Egg Substitute Event – Yogurt/Buttermilk Round Up

When I announced this event I was not sure if yogurt and buttermilk would work out as good egg substitutes while baking. But I was surprised that it does work and many food bloggers and two non bloggers have also tried it and have sent in their entries as well. So thank you everybody for participating in this event. As I mentioned in the event announcement I think we have covered all the major egg substitutes. Others not covered are agar-agar, lecithin, soy flour etc. PG and Zankhna (a visitor) suggested conducting an event for agar-agar, which I plan to announce in a month or two. Yogurt/Buttermilk ~ Egg Substitute Event

Like always I have received a lot of entries for the Vinegar event too. This time I have also received recipes from 2 visitors who are not food bloggers. I will post their recipes this week and do the round up next week.

I have chosen yogurt as this month’s theme. Buttermilk is also included. Vegans can use soy yogurt. I think this will be the last substitute in this series. I see that lecithin, gelatin, arrowroot powder, soy flour etc are also mentioned as egg substitutes, but I think that they are not as versatile as the ones which we have covered already. One of the visitor here (Sadhana) mentioned about Chia seeds as egg substitute. I found out that it is similar to that of flax seed powder substitution. You have to powder the chia seeds and blend it with water. So I’m going to take a pass on that. If anybody has any other egg substitute in mind, please let me know. Read the rest of this entry »

Vinegar ~ Egg Substitute Event

First I would like to thank all my blogging buddies for flooding my inbox with recipes using EnerG egg replacer powder. You all know that my husband only does the round up right! I have to give him the content and he will take care of the presentation part. Since he is extremely busy with his office work, he can work on this only on Sunday. So wait until Monday to see what wonders you can create with egg replacer powder.

This month’s egg substitute is vinegar. I read in a couple of books that 1 tablespoon of vinegar along with 1 teaspoon of baking soda can be substituted for 1 egg. Both white distilled vinegar and apple cider vinegar can be used. This combination works best in cakes, cupcakes and quick breads. I also read in few forums that 2 tablespoons of lemon juice can be used in place of the 1 tablespoon vinegar. So for this event you could use either, but I have to mention here that I have not tried the lemon juice substitution. Read the rest of this entry »
