Cinnamon Crunch has raisins too.</p>
<p>Since I had 3 packs of granola, I wanted to bake something with it.  I searched the net for recipes using granola and decided to bake these <strong><a href="http://www.recipelink.com/cgi/msgbrd/msg_script.pl?printer=1&#038;board=31&#038;thread=40224" target="_newwin">granola muffins</a></strong>.  I have made some changes to the original recipe.  <em>Note that these muffins are not nut free and gluten free.</em>  It&#8217;s egg free though!  I used the Cinnamon Crunch granola for these muffins.  The original recipe had ground cinnamon, I have omitted that.</p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat oven to 400F.  Grease the muffin tin or line it with paper liner.  If using a paper liner, after lining grease the liner by spraying with a non stick spray so the muffins will come out of the paper easily.</p>
<p><span class="step">2</span> Combine the dry ingredients together in a big bowl.  From granola to baking soda.</p>
<p><span class="step">3</span> In another medium size bowl, whisk together the applesauce, milk, brown sugar, oil and yogurt.</p>
<p><span class="step">4</span> Add the wet ingredients to the flour mixture and mix until just combined.</p>
<p><span class="step">5</span> Divide evenly into prepared muffin tin, approximately 3 tablespoons of batter per muffin or 3/4th of the tin.  Sprinkle little granola/oats on top.</p>
<p><span class="step">6</span> Bake 18-20 minutes or until toothpick inserted in center comes out clean.  I baked mine for about 26 minutes.  Always set the timer for the minimum time mentioned in the recipe, test for doneness and if it&#8217;s not done, increase the time for 2-3 minutes at a time.  (Check My Notes, point  5)</p>
<p><span class="step">7</span> Let cool slightly in the tin and then remove to a cooling rack.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> I have to say that I did not like the muffins immediately (unlike my son), but started liking it from the next day.  These granola muffins don&#8217;t have a fluffy texture but feel more like a dense cake.  Also they are not overly sweet, in fact the sweetness is very mild, which is perfect for me.  The mini chocolate chips and the raisins which you bite on here and there give the right balance.  Also they did not taste cinnamony (I know it&#8217;s not a word, but you get it right!)</p>
<p>Will I be baking it again? Definitely.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> I measured the applesauce using a dry measuring cup, not the liquid measuring mug. </p>
<p><span class="step">2</span> If you prefer sweet muffins, either use sweetened applesauce or increase the quantity of brown sugar to 1/2 cup.</p>
<p><span class="step">3</span> The original recipe did not use oat flour, I used it because I had it.  So if you don&#8217;t have oat flour just use 1 cup of all purpose flour or in a food processor finely powder quick cooking oats.</p>
<p><span class="step">4</span> Walnuts and semi sweet chocolate chips were not mentioned in the recipe.  I added it to lure my son to eat something healthy and it worked! The chocolate chips also gave the sweetness.  Always try using mini chocolate chips because you can cut down on calories, sugar and fat.  In place of using 1 cup of chocolate chips, you can use just 1/2 cup of the mini without affecting the taste.</p>
<p><span class="step">5</span> I had some flavored yogurt (which we did not like by itself) so I used it instead of eggs.  I used peach flavored yogurt.  Also while using yogurt to replace eggs, instead of measuring exactly 1/4 cup of yogurt, use 3 tablespoons of yogurt and 1 tablespoon of water or any liquid.  For this recipe I emptied directly two small containers of yogurt and while mixing felt that the muffin batter was very thick and then I had to add extra water, which made it very watery.  I think this is the reason I had to bake it for around 26 minutes.  So while using yogurt measure 3 tablespoons of yogurt and 1 tablespoon of water in a cup, whisk it well and then mix it to the other ingredients or simply use buttermilk.</p>
