Egg Replacement Event - Flax Seed Meal - Round Up

I had a wonderful time baking with flax seed meal. I'm sure a couple of other blogging buddies did too, because I have received many entries for the event. Actually more number of entries than the Silken Tofu event. Thanks once again for the enthusiastic participation. Hope you would extend your support to this event as well.

BREADS

Pallavi's Vegan Mango Bread

Pallavi has whipped up a super easy vegan mango quick bread using store bought Kesar Mango Pulp. Can you believe that she has used only 4 tablespoons of oil to bake this bread? Chocolate lovers, you can bake the mango-chocolate chip version and the nutties out there try her mango-almond bread.


Divya's Spiced Vegan Mango Bread

Divya uses fresh mangoes to bake the bread. Who doesn't like the taste and aroma of fresh, ripe mangoes? She has also spiced it up with ground cinnamon, ginger and nutmeg.


Pallavi's Vegan Mixed Fruit Bread

Pallavi shares with us another recipe for a quick bread. This bread is loaded with dried fruits and mango pulp. Also it has very little fat like her previous bread, making it very healthy.


Madhuram's Vegan Cranberry Nut Quick Bread

Madhuram's Vegan Oatmeal Raisin Cookies

PG's Eggless Apple Cookies

This one is for the time pinched cooks who want to bake eggless and make it quick also. These brownies are chewy and fudgy and taste awesome too.


Bharti's Eggless Brownies

Bharti has adapted Alton Brown's decadent brownie recipe to come up with this eggless version. She tells that the brownies were not chewy but brownies are brownies and I love them anyway. Check out the black beauty here.

Priya's Eggless Beet and Sesame Buns

Priya amazes us with another unique creation of hers. She has baked healthy buns using whole wheat flour, beet puree and topped it off with sesame seeds. The light pink hue from the beet puree makes it look absolutely gorgeous.


Libby's Eggless Pasta Dough

I'm absolutely floored by Libby's entry. She has prepared pasta dough using flax seed meal instead of eggs and has cooked 2 unique dishes using the eggless pasta dough. The bowl of hot miso flavored pasta and the plate of pumpkin ravioli started hunger pangs in my stomach as soon as I looked at the pictures.

Sarah's Eggless Mini Apple Tartlets

Wish you could have a whole apple pie for yourself but without gaining pounds? Then try Sarah's neat idea of baking it in a muffin pan. She also uses significant amount of spelt flour, making it even more healthy.


Sweatha's Coconut Chocolate Caramel Candy

A very special treat for all those sweet lovers out there! Sweatha bakes these ooey-gooey candies that nobody can resist.


Priya's Eggless Oats and Chocolate Chip Scones

I thought that I was addicted to baking. But not anymore, because Priya is the "Ultimate Baking Addict". I guess she bakes everyday. She has baked these healthy scones using whole wheat flour, oats, almond milk and also makes it interesting for the kids by adding chocolate chips.

    Hello Madhu,

    I have never baked using flaxseeds but I was thinking of giving it a try. Could you please help me with a couple of questions?

    Firstly, do you use golden flaxseeds or the brown ones? Can I use either?

    Secondly, Do you buy the powder from the shop or ground the seeds at home?

    Lastly, what is flaxseed meal? Is it same as ground seeds?

    Hi Madhu
    i have a small doubt...i tried baking pillsbury chocolate cake using flaxseed pwd as egg substitute..on the pack they mentioned 3 eggs so i have added 3tbs os flaxseed mixing with 9tbs of water(as it is said on the pack 1 tbs flaxseedpwd plus 3tbs water euals 1 egg)..but the cake did not come out very well....in the center it became very soft...its not firm..i baked it for little longer also but didnot help...if i use yogurt as asubstitute for ready cake mixies....how much yogurt do we need to add for each egg...
    please let me know this....

    Sushma, use 1/4 cup of yogurt for each egg to be replaced. Why don't you try 1 teaspoon of flax seed powder and 1/4 cup of water for each egg instead? I have been using this measurement and everything turns out good.

    hi madhu, i m hearing a lot abt. flax seed powder as egg substitute these days...but i cant find it in Delhi, do u have any idea where i can get it ?

    Payal, flax seed is alsi/tisi in hindi, so ask for it in the grocery stores.

    chocolate fondue cant be made without eggs...but somebody suggested me that it can be made with flaxseed powder...can u help me ...what is it n is it pure veg...?
