I'm Madhuram, founder & author of Eggless Cooking, where I share my passion for egg-free and vegetarian recipes. My journey into eggless baking began in 2007, born out of necessity and curiosity.

Growing up in India in a lacto-vegetarian household, we never used eggs in our cooking. Store-bought cakes and desserts containing eggs were allowed, but bringing eggs home was a strict no. When I moved to North America after marriage, I was captivated by the world of baking through Food TV shows. The idea of creating baked treats at home intrigued me, but my upbringing left me hesitant about using eggs.

I started from scratch, with no background in baking. Armed with the Baking for Dummies book and a basic baking set from Walmart, I began teaching myself the fundamentals. My initial attempt at baking a chocolate chip cookie with eggs was a disaster—both due to technique and my aversion to eggs. That’s when I turned to the internet in 2007, searching for eggless recipes, at a time when vegan and eggless baking were not as mainstream as they are today.

I found inspiration in an eggless banana-carrot cake recipe from a fellow Indian blogger, and its success gave me the courage to explore further. As I discovered a community of food bloggers, I realized there was a growing demand for egg-free baking recipes, particularly from those with dietary restrictions, allergies, or personal preferences. This inspired me to create a one-stop destination for eggless baking: Madhuram’s Eggless Cooking, launched on March 15, 2008.

From a Hobby to a Community

My initial goal was to curate eggless recipes from across the web, but as I honed my own baking skills through trial and error, I began developing original recipes. One of my proudest moments was baking an eggless chocolate cake with silken tofu as an egg substitute for my son's third birthday in 2008. That success fueled my passion for experimenting with egg substitutes like yogurt, silken tofu, flaxseed, aquafaba and more.

Over the years, I have perfected the eggless version of classic recipes and created the best eggless pancakes, eggless vanilla cake, eggless chocolate chip cookies, eggless blueberry muffins, eggless omelette, and eggless mayonnaise to mention a few. Many of these recipes have been featured in various media outlets, including Fox TV. I also take pride in creating signature desserts like the eggless rasmalai cake, eggless red velvet cake, and pumpkin kulfi.

Experience and Expertise You Can Trust

I have spent over a decade testing and perfecting recipes, ensuring that every recipe I post is thoroughly tried, tested, and refined. Not all of my baking experiments were successful—many attempts ended in failure—but I believe in transparency and only share recipes that meet my high standards.

To support bakers of all experience levels, my recipes include detailed sections on Ingredients and Substitutes, Taste and Texture, and My Notes, so readers can easily follow along without feeling intimidated. I know what it’s like to be a beginner, and my goal is to make eggless baking accessible and enjoyable for everyone.

In addition to eggless baking, I also blog about vegetarian recipes that are our family favorites, simple and healthy. Food is my love language, and I want to spread that joy to as many kitchens as possible.

Looking Ahead

After 16 years of blogging, my passion for creating eggless recipes remains strong. With my boys now 19 and 14, I have more time to explore new projects and ideas. I am excited to expand my blog, share more recipes, and continue connecting with my wonderful community of readers.

Alongside my love for food, I am also in the process of becoming a Certified Lactation Educator. Having breastfed both of my children, I am passionate about supporting new and expectant mothers through personal experience and evidence-based information. I have another blog, NursingMoms.net, dedicated to this cause.

I’m incredibly blessed to have found my purpose—cooking and nurturing—and to have a supportive husband who has been the backbone of this blog from day one and any other avenue that I want to explore.

My background is very very similar to yours... a south indian [tamilian from madras] - eating habits, lifestyle, love for cooking and baking, husband's food preferences etc [:)] i am yet to try your recipes... but am very confident that they will come out well. keep up your good work.

    I really loved your recepies and I'mlooking forward to try one. I was going through the cake recipies but I could'nt understand
    what is silken tofu. Can you tell me please? Thanks......you rock!!

    Thank you very much Priyanka. Silken tofu is a type of tofu, the others being soft tofu, extra firm and firm. You can get it in regular American grocery stores and Oriental stores. Just get it and put it in the blender and blend it and use 1/4 cup of the puree for each egg to be replaced.

    I'm a college student in California. I love cooking, but only recently became interested in baking. My family is from Karnataka, and my dad is a strict vegetarian (no eggs!). I've been searching for and experimenting with vegan dessert cupcakes/quick-bread recipes so I can bake him something delicious that he can actually consume and enjoy! This is an AMAZING website –I only discovered it today (when trying to understand why vinegar is used in vegan quick breads) and I’ve been on several times since. (Also, very exciting and inspiring to learn you are a south Indian woman!)

    Just clicked here to read your about after leaving a comment on your vadais...my family is also Telegu as we're originally but Andra but all settled in Tamil Nadu now. So we also speak that mixed version of Tamil and Teluegu!

    Madhuram just read about you.. SAME PINCH even my oven was used for storage as my kitchen was too small and i was zero at baking.. now i have started baking and its so much fun ! you rock ! i love your recipes and your innovations in cooking !

The first day I saw your bolg was the day u wrote abt moving to canada and the same day I discovered with joy and disappointment that u live in phila. and are now moving away.     hi madhuram, it was so interesting to read your world of cooking..., I just moved to UK 2 1/2 years back like you i used to always watch mostly food channels in all languages possible now here i watch some food programs but most of them are non-veg like you i think of substituting veggies, but sometimes i get bored because i love spicy food !!, just now i have started baking...., like you i was storing my pans & kadais, but used to cook french fries and of course when i saw the pastry case just like ur hubby i thought of stuffing it with allo masala & vegetable masala i restricted to only that much...., ok keep ur good work..., let me go into your blogging world and see what all wonderful dishes you have in store and i am going to book mark and try them too..., first thing is i want to bake something without the eggs and post it in my blog and send you a note, about checking on me of how i have done.

    Thank you so much for your website!!! I have a 5 year old that was diagnosed with a nut and egg allergy at a year old. He starts school next year and will have to take his lunch with him. I have started to look for recipes to give him variety and help expand his taste buds. It is so hard to find eggless recipes now. Plus he loves cakes and cookies but our choices are limited since I didn't know what to use as a substitute. So thank you so much!!!

    Madhuram ....great blog and such creative recipes. I, too, am from suburbs of Philly ...do you have any recipes with just yellow cornmeal and soya flour ? It would be much appreciated :))))) MeenaV

    Thank you very much Meena. I usually add soy flour to whole wheat flour while preparing chapathis. But other than that I have not tried any other recipe. Will definitely keep this request in mind when I get it the next time. As for cornmeal, you could either try the vegan cornmeal muffin or the dumplings (kozhukattai).

    Congratulations on your website. That was an amazing write up. I love watching food network just like you. It sounds little weird but we have quite a few similarities. I learnt how to bake (did I tell you that I was using the oven to store everything?)for the first time after coming to US and my first dish was curry puffs 🙂
