Egg Replacement Event – Flax Seed Meal – Round Up

I had a wonderful time baking with flax seed meal. I’m sure a couple of other blogging buddies did too, because I have received many entries for the event. Actually more number of entries than the Silken Tofu event. Thanks once again for the enthusiastic participation. Hope you would extend your support to this event as well.

Pallavi has whipped up a super easy vegan mango quick bread using store bought Kesar Mango Pulp. Can you believe that she has used only 4 tablespoons of oil to bake this bread? Chocolate lovers, you can bake the mango-chocolate chip version and the nutties out there try her mango-almond bread.


Divya’s Spiced Vegan Mango Bread

Divya uses fresh mangoes to bake the bread. Who doesn’t like the taste and aroma of fresh, ripe mangoes? She has also spiced it up with ground cinnamon, ginger and nutmeg.


Pallavi’s Vegan Mixed Fruit Bread

Pallavi shares with us another recipe for a quick bread. This bread is loaded with dried fruits and mango pulp. Also it has very little fat like her previous bread, making it very healthy.


Madhuram’s Vegan Cranberry Nut Quick Bread

Priya amazes us with another unique creation of hers. She has baked healthy buns using whole wheat flour, beet puree and topped it off with sesame seeds. The light pink hue from the beet puree makes it look absolutely gorgeous.

I’m absolutely floored by Libby’s entry. She has prepared pasta dough using flax seed meal instead of eggs and has cooked 2 unique dishes using the eggless pasta dough. The bowl of hot miso flavored pasta and the plate of pumpkin ravioli started hunger pangs in my stomach as soon as I looked at the pictures.

I thought that I was addicted to baking. But not anymore, because Priya is the “Ultimate Baking Addict”. I guess she bakes everyday. She has baked these healthy scones using whole wheat flour, oats, almond milk and also makes it interesting for the kids by adding chocolate chips.

    hi madhu, i m hearing a lot abt. flax seed powder as egg substitute these days…but i cant find it in Delhi, do u have any idea where i can get it ?

    Payal, flax seed is alsi/tisi in hindi, so ask for it in the grocery stores.

    chocolate fondue cant be made without eggs…but somebody suggested me that it can be made with flaxseed powder…can u help me …what is it n is it pure veg…?
