<p><span title="R" class="cap"><span>R</span></span>ecently I borrowed &#8220;The 250 Best Muffin Recipes&#8221; by Esther Brod from the local library.  I don&#8217;t know if they are the best muffin recipes unless I try each recipe but the variety is really very good though.  Actually it has bonus 250 recipes, so totally 500 muffin recipes in one book, with a lot of healthy recipes too.  I was amazed by the collection of recipes using oatmeal, oat bran, wheat bran, whole wheat flour and wheat germ.  It should easily reach at least 100-150 recipes.  Especially there are a lot of oatmeal and <strong>oat bran muffins</strong> recipes.  Since this month&#8217;s Whole Grain Baking theme is Oats, I decided to proceed with the Apple Walnut Oat Bran Muffins.  (Please note that Oat bran alone is not whole grain, but for this event I&#8217;m accepting recipes with oat bran also).  I had some bland pears in the fridge and nobody was willing to eat it so decided to use it instead of apple (more about this in the Taste and My Notes section).  I have also used apple cider vinegar instead of the egg whites mentioned in the original recipe. </p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span><span class="step">1</span> Preheat oven to 400F/200C.  Grease a muffin tin or use paper liners.</p>
<p><span class="step">2</span> In a large bowl combine together all the dry ingredients (from whole wheat flour to grated pear).</p>
<p><span class="step">3</span> In a measuring mug, measure the buttermilk.  Add 1/4 cup water, vinegar, vanilla extract and oil. Whisk together.  Dissolve the brown sugar in this liquid mixture and blend it well with a fork.</p>
<p><span class="step">4</span> Add the wet ingredients to the dry ingredients, stirring just until moistened.  Do not over mix.</p>
<p><span class="step">5</span> Fill the batter in each muffin cup to the top.  Sprinkle a teaspoon of oatmeal on each cup.</p>
<p><span class="step">6</span> Bake for 20 minutes or until a toothpick inserted in the middle of the muffin comes out clean.  Mine was done in 16 minutes.</p>
<p><span class="step">7</span> Leave it in the pan for 10-15 minutes.  Then transfer it to a cooling rack.</p>

<span class='postTabs_titles'><b><strong>Taste</strong></b></span> I couldn&#8217;t wait for more than an hour to taste the muffins.  I was expecting some sort of raw taste/smell from the whole wheat pastry flour and the oat bran.  Surprise! it didn&#8217;t taste weird at all.  In fact the muffins had a very good texture.  The only thing missing was sweetness.  It was very mild.  I used a pear which was not sweet by itself, maybe that was the reason.  But we liked it because we generally don&#8217;t eat very sweet stuff and my husband told me that these were the best muffins I have ever baked.  My son who has a sweet tooth enjoyed these <strong>oat bran muffins</strong> very much.</p>
<p>These muffins were very filling too.  Unlike the empty calories-sugary muffins, I did not feel like reaching for another one.  So these muffins don&#8217;t disappear fast and I stored it in the fridge.  It becomes little hard if stored in the fridge.  So heat it in the microwave oven for 30-35 seconds before eating it and it&#8217;s moist again like freshly baked.  </p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span><span class="step">1</span> Taste the fruit you are going to use, whether it is apple or pear. The pear I used was very bland, that&#8217;s why I wanted to use it up because no one wanted to eat it.  I should have anticipated that the muffins will also not be sweet enough.  So add another 1/4 cup of sugar if the fruit you are using is not sweet.</p>
<p><span class="step">2</span> The original recipe used 1 cup of all purpose flour and 1 cup of whole wheat flour.  So if you don&#8217;t have whole wheat pastry flour go with this blend. </p>
<p><span class="step">3</span> If you are a cinnamon fan use 1 teaspoon of ground cinnamon and omit the vanilla extract (as per the original recipe).</p>
<p><span class="step">4</span> The recipe clearly asked to fill the batter to the top of the cup.  I was not sure about this because usually muffin recipes mention 2/3rds full.  I thought that it would overflow while baking and the muffins will get stuck to each other.  Except for 4 muffins I did not fill it to the top.  So I got 12 regular size muffins and had some batter left which was enough for 6 mini muffins.  The 4 muffins which I had filled to the top rose beautifully and it did not stick to the other muffins.  So if you fill the entire cup there should not be any batter left and the given measurement should yield exactly 12 regular size muffins.</p>
<p>If baking as mini muffins 8-10 minutes should be enough.  I baked mine for 10 minutes and it was already very dark in the bottom.<br />

<p><span title="H" class="cap"><span>H</span></span>i friends, I&#8217;m back.  Actually I came back from India in the last week of August itself, but did not feel like blogging all these days.  The trip was mostly good except when my son fell very sick when swine flu was at peak there.  Thankfully it was regular flu and he is fine now.  I thought of meeting all the food bloggers in Chennai but couldn&#8217;t organize it with an hectic schedule.  Hope to make it at least the next time.<span id="more-1650"></span></p>
<p>On a different note, ladies, do you think that your husband is not appreciative of your efforts you put in the home front? Doesn&#8217;t he help you around the house?  Then pack your bags immediately and fly to India (or anywhere) and stay there at least for a month and see (enjoy) the respect you get when you come back!  Even the simplest thing you do will be noticed by your better half.  I&#8217;m loving it!</p>
<p>I didn&#8217;t bake much in the past 2 weeks but for the <strong><a href="http://www.egglesscooking.com/2009/02/16/whacky-vegan-chocolate-cake/">vegan chocolate cake</a></strong> for my mother-in-law&#8217;s birthday (she came with us) and Shilpa&#8217;s <strong><a href="http://www.aayisrecipes.com/2006/05/27/date-cake-eggless/" target=" _blank">eggless date cake</a></strong>.  The date cake has been in my to-bake list for quite sometime now.  Somehow I didn&#8217;t get a chance to bake it until recently.  We got a big pack of (Lion brand) seedless dates from India and I wanted to use it up.  My son also has started going to school full time and I have to pack lunch for him.  He usually eats some fruit or some healthy sweet after his lunch and dinner.  So I decided to bake this cake.</p>
<p>This <strong>date cake</strong> has got raving reviews and I have also tasted it myself when my friend Lakshmi baked it for me as muffins.  I followed the <strong><a href="http://www.aayisrecipes.com/2006/05/27/date-cake-eggless/" target=" _blank">original recipe</a></strong> mostly but made some changes:</p>
<p><span class="step">1</span> I wanted to try a vegan version because I was having some unsweetened soy milk at home.  Sometimes soy milk (some brands) can leave an after taste.  So I also added 1 teaspoon of vanilla extract which was not mentioned in the original recipe.  You can also try flavoring it with cardamom powder.  </p>
<p><span class="step">2</span> We had kept the dates in the refrigerator and it was very hard.  So I soaked it in 3/4th cup warm soy milk.  I left it soaked for nearly 15-16 hours.  Maybe that much soaking is not required but I didn&#8217;t find time to bake it earlier.  I blended it in my food processor with the required amount of sugar and while doing so felt that some more liquid might be necessary.  So added another 1/4 cup of soy milk (this is not mentioned in the original recipe).  </p>
<p><span class="step">3</span> 1/2 cup of oil is mentioned in the original recipe.  Shilpa also mentions that she has tried baking the cake without oil and it turned out good as well, dense though.  So I used 1/4 cup vegetable oil and 1/4 cup unsweetened apple sauce.  Measured the oil in liquid measuring mug and the applesauce in dry measuring cup.</p>
<p>The quantity of sugar mentioned is 3/4 cup but I scooped out 2 tablespoons of sugar after measuring.</p>
<p><span class="step">4</span> Another change I made was adding 1/4 cup of chopped walnuts instead of just a tablespoon. </p>
<p><span class="step">5</span> After incorporating the flour to the wet ingredients I felt that some more liquid can be added so I used 1 tablespoon water.</p>
<p><span class="step">6</span> I did not want to frost the cake so I was thinking of something to make the cake look good and the idea of using blanched almonds clicked.  So I decided to bake it in an 8-inch square pan and use 16 almonds (4 rows and 4 columns) to decorate the cake, so that I can cut the cake into 16 pieces and each piece will be adorned by one almond.  The idea worked and the cake looked very good and was easy to pack as well.</p>

<p><span class="step">7</span> My cake was done around the 32nd minute itself.  The smell lets you know and you can also see the cake pulling from the sides of the pan.  Move the pan to a wire cooling rack.  Left it like that for an hour.  Tried removing it from the pan later but couldn&#8217;t.  So I stored it in the fridge overnight and it came out without any difficulty in the<br />
morning.</p>
<p>The cake tasted very good.  I&#8217;m sure that I&#8217;m going to bake this <strong>date cake</strong> quite often.  It&#8217;s a hit with everybody in my family and my mother-in-law has already asked me to bake this for her when she leaves to India. </p>

<div class="noPrint"><span title="M" class="cap"><span>M</span></span>y son turned 3 yesterday.  For his birthday I wanted to bake an eggless layered cake with frosting and all.  Earlier I have baked an <strong><a href="http://www.egglesscooking.com/2008/03/19/carrot-cake/">eggless carrot cake</a></strong> and also a chocolate cake using soy milk.  This eggless chocolate cake was way before I started the blog and for some reason I did not save the recipe.  It had a soy milk ganache for the frosting and it also came out very well.  I wish I had saved the recipe.</div>

<div class="noPrint">I wanted to bake a chocolate layered cake, because he loves it and was going through various resources to find a good eggless recipe.  Earlier this month I had bought the EnerG, egg replacer from the grocery store.  I thought that I would buy a ready made cake mix from the store and use the egg replacer instead of the eggs and bake the cake.  Then only I found that EnerG does not give desired results with store bought mixes.  So I dropped that idea.  I have read in so many books/sites that tofu is a very good egg substitute in baked goods. I also had silken tofu sitting in the refrigerator and decided to use it for baking the cake.  </p>
<p>Some of the chocolate cake recipes I was looking for had a minimum of 3 eggs. Then I found a chocolate cake recipe which required only 2 eggs, in my &#8220;Baking for Dummies&#8221; book.  So I decided to proceed with that recipe and use pureed tofu instead of eggs.  The rule is adding 1/4 cup of tofu per egg to be replaced.</p>
<p>Even though I proceeded with the recipe, I was skeptical about the taste and texture until I cut the cake on Sunday and tasted it. I baked the cake on Saturday and let it cool off until Sunday afternoon and then frosted it.  I was anxious than my son to taste the cake.  We were also talking about running to the grocery store on Sunday evening to buy a readymade cake, if this one flops.  </p>
<p>But I need not have worried so much after all!  The cake turned out so moist and together with the icing it was no different than the usual cakes.  We did not taste/smell the tofu at all.  More than anything I was so happy that my son liked the cake very much.</p></div>

<div class="ingredients">Hot Milk/Hot Water &#8211; 1/4 cup (heat it in the microwave oven for 15 seconds)</div>
<div class="ingredients">Butter, at room temperature &#8211; 1/3 cup (which is 5 tablespoons + 1 teaspoon)</div>
<div class="ingredients">Vanilla Extract &#8211; 1/4 teaspoon</div>
<div class="ingredients">Baking Soda &#8211; a pinch</div>
<p>Yield:  <strong>One 9-inch layer cake or 8-inch layer cake and 6 cupcakes</strong><br />

<p>1.  Preheat the oven to 325F (160C).<br />
2.  Grease and flour (I used cocoa powder to flour the base of the pan because it&#8217;s a chocolate cake) two 9-inch cake pans.<br />
3.  Sift together the flour, salt, baking powder, baking soda, cocoa and sugar into a large mixing bowl.<br />
4.  Make a well.  Add the canola oil.  Then the hot coffee decoction.</p>

5.  Add milk.<br />
6.  Add the pureed tofu.  (Remove the silken tofu from the packet using a spoon add it to the blender and puree it to a creamy mixture)<br />
7.  And a couple of drops of vanilla essence.

8. With an electric mixer, beat at medium speed for 2-3 minutes. (At first I did not use the hand mixer to combine the batter, because I remembered reading somewhere that while using egg substitutes, in this case tofu, beating the batter is not recommended and was so worried to see such a diluted batter and it was also having a lot of small lumps.  So anyhow I decided to use my hand mixer to get rid of the lumps, but still the batter was considerably thin).</p>
<p>9. Pour the batter evenly into both 9-inch cake pans.  (or fill the 6 muffin cups halfway with batter and divide the remaining batter between both 8-inch pans).

10. Bake for 25 to 30 minutes, until a wooden tooth pick inserted into the center of the cake comes out clean. (Check the cupcakes after 15 minutes).  I  placed 1 pan in the middle shelf and the another in the bottom shelf and set the timer for 25 minutes and switched the pans around 12 minutes.  Switching the pan means moving the pan from the middle shelf to the bottom and the bottom shelf pan to the top.  This is done to ensure even baking of both the cakes.  One of my make was done exactly at 25 minutes and the other one took 30 minutes.</p>
<p>11. Let the cakes cool completely before removing them from the pans.  The time mentioned in the original recipe was 15 minutes and so I tried to transfer the cake to a wire rack after 20 minutes and it was little messy.  So I left the other cake in the pan itself for quite some time.  Maybe after an hour I touched the bottom of that pan and found that it had cooled completely and so transferred it to the wire rack.</p>
<p>12. The cake should cool completely on the wire rack before frosting.  I baked the cakes on Saturday and frosted them on Sunday.  I left it out on the kitchen counter and covered it with a bamboo basket.  You could also refrigerate the cake to cool it off.

<p>1.  Sift the mix.<br />
2.  Add the butter, hot milk, vanilla and baking soda.  (I read in the same book that adding a pinch of baking soda to icings prevents hardening and cracking so icing stays moist)<br />
3.  Beat the mix using a hand mixer at medium-high speed.  Add few drops of water/milk if required.</p>
<p><strong>Frosting the Cake:</strong><br />
This was my first experience with frosting a cake, so I simply followed the steps listed in the book.<br />
1.  First I placed the bottom layer upside down, so the rounded side (top of the cake will be on the serving plate).  If you have dome top on the cake, even it out by slicing it with a serrated knife and then place it upside-down.<br />
2.  Spread about 1/2 cup to 3/4 cup of frosting on top of the bottom layer.  Don&#8217;t use hard strokes, but spread it gently using an offset metal spatula or plastic spatula.<br />
3.  Now place the second layer on the first, cut or domed side up.<br />
4.  Frost the sides of the cake first with another 1/2 cup of frosting.<br />
5.  Finally frost the top of the second layer.</p>

It was slightly difficult for me, but somehow I managed to frost the entire cake.  Before and while frosting the cake I was not sure about the consistency of the frosting.  Later after seeing quite a few cake pictures I realised that my frosting was definitely thick and that&#8217;s why was I having hard time spreading it.  I should have added a few more drops of water to thin it and frosting would have been a breeze.

<p>As you all know the options are endless.  Being a rookie that I am, and because my son loves M&#038;M&#8217;s I used them to line the cake. <span class='postTabs_titles'><b><strong>My Notes</strong></b></span> As a whole the cake was excellent.  But considering healthy eating I would modify the recipe a little bit the next time.  Like reducing the quantity of sugar in the cake recipe from 2 cups to 1.5 cups.  Since the frosting is also sweet enough, we don&#8217;t need that much sugar in the cake too.  Next reducing the quantity of oil too.  Instead of 1 cup of oil, 1/2 cup can be replaced with unsweetened applesauce.  </p>

<p><strong><a href="http://jugalbandi.info/2008/04/baked-plantain-chips-with-coconut-curry-leaves-and-confessions/" target="_blank"><span title="J" class="cap"><span>J</span></span> and B&#8217;s Baked Plantain Chips</a></strong> has become yet another favorite in our house.  This is the 2nd time I&#8217;m making it.  Before knowing this recipe I used to find plantains everywhere but I never used to buy it because I did not not know what to do with it.  Then one day I found this recipe and believe me or not I couldn&#8217;t find plantains anywhere.  I did not take pictures the first time I made it, because my husband was snacking it away and actually we did not have anything left to be taken with rice.  This time I managed to take a picture before we could gobble them up.  <span id="more-178"></span></p>

<span class='postTabs_titles'><b><strong>My Variation</strong></b></span>1.  I used 3 medium size plantains.  Peeled it and sliced it thin using a mandolin. <br />
2.  In a bowl I added coconut oil, little vegetable oil, red chili powder and salt.  Whisked it using a fork.  Added the plantain slices and tossed them to coat it with the oil and spices.<br />
3.  Greased a baking sheet using a non stick spray and then spread the slices on it and baked it for 20-25 minutes, turning once. </p>
<p>Now the chips is ready!  It&#8217;s a healthy indulgence because it is not deep fried in coconut oil like the traditional plantain chips.<br />

Bananas definitely give the moist texture for cakes and breads, but the drawback is the flavor of bananas is dominant in those baked goods. So whatever changes you make otherwise in the recipe, the end product tastes the same. For example my <strong><a href="http://www.egglesscooking.com/2008/03/19/carrot-cake/" target="_self">carrot cake</a></strong> and <strong><a href="http://www.egglesscooking.com/2008/04/28/eggless-chocolate-chip-zucchini-bread/" target="_self">zucchini bread</a></strong> tasted similar. It was definitely very good, but we need some change right!</p>

<div class="noPrint">So I was searching in the net for egg substitutes and found <strong><a href="http://www.theppk.com/veganbaking.html" target="_blank">this</a></strong> and <strong><a href="http://jugalbandi.info/2007/09/egg-substitutes/" target="_blank">this</a></strong> very informative. I decided to start experimenting with the various egg replacements and this is my first one using flax seed meal. I add flax seed meal in my cereal (both cold and hot), salads and even in the chapathi flour. Being vegetarians walnuts and ground flax seed are the only sources of Omega 3 fatty acids.</div>

<p>5. In a small cup add the flax seed meal and slowly add the water and whisk it with a fork and add it to the brownie mix.<br />
6. I chose to add vanilla extract also.<br />
7. Stir everything until well blended (about 40-50 strokes)</p>

<p>8. Now add the nuts and combine it once again.<br />
9. Generously grease the brownie pan. I used a non stick 8&#8243;x8&#8243; pan.<br />
10. Spread the mixture in the pan.</p>

<p>11. Bake it anywhere between 30-38 minutes. (Check the instructions in the package for detailed baking time). I baked mine for 40 minutes. But I think I should have taken it around 38 minutes itself, because I had little cracks on the top. That was the only negative thing with these brownies, otherwise they were unbelievably moist and gooey. We did not taste the flax seed at all. Just be sure that the brownie cools out completely before you can cut into squares.</p>

1. <strong>Buying the brownie mix</strong> &#8211; If you are a vegetarian, be sure to check the ingredients, because some brands contain lard, tallow (animal fat). The brand I chose did not have animal fat.</p>
<p>2. I bought the double fudge brownies, which had a chocolate syrup pack, which had to be added to the brownie batter. But I omitted it because this was the first time I was going to bake brownies and that too without eggs. So I did not want to experiment too much.</p>
<p>3. <strong>Egg substitute:</strong> I came across in many books and websites that ground flax seed is a good substitute for eggs while baking. But the ratio of flax seed meal to water was different in each and every place. I recently bought a vegan cook book and there were a lot of baking recipes using flax seed meal. So I decided to used the proportion given in that book. For every egg in a recipe, use 1 teaspoon of flax seed meal mixed with 1/4 cup of water.</p>
<p>4. <strong>Checking the doneness of brownies:</strong> I read in the same book that inserting a toothpick to check the doneness does not work for brownies. Instead &#8220;the touch test&#8221; was recommended. When you touch the top of the brownies, it should not leave an indentation. If it does, the batter is still soft, so you need to bake it for another couple of minutes.<br />

<p><span title="I" class="cap"><span>I</span></span> was searching for zucchini recipes and found this one in Food Network&#8217;s site.  It&#8217;s by Paula Deen.  The <strong><a title="Chocolate Chip Zucchini Bread" href="http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_138913,00.html" target="_blank">original recipe</a></strong> yields 2 loaves, so I scaled down the ingredients to 50% to bake 1 loaf and used bananas to make it eggless.  <span id="more-54"></span></p>
<p><strong><span style="text-decoration: underline;">Ingredients: </span></strong></p>
<p><strong><em>(PART 1)</em></strong><br />
All Purpose Flour 1.5 cups<br />
Baking Powder 1/4 tspn<br />
Baking Soda 1/2 tspn<br />
Cinnamon 1/4 tspn ( I used even little because I&#8217;m not a big fan of cinnamon)<br />
Salt 1/2 tspn</p>
<p><strong><em>(PART 2)</em></strong><br />
Zucchini peeled and grated, 1 cup (I used 1 medium zucchini, the gratings measured nearly 1.5 cups)<br />
Semi Sweet Chocolate Chips 1/2 cup (I used mini chocolate chips)<br />
Pecans 1/2 cup, chopped</p>

<p><strong><em>(PART 3)</em></strong><br />
Vegetable Oil 1/2 cup<br />
Granulated Sugar 3/4 cup<br />
Bananas 2 medium size, mashed<br />
Vanilla essence 1 tspn</p>
<p><strong><span style="text-decoration: underline;">Procedure:</span></strong><br />
1. Pre-heat the oven at 350 F.<br />
2. Combine ingredients in Part 1 and sieve them.<br />
3. To this add the ingredients in Part 2.<br />
4. Combine ingredients in Part 3 in a blender/or cream it using an electric hand mixer.  I used my magic bullet blender to blend it.  Add this mixture to the above dry ingredients and mix it well.  You may add a little milk, if you feel that the mixture requires some more liquid.  I had to add a couple of tablespoons of milk because I increased the quantity of zucchini.<br />
5. Pour it in a greased bread loaf pan.</p>

<p>6. Bake it at 350F for 50 min or until a skewer inserted in the middle of the loaf comes out clean.<br />
7. Cool the bread in the pan for 30 minutes before transferring it to a wire rack.  Wait for another 30-45 minutes before slicing the bread.</p>

<p><strong><span style="text-decoration: underline;">My Notes:</span></strong><br />
1. This is similar to the <strong><a title="Eggless carrot cake" href="http://www.egglesscooking.com/2008/03/19/carrot-cake/" target="_self">carrot cake</a></strong> recipe, but uses zucchini and chocolate chips instead.  Next time I will add both carrots and zucchinis.</p>
<p>2. I feel that the Magic Bullet Blender is very versatile.  I bought it 2 years back to puree steamed vegetables and fruits in small quantities for my infant son.  But it does a lot more.  The recipe booklet which comes along with the blender is also very useful.  I have made muffins and soups as mentioned in the recipe book and it has come out very well also.  Even in the above recipe I add all the ingredients in Part 3 in the blender&#8217;s big jar and gave it a few pulses and it&#8217;s ready within few minutes.  I find it more easy than using an electric hand mixer.</p>
<p>3.  Use Vegan chocolate chips/carob chips to make this bread100% vegan.</p>
