<p><span title="L" class="cap"><span>L</span></span>ast week I tried Pongal with brown rice and it came out very well, which made me think why not <strong>bisi bele bath</strong> with brown rice?  Earlier I was very hesitant about using brown rice,  wondering if we would like the taste or not.  To my surprise both of us like it very much.  I think this is one of the few things we both agree upon!  Brown rice when cooked has a rubbery (is it even a word?) texture.  Or simply it is not as soft as its white counterpart.  You feel very full after eating a cup of rice, as against wanting more after eating white rice.  I made zucchini raitha to go with the <strong>bisi bele bath</strong>. <div class="jkprocedure">Procedure</div>
<p><span class="step">1</span> Wash the brown rice and toor daal and soak it together (also add turmeric powder) in warm water for at least 30 minutes (the longer the better). Soaking the brown rice in warm water activates more enzymes, which makes it possible to obtain a more complete amino acid profile.  For 1 cup of rice and daal use 2 and 1/2 cups of water, so I used 3 and 1/4 cups of water.  I did the soaking straightaway in a pressure cooker.  After soaking, leave it for 5 whistles and transfer the cooker from the stove if cooking on an electric range, because the heat from the coil will continue the cooking process and you will end up scraping burnt rice from the bottom of the pressure cooker.</p>
<p><span class="step">2</span> Meanwhile prepare the masala powder, while the rice is cooking.  In a small frying pan add ghee, once it heats, fry (until golden brown) one by one the ingredients mentioned in the list.  Once it cools, powder it in a blender/spice grinder.  </p>
<p><span class="step">3</span> In a medium size pan add the 1/2 tablespoon of oil, once it heats add the mustard seeds, curry leaves (if using) and hing.  Then fry the sliced onions.  Add a pinch of salt, so that the onion cooks faster.  Then add the vegetables and required amount of salt and let it cook for 5 minutes.  Once it is half cooked add the tamarind paste and 1 and 1/2 cups of water and close the pan with the lid.  Let it cook until the raw smell of tamarind leaves.  Then add the masala powder and let it simmer for another 2 minutes.</p>
<p>Alternatively you can do the entire step in a pressure cooker easily.  That&#8217;s how I do it.  I have a small pressure cooker.  So as usual I do the tempering, fry the onions.  Then I simply add the vegetables, salt, tamarind and water and close the cooker&#8217;s lid and leave it for only 1 whistle.  If you are using an electric range be sure to transfer the cooker from the stove after turning off the stove, because the heat from the coil continues the cooking process and you would end up having mushy vegetables. After opening the lid, add the masala powder and let it simmer for 2 minutes.</p>
<p><span class="step">4</span> Then add the cooked rice and daal mixture to the vegetables gravy and mix it well.  If you like you can add the 1/2 tablespoon of ghee or sesame oil now.  If the rice looks a bit watery, don&#8217;t worry, it will thicken up.  You can keep it on low heat for sometime and it will thicken up.  On the other hand if it&#8217;s very thick add some warm water to loosen it.  It&#8217;s very forgiving, so don&#8217;t worry.  </p>

<p><span class="step">1</span> Wash the zucchini and grate it with the skin and place it in a bowl.  Add the required amount of salt.</p>
<p><span class="step">2</span> In a small frying pan heat the oil, add the mustard seeds.  Once it splutters add the sliced green chillies, hing and fry it.</p>
<p><span class="step">3</span> Add this to the zucchini and mix it well.</p>
<p><span class="step">4</span> Mix the yogurt to the zucchini when ready to serve.</p>

<span class='postTabs_titles'><b><strong>My Notes</strong></b></span> <span class="step">1</span> If you don&#8217;t have the time to prepare the <strong>bisi bele bath</strong> masala powder you can buy it.  I&#8217;ve tried MTR brand and it&#8217;s good too.</p>
<p><span class="step">2</span> You could also buy the frozen Avial vegetables available in Indian grocery stores and save time chopping vegetables.</p>
<p><span class="step">3</span> I have pressure cookers in all size so I used one for cooking the vegetables and one for cooking rice/daal.  You can also cook both in any vessel on stove top, but as far as I&#8217;ve read brown rice takes more time to cook like that.</p>
<p><span class="step">4</span> We don&#8217;t eat spicy food, so I used only 2 red chillies for the masala powder.  The heat was very mild.  If you prefer it more spicy use about 4-5 chillies.</p>

<p><span title="F" class="cap"><span>F</span></span>or long time now, I have wanted to prepare vegetarian burgers, or rather it was my husband&#8217;s long pending request and I finally made it yesterday from Jai and Bee&#8217;s blog.  Their <a href="http://jugalbandi.info/2007/07/spicy-kidney-bean-burgers/" target="_newwin">Spicy Kidney Bean Burgers</a> is a fantastic recipe.  I was able to prepare it for dinner in no time.  <span id="more-577"></span></p>
<p>I used canned and drained kidney beans (2 cans, 15.5 oz each).  It was also the &#8220;No Salt Added&#8221; store brand canned beans, this allowed me to control the sodium content in the burgers.</p>
<p><img alt="" src="http://www.egglesscooking.com/images/static/yrr-150.jpg" title="Your Recipe Rocks!" class="alignright" width="150" height="150" />I don&#8217;t have a food processor, so at first I just drained one can and rinsed it well and mixed all the other ingredients listed in the recipe and blended it using my Indian mixer.  And let me tell you, it was little tricky to get the right consistency.  Initially it did not grind at all and once I added a little water it became very mushy.  I was glad that I reserved the other can.  Now I opened the 2nd can, drained and rinsed it and mashed the beans nicely with a potato masher and mixed the ground mixture to this.  Even then I was not able to make balls out of it.  So instead of adding flour to the mixture as they had mentioned, I added a handful of quick cooking oats and I got the desirable consistency to shape them into burgers.  </p>
<p>I also used curry powder and Maggi&#8217;s tomato chili ketchup to give it a desi taste.  The original recipe mentions to use either ajwain (omam) or cumin, but I strongly suggest to go with ajwain, because I felt that it gave a very good flavor and aroma to the burgers.  I also did not have nutritional yeast, so used roasted chick pea flour (besan) instead.  Also don&#8217;t forget to add the 1/4 cup of chopped almonds, because this gives a nice crunch to the burgers, which you don&#8217;t want to miss.</p>
<p>I used a stove top non stick griddle to cook the burgers.  Sprayed the grill with non stick canola oil spray and placed the burgers on it.  It took around 8 -10 minutes for one side.  Let it cook completely on one side, don&#8217;t be in hurry and bother to turn them immediately, because it will lose it&#8217;s shape.  After 8 minutes or so, slowly flip it over the other side and let it cook for another 7-8 minutes.  For 2 cans of beans I got 8 medium size burgers.</p>
<p>For the buns, I used Arnold&#8217;s Select 100% Whole Wheat Sandwich Thins.  It is a mere 100 calories, with 6gm fiber and 5gm protein and it doesn&#8217;t taste like mulch also <img src='http://www.egglesscooking.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':grin:' class='wp-smiley' /> </p>
<p>We had our burgers on a bed of iceberg lettuce, grilled zucchini with a side of potato/sweet potato fries.  (Ya I know, was trying to reproduce their original menu!)</p>

<p><span title="I" class="cap"><span>I</span></span> was on a short break and am back with an easy recipe for zucchini <strong><a rel="nofollow" href="http://en.wikipedia.org/wiki/Kootu" target="_blank">kootu</a></strong>. I learnt it from my mother-in- law.  Using rice rinsed water, this simple and tasty side dish can be prepared in no time.  I guess this is similar to the Eriseri which is prepared in Kerala, using plain water.  Usually when I use an electric rice cooker I wash the rice and soak it for 30 minutes and then cook it, to get a soft texture.  So whenever I use my electric rice cooker, I make this kootu with the rice soaked water, because I don&#8217;t want to use the regular pressure cooker also just to cook daal for sambar/kootu.  My mother-in-law prepares this kootu with cucumber.  I had only zucchini that day, so I tried it for the first time and it tasted so good.<span id="more-336"></span></p>

<span class='postTabs_titles'><b><strong>Procedure</strong></b></span>1.  Wash the rice like you always do, but instead of pouring it down the sink pour it in a sauce pan and add cubed zucchinis, tumeric powder and close the lid.  When it is half cooked add the required amount of salt and let it cook for another couple of minutes.  It should not become very mushy.</p>
<p>2.  Meanwhile grind all the ingredients together mentioned in the list and also do the tempering.</p>
<p>3.  Add the ground mixture and tempering to the zucchinis and let it boil for another 5 minutes.  Garnish it with cilantro.</p>

<p><span title="I" class="cap"><span>I</span></span> saw this recipe in Woman&#8217;s Day magazine under Heart Healthy Recipes category.  I wanted to try this recipe because it had bulgur wheat as the main ingredient, which I have not tasted before.  I use cracked wheat regurlarly, so I always have it in home.  I thought that both were same.  So before using it in the recipe, I wanted to be sure and check if there was any difference between bulgur wheat and cracked wheat and found out the following; (Source: <a href="http://www.epicureantable.com/articles/agrainbulgur.htm" target="_blank"><strong>www.epicureantable.com</strong></a>) <span id="more-104"></span></p>
<p><strong><span style="text-decoration: underline;">Bulgur Wheat:</span></strong><br />
Partially hulled whole wheat kernels that are soaked, then steamed (hence pre-cooked if you will), dried and then crushed are called bulghur.  It requires no or little cooking.  Though modern processes involve oven drying or roasting some villages still sun dry bulghur on their rooftops. </p>
<p><strong><span style="text-decoration: underline;">Cracked Wheat:</span></strong><br />
Raw whole wheat berries that are crushed to varying qualities of texture are called cracked wheat and require cooking.  These are also found in 3 grades of coarseness: fine, medium and coarse, the choice of which depends on use and preference.</p>
<p>To simplify it even more bulgur is wheat cracked after cooking and drying, whereas the wheat is cracked in raw stage for cracked wheat.<br />
 <br />
<strong><span style="text-decoration: underline;">Are they interchangeable?</span></strong> <br />
This depends on whether the recipe requires cooking or not and your own degree of purism.  A salad recipe such as tabooli is uncooked, and so requires true bulghur as do recipes where bulghur is brought to the boil, cooked for a moment then left to rest off heat to swell as in a pilaf.   Recipes requiring longer cooking times or coarse grain bulghur can be replaced with cracked wheat, but will need more cooking time.<br />

But both bulghur and cracked wheat are excellent sources of fibre, minerals and vitamins for your diet.</p>
<p>Moving on to the recipe,  I have scaled down the measurements given in the <strong><a href="http://www.womansday.com/recipe/veggie_chili-2142.html" target="_blank">original recipe</a></strong>; still we had a lot of chili.  I made it for dinner and it was very filling.</p>
<p><strong><span style="text-decoration: underline;">Ingredients:</span></strong><br />
Water &#8211; 3 cups<br />
Bulgur Wheat &#8211; ½ cup<br />
Olive Oil &#8211; 2 teaspoon<br />
Onion, chopped &#8211; ½ cup<br />
Red Pepper, chopped &#8211; ½ cup<br />
Chili Powder &#8211; 1 tablespoon or as per taste<br />
Garlic, minced &#8211; 1 tspn<br />
Ground Cumin &#8211; 1 tspn<br />
Water &#8211; 2 cups<br />
Crushed Tomatoes &#8211; 1 cup<br />
Pumpkin Puree (canned) &#8211; 1 cup<br />
Zucchini, medium, diced &#8211; 1<br />
Frozen Corn, ½ cup<br />
Black Beans (canned), drained and rinsed &#8211; 1 cup<br />
Cilantro, chopped &#8211; ¼ cup</p>

<p><strong><span style="text-decoration: underline;">Accompaniments/Optional:</span></strong><br />
Reduced-fat Cheddar<br />
Reduced-fat sour cream</p>
<p><strong><span style="text-decoration: underline;">Procedure:</span></strong><br />
1.  Put 3 cups of the waer and bulgur in a medium microwave-safe bowl.  Cover and microwave on high until bulgur is tender, about 13 minutes.</p>
<p>2.  Meanwhile, heat oil in a large nonstick skillet.  Add onion and pepper; saute 5 minutes.</p>
<p>3.  Add chili powder, garlic and cumin; saute until fragrant.</p>
<p>4.  Add remaining 2 cups water, the tomatoes, pumpkin, zucchini and corn; bring to a boil over medium-high heat.</p>

<p>5.  Reduce heat and simmer 10 minutes, stirring occasionally, until vegetables are tender.</p>
<p>6.  Stir in beans and bulgur; heat through.</p>

My husband loved the chili.  The only thing I didn&#8217;t like was the flavor of the red pepper.  I will be trying it without the red pepper next time.</p>

<p><span title="I" class="cap"><span>I</span></span> was searching for zucchini recipes and found this one in Food Network&#8217;s site.  It&#8217;s by Paula Deen.  The <strong><a title="Chocolate Chip Zucchini Bread" href="http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_138913,00.html" target="_blank">original recipe</a></strong> yields 2 loaves, so I scaled down the ingredients to 50% to bake 1 loaf and used bananas to make it eggless.  <span id="more-54"></span></p>
<p><strong><span style="text-decoration: underline;">Ingredients: </span></strong></p>
<p><strong><em>(PART 1)</em></strong><br />
All Purpose Flour 1.5 cups<br />
Baking Powder 1/4 tspn<br />
Baking Soda 1/2 tspn<br />
Cinnamon 1/4 tspn ( I used even little because I&#8217;m not a big fan of cinnamon)<br />
Salt 1/2 tspn</p>
<p><strong><em>(PART 2)</em></strong><br />
Zucchini peeled and grated, 1 cup (I used 1 medium zucchini, the gratings measured nearly 1.5 cups)<br />
Semi Sweet Chocolate Chips 1/2 cup (I used mini chocolate chips)<br />
Pecans 1/2 cup, chopped</p>

Vegetable Oil 1/2 cup<br />
Granulated Sugar 3/4 cup<br />
Bananas 2 medium size, mashed<br />
Vanilla essence 1 tspn</p>
<p><strong><span style="text-decoration: underline;">Procedure:</span></strong><br />
1. Pre-heat the oven at 350 F.<br />
2. Combine ingredients in Part 1 and sieve them.<br />
3. To this add the ingredients in Part 2.<br />
4. Combine ingredients in Part 3 in a blender/or cream it using an electric hand mixer.  I used my magic bullet blender to blend it.  Add this mixture to the above dry ingredients and mix it well.  You may add a little milk, if you feel that the mixture requires some more liquid.  I had to add a couple of tablespoons of milk because I increased the quantity of zucchini.<br />
5. Pour it in a greased bread loaf pan.</p>

<p>6. Bake it at 350F for 50 min or until a skewer inserted in the middle of the loaf comes out clean.<br />
7. Cool the bread in the pan for 30 minutes before transferring it to a wire rack.  Wait for another 30-45 minutes before slicing the bread.</p>

<p><strong><span style="text-decoration: underline;">My Notes:</span></strong><br />
1. This is similar to the <strong><a title="Eggless carrot cake" href="http://www.egglesscooking.com/2008/03/19/carrot-cake/" target="_self">carrot cake</a></strong> recipe, but uses zucchini and chocolate chips instead.  Next time I will add both carrots and zucchinis.</p>
<p>2. I feel that the Magic Bullet Blender is very versatile.  I bought it 2 years back to puree steamed vegetables and fruits in small quantities for my infant son.  But it does a lot more.  The recipe booklet which comes along with the blender is also very useful.  I have made muffins and soups as mentioned in the recipe book and it has come out very well also.  Even in the above recipe I add all the ingredients in Part 3 in the blender&#8217;s big jar and gave it a few pulses and it&#8217;s ready within few minutes.  I find it more easy than using an electric hand mixer.</p>
<p>3.  Use Vegan chocolate chips/carob chips to make this bread100% vegan.</p>

<p>I asked my husband to get 1 zucchini to try the <strong><a href="http://www.egglesscooking.com/2008/04/16/oven-baked-eggless-zucchini-fries/">oven baked zucchini fries</a></strong>, but he bought 4 instead. Anyway it worked out good because I was able to come up with 3 new recipes. They are zucchini pappu, chocolate chip zucchini bread and zucchini soup. I&#8217;ll be posting the other 2 very soon. I wanted to post the zucchini bread first, but when I mentioned about the zucchini recipes to my friend Laksh of <strong><a title="Lakshmusings" href="http://www.lakshmusings.com/musings/about-me/" target="_blank">Lakshmusings</a></strong>, she told that she would try zucchini pappu. So I thought I should post that one first.</p>
<p><strong><span style="text-decoration: underline;">Ingredients:<br />
</span></strong>Zucchini 1 medium size, peeled and grated (don&#8217;t drain the water)<br />
Tomato 1 medium size, cut into small pieces or 1/4 cup crushed tomatoes<br />
Toor Dal 1/4 cup, pressure cooked<br />
Sambar Powder 1 teaspoon<br />
Green Chilli 1 medium, slit it<br />
Salt 1/2-3/4ths of a teaspoon according to your taste<br />
Water 1/4-1/2 cup as required</p>
<p><strong><span style="text-decoration: underline;">For Tempering:</span></strong><br />
Oil 2 teaspoons<br />
Mustard seeds 1/2 teaspoon<br />
Channa Dal and Urad Dal 1 teaspoon each<br />
Curry leaves 3-5 leaves</p>
<p><strong><span style="text-decoration: underline;">Procedure:</span></strong><br />
1. In a sauce pan add the oil and after it heats add the rest of the tempering ingredients.<br />
2. Once the dals turn golden brown add the grated zucchini, slit green chilly, tomato puree/tomato pieces and sambar powder,little water and close the lid. Zucchini itself has water content in it, so just add little water to make sure that the zucchini does not stick to the bottom of the vessel while cooking.<br />
3. Once the zucchini is done add the cooked toor dal and let it boil for another 2-3 minutes.<br />
4. Garnish it with cilantro.</p>

I have tried the exact same recipe with ridge gourd and bottle gourd too.  They also taste very good.  You may also add a teaspoon of tamarind extract with the zucchini, if you like it sour.</p>
<p><strong><span style="text-decoration: underline;">My Notes:</span></strong><br />
Nowadays I use crushed tomatoes a lot in my cooking. It&#8217;s very economical when you compare it with the price of fresh tomatoes and also saves you time in the kitchen. Once you open the can pour the contents into another jar/plastic box and store it in the refrigerator. One 32 ounce can lasts for 2 weeks for me and it&#8217;s only 79 cents, when a pound of fresh tomatoes is anywhere between $1.50 to $2.00 and they also rotten quickly. Moreover I came across one more fact that cooked and canned tomatoes have more lycopene than the fresh ones. Anyway I&#8217;m not telling &#8220;don&#8217;t buy fresh tomatoes&#8221;, it&#8217;s just my observation. I thought I can share it with everybody here.  Moreover my husband does not like too much of tomatoes in his diet, so this works for me.  His favorite dish with tomatoes is Tomato Rice, I use crushed tomatoes in that too.</p>

<p><span title="A" class="cap"><span>A</span></span>s long as there is Parents magazine, I will not have any problem finding easy baking recipes.  This is one such simple and tasty recipe.  I tried it for the first time yesterday with one zuchini.  It was crispy on the outside and tender inside.  Zucchini being a soft vegetable, when it cooks, the inside is not as firm as the potato fries. It tastes similar to the South Indian appetizer <strong><a title="Bajji" href="http://en.wikipedia.org/wiki/Bajji" target="_blank">Bhaji</a></strong>, which has a crunchy exterior and soft/mushy inside.<span id="more-47"></span></p>

<p><strong><span style="text-decoration: underline;">My Notes:</span></strong><br />
1. I used bread crumbs instead of cornflakes.<br />
2. I also added some pepper powder and chilly powder for the adults&#8217; version.<br />
3. Beat the yogurt with a fork nicely and pour it in a plate so that dipping the zucchini sticks will be easy.<br />
4. Dip 2 to 3 sticks at a time and put them in the bread crumbs mixture and shake the plate, so that the crumbs get evenly coated throughout the zucchini.<br />
5. Place them in a greased baking sheet. I baked it for around 23-25 minutes to get the desired crunch, even though the recipe mentions only 15 minutes.<br />
6. One zucchini is enough for 2 adults.</p>
<p><strong><span style="text-decoration: underline;">Update:</span></strong><br />
One of my friend mentioned that the zucchinis burnt in the oven around 20 minutes.  As I have mentioned in the notes section the baking time in the original recipe is only 15 minutes.  But mine was not cruncy enough, so I kept increasing the time 2-3 minutes and was checking constantly and around 24 minutes mine was nice and crunchy.  I guess I coated the zucchinis with too much yogurt and/or bread crumbs. So I would advice to bake for 15 minutes first and then bake for some more time if necessary.</p>

<p>When I first came across this recipe I thought she had skipped some of the ingredients, so ignored it and went further. I went back once again and checked the comments section to see if I could gather some information. Then only I was assured that the recipe really required only 3 ingredients. Baking can&#8217;t get any simple!<span id="more-14"></span></p>
<p><strong><span style="text-decoration: underline;">Potato Rosti:</span></strong></p>
<p>Baking it for the first time, I tried it with 1 large potato. Peel the potato, cut into 4 parts and microwave for 4 minutes. Cool it and grate it. I divided the grated potatoes into 2 parts. For the first batch I simply followed her recipe, mixed half of the grated potatoes, coriander, salt and pepper. Baked it for 40 min at 400F. It was very crispy and tasty. It&#8217;s a very healthy snack without oil. I think that depending upon your taste you can also reduce the baking time to 35 min, so you may not feel that the bottom is burnt. I got 8 rostis for this quantity. It was good by itself, we also had some ketchup with it.</p>

<p><strong><span style="text-decoration: underline;">Zucchini Rosti:</span></strong></p>
<p>I always like to give a twist to a recipe by adding some other ingredient(s). I think it&#8217;s fun to experiment. Moreover with a toddler around, I have to do a lot of sneaking vegetables. I don&#8217;t know why I chose zucchini, but as soon as I thought about making some modification, zucchini just flashed in my mind. </p>
<p>I used the other half of the grated potato, 1 medium zucchini (grated), coriander, salt and pepper to taste. Dropped spoonful of the mixture on a greased baking sheet and baked it for 40 min at 400F. These rostis were very green in color and the top was not fully cooked as in the previous case. So I set the oven to broil mode for another 2 minutes. I got another 10 rostis. The taste was very good but this one was not as crispy as the potato rostis. Either I should have reduced the quantity of zucchini or should have baked it for some more time. Anyway I was very happy because my son just loved it.</p>
