I'm Madhuram, founder & author of Eggless Cooking, where I share my passion for egg-free and vegetarian recipes. My journey into eggless baking began in 2007, born out of necessity and curiosity.

Growing up in India in a lacto-vegetarian household, we never used eggs in our cooking. Store-bought cakes and desserts containing eggs were allowed, but bringing eggs home was a strict no. When I moved to North America after marriage, I was captivated by the world of baking through Food TV shows. The idea of creating baked treats at home intrigued me, but my upbringing left me hesitant about using eggs.

I started from scratch, with no background in baking. Armed with the Baking for Dummies book and a basic baking set from Walmart, I began teaching myself the fundamentals. My initial attempt at baking a chocolate chip cookie with eggs was a disaster—both due to technique and my aversion to eggs. That’s when I turned to the internet in 2007, searching for eggless recipes, at a time when vegan and eggless baking were not as mainstream as they are today.

I found inspiration in an eggless banana-carrot cake recipe from a fellow Indian blogger, and its success gave me the courage to explore further. As I discovered a community of food bloggers, I realized there was a growing demand for egg-free baking recipes, particularly from those with dietary restrictions, allergies, or personal preferences. This inspired me to create a one-stop destination for eggless baking: Madhuram’s Eggless Cooking, launched on March 15, 2008.

From a Hobby to a Community

My initial goal was to curate eggless recipes from across the web, but as I honed my own baking skills through trial and error, I began developing original recipes. One of my proudest moments was baking an eggless chocolate cake with silken tofu as an egg substitute for my son's third birthday in 2008. That success fueled my passion for experimenting with egg substitutes like yogurt, silken tofu, flaxseed, aquafaba and more.

Over the years, I have perfected the eggless version of classic recipes and created the best eggless pancakes, eggless vanilla cake, eggless chocolate chip cookies, eggless blueberry muffins, eggless omelette, and eggless mayonnaise to mention a few. Many of these recipes have been featured in various media outlets, including Fox TV. I also take pride in creating signature desserts like the eggless rasmalai cake, eggless red velvet cake, and pumpkin kulfi.

Experience and Expertise You Can Trust

I have spent over a decade testing and perfecting recipes, ensuring that every recipe I post is thoroughly tried, tested, and refined. Not all of my baking experiments were successful—many attempts ended in failure—but I believe in transparency and only share recipes that meet my high standards.

To support bakers of all experience levels, my recipes include detailed sections on Ingredients and Substitutes, Taste and Texture, and My Notes, so readers can easily follow along without feeling intimidated. I know what it’s like to be a beginner, and my goal is to make eggless baking accessible and enjoyable for everyone.

In addition to eggless baking, I also blog about vegetarian recipes that are our family favorites, simple and healthy. Food is my love language, and I want to spread that joy to as many kitchens as possible.

Looking Ahead

After 16 years of blogging, my passion for creating eggless recipes remains strong. With my boys now 19 and 14, I have more time to explore new projects and ideas. I am excited to expand my blog, share more recipes, and continue connecting with my wonderful community of readers.

Alongside my love for food, I am also in the process of becoming a Certified Lactation Educator. Having breastfed both of my children, I am passionate about supporting new and expectant mothers through personal experience and evidence-based information. I have another blog, NursingMoms.net, dedicated to this cause.

I’m incredibly blessed to have found my purpose—cooking and nurturing—and to have a supportive husband who has been the backbone of this blog from day one and any other avenue that I want to explore.

    Firstly Congrats on your website!! As one of our class mate mentions and now knowing that you remember there were 2 Anita's in our class, I'm the other who studied in the A section. I live in New Jersey and what a coincidence, I love to watch food network!!!
    I work full time and I love baking as well. The shows inspired me to bake! So it's thrilling that we share the same interests.

    U know what? U girls from India now living abroad r a fantastic bunch. U seem so dedicated about putting good food on the table for your spouses/kids. And you don't neglect your religious obligations too. Wow. Very inspiring. (I wonder though: Do you ever get tired?) Its a big world out there in cyberspace and I feel like Alice in Wonderland going from one link to another! Keep up the great work. I got inspired to do better veg food after I picked up two great books written by the lovely Viji Varadarajan, a Tamil Brahmin lady from Chennai. I also made contact with her to clear any doubts. Thanks to her I now cook fairly decent dishes for my husband, who is vegetarian. She now has a website as well which you may want to visit. I'm a housewife living in Kuala Lumpur, Malaysia. Thanks.

    Me and my husband are also strict vegetarians so when i came to US i started experimenting cakes and cookies without eggs. It was a lot of fun .Looks like we have a lot of things in common.Also i am a cake decorating teacher in US so if you have any questions about the cake classes please feel free to ask.

    Oh thank you sooooo very much for what you are doing here! I have been desperately trying to find good recipes for baking egg free. My son is allergic to eggs and we loved baked goods...he especially loves them. I have mastered the cupcake pretty well...but have failed most other attempts at baking egg-free. I tried your corn muffin recipe this evening for him to go with our chili and it was FANTASTIC!!

    Hi Madhuram,

    Your website has inspired us to continue our cooking in vegetarian foods! Initially, living in Canada made it incredibly hard for us vegetarians especially when it came ot the sensitive topic of eggs. In my elementary school years, I would avoid all kinds of cake, cookies, biscuits and other delectable food just because of the eggs.

    As I grew up, I also started to experiment with baking cake adn other pastries without eggs. Although some were an absolutely disaster, I realized that it takes time to perfect anything. After seeing your website, my sister and i are absolutely inspired to cook even more! And your pictures, they look absolutely beautiful! Keep it up!

    Madhuram, Thats a wonderful and sweet post! Great knowing about you. You may not know but I don't eat egg and every time I bake, I used to feel left out...then I started making only my eggless black forest cake. anyway now I dont' have much time for baking..but have bookmarked your entire blog to try when I start back..everything looks so yummy!..Kudos to your hubby too for encouraging you so much!

    Madhuram, hi...this is in reply to your mw cake..I have made one frm net (not blog) which turned hard..this cake stays super moist even next day..I used not 200gm condensed milk but 160 gm evaporated milk +40 gm fine white sugar, I did not need coke/juice to damp it. If you are trying it do try it this way..skip the frosting first time if you want, it tastes real good n wd recommend u to go for it, as it takes very little time! 😀 Also would like to add here that your blog is truly going great with vegan/eggless/chock full of health recipes! KEEP IT UP...great for blogging readers like me! 😀 HUGS.

    It is so lovely to read about you and get to know you better. Your baking journey is heartwarming and humorous at the same time, and clangs a loud bell with people like me, who share a similar attitude to eggs and baking:)
    The only difference is, unlike you, I have'nt yet taken the initiative to try baking, as I am a bit paranoid about my son ( who has a tremendous sweet tooth) becoming a sugar addict.So, although we do enjoy sweet treats from time to time, I make sure that the real good stuff is not terribly accesible to us all;)
