Pureed Fruit as Egg Substitute – Round Up

When I first announced Egg Replacement Event I was not sure how well it would be received. I need not have doubted after all, because my food blogging buddies have consistently given their support for this one of its kind event by sending a lot of entries. Thank you very much DK, Uma, PG, Sweatha and Priya especially for sending the most number of entries each and every month.
Also thanks to my wonderful husband for putting together this beautiful round up. He spent 3 hours on this yesterday afternoon.
DK has put a healthy spin on America’s classic, carrot cake. She has come up with an eggless carrot cupcake recipe which uses whole wheat pastry flour, carrot juice and grated carrots. Also she has gone for mascarpone frosting instead of the traditional cream cheese frosting.
Priya never fails to amaze me with her energy to cook and bake. These cookies just use only 1/4 cup of all purpose flour and 2 tablespoons of canola oil. Using raisins instead of chocolate chips would make these cookies even more healthy.
As always Priya has come up with a different cookie recipe. These crispy cookies are also low fat cookies just like the previous one.
PG not only experiments egg free baking but also gluten free baking. These chocolate filled chocolate muffins are truly decadent.
I think Priya is going to publish a book named Oats 1001 very soon, because she is capable of creating so many number of recipes using oats. This one is again one of her simple to prepare, healthy cookie recipes. She uses dark chocolate bar which is rich in flavonoids.
Yet another easy to bake recipe from Priya. The tart looks perfect with all those sliced apples. Bake this when you find apples in abundance. Gelatin is used in this recipe, vegetarians and vegans can used agar agar instead.
Check this out immediately and you would be stunned to see how beautiful an eggless cake can look.
You can bake these cookies with the ingredients available in your pantry. They are easy to prepare and look absolutely delicious.
Yet another classic, banana muffins get a healthy makeover from DK. She uses whole wheat flour and demerara sugar to bake these low sugar treats.
A baking recipe cannot get as simple as this one and still give fabulous results. This is such an easy recipe, just mixing flour, sugar, nuts, dried fruits, applesauce and oil. No need for any special baking equipments or techniques. Simply mix and spread the batter in the pan. Get your kids involved while baking this fruitcake.
This is another interesting, healthy and sneaky recipe which I adapted from The Sneaky Chef. Use any breakfast cereal, dried fruits and nuts to make this wholesome and satisfying breakfast cookies.
Didn’t I tell you that she is very innovative? These low sugar treats are made of rolled oats, whole wheat flour, yogurt and banana puree. I think adding 1/4-1/2 teaspoon of baking powder would make it even more light and fluffy.
This is a very simple and colorful quick bread recipe. Also Uma has used only 2 tablespoons of oil. Instead of using chopped nuts, she has used semi sweet chocolate chips and I’m sure that kids would love that combination very much.
Actually I have to name this as Indira’s Eggless Banana and Carrot cake. This was the recipe which got me hooked on baking and eventually inspired me to start this blog. This is a no fail recipe. I must have baked these cakes at least a dozen times.
Check out here for cute looking spiced carrot muffins. It doesn’t look like its an eggless muffin. I was encouraged by her to use prune puree as an egg substitute.
Black beans in cupcakes? Don’t be skeptical about this one because I can assure you that nobody can find it out. You can’t taste both black beans as well as the prune puree.
Once again you need not have doubts about this recipe as well because my son enjoyed these healthy cupcakes very much.
