    i really need your help on using my 21 ltr kenstar microwave convection oven to bake a cake or muffins. it always turns into overcooked or under cooked with unpleasant texture and taste. please help and advice me on using the microwave convection oven for good cakes.i always follow the measurement strictly even though it does not work for me. pls pls pls help.

      I’m sorry Chhavi. I haven’t used microwave oven for baking. So not sure what’s happening, where it goes wrong. Do you preheat the oven?

      I just have one gluten-free cake recipe in my blog. You can check it out in the cakes section. But it’s not like your usual cake. More like a chocolate fudge cake. I’m yet to try gluten-free alternative for a regular cake.

    I cannot thank you enough for your collection of eggless recipes. Ever since my son’s egg allergy was discovered, we have had a really hard time finding recipes that are both eggless and tast great. We just made your chocolate cake with the silken tofu for my daughter’s birthday party. I doubled the recipe and baked it as a sheet cake and it was to die for! No one even knew that it was made with tofu and several people have asked me for the recipe!

    Like Rachel My son has a severe egg allergy he is anaphylatic to egg. We found this out early @ 8mnths so he’s never had a bought birthday cake, I was told about Egg replacers which have helped. but sites like yours help so so much please please keep up the good work.
    My son is now Turning 6yrs in dec & my baking has got a little better so this year think we’ll try that choc cake on your site looks delicious

    Hello- I just wanted to say thank you. I never realized how easy i have life without food allergies. My 2 1/2 year old daughter is allergic to eggs,citric fruits and tomatoes. Baking muffins and cupcakes are a EASY way for me to sneak in some nutrients to her as she can be incredibly picky eater. I pretend like i am allergic to eggs too to help her cope with eating differently than other people.
    I am so happy to find your site. Some of the muffin recipes i add a little wheat germ or oats- its yummy. i also love the tips on your site as well. after reading your tips and recipes, i have discovered that its not to hard to try and alter any recipe. Just thank you for your time and dedication!!!!

    Hello, I came across your site while looking for eggless cake and muffin recipes. I tried out the banana choc chip and it turned out great. The second time I baked it (yesterday) they tasted great but had sunk in the middle. When I took them out of the oven, they were fine and the shape was really beautiful. But after some time they sunk in and didnt look nice at all. Can you tell me what I did wrong so I can avoid doing in the future? I looked for solutions online and the reasons ranged from using more baking powder, baking at a high temp,etc…but I think these were for muffins that had sunk in while taking them out of the oven, not later like my case. Anyways, thanks for all your recipes and this wonderful site. It is a greay help to people like us who want to bake the same delicious stuff but without eggs.

    hi, i love to cook and i think that the eggless choc chip and banana muffins with buttermilk were great! they were a huge hit for my kids, they went crazy! They turned out to be really moist, with fantastic flavour! if anyone is thinking about making muffins, and they don’t have any eggs left than i wouls really recommend making these! i was just wondering what would you have to change if you were to put eggs in these?

    We just tried the carrot banana muffins and success yet again! Thanks again and I will definitely check out that cook book. I purchased EnerG at my local wholefoods for the cookie recipe so at least I already have that in my cupboard!

    I came across your site and it has been a lifesaver! My daughter was diagnosed with allergies to dairy, eggs, nuts and beans! It has been nearly impossible to find any sweet baked goods for her. Now that she is 18 months she stares in envy at other kids eatting breads, cookies and cupcakes while she eats her rice cake! We read stories with cookie monster or little kids eatting cookies and she sees pictures, but never has tasted the real thing.

    Two days ago I tried your chocolate chip cookie recipe and we were able to cook together and eat together! She adores the cookies and is so proud eatting and sharing them!

    You’re most welcome Michelle. I can imagine the look on your daughter’s face when she sees other kids enjoying their pastries. It must be really difficult for you too to see that. I’m really very very happy that your daughter was able to eat the cookies. When you get a chance, find the Joy of Vegan Baking book. It’s really very good. I’ve seen other books but this one is very simple to follow and the recipes work. You don’t have to shop for unusual ingredients (other than EnerG).

    Thank you for your site. I am a lacto-ovo vegetarian but my daughter was just diagnosed with an egg allergy so I am racking my brain how to adjust my recipes in addition to reading labels like crazy. I live in Italy and often at times it is difficult to find vegan ingredients or things like molasses.

    Please explain why you are eliminating eggs from recipes. If it is for health reasons why is there so much sugar and fat still in the recipes? That certainly is not healthy.
    For example, the simple loving cake above has sweetened condensed milk and 2 sticks of butter. I just don’t understand. Thanks.

    Hi Debbie, welcome to my blog. I choose not to bake with eggs because I was brought up in a vegetarian family. We never used eggs at home. Later I did try baking with eggs, but did not like the smell. So I’m not eliminating eggs for health reasons. Actually there are many out there in the same situation and especially there are a LOT of people with EGG ALLERGIES who are looking for eggless recipes, and especially eggless baking recipes. So sometimes the absence of eggs has to be made good for in a recipe with butter, condensed milk etc. But I’m also trying to find out more healthy eggless recipes.

    Simple loving cake

    2.5 cups flour
    14oz. can sweetend condensed milk
    1 cup orange juice
    2 sticks butter
    3 tsp. baking powder

    Mix flour and baking powder then add the juice and milk. Melt the
    butter and add as well. Put oil then a thin layer of flour on a 9
    inch by 13 inch baking pan. Preheat oven to 350, put batter in pan.
    Cook 30-40 mins, or until a toothpick inserted into cake comes out
    clean. Let cool and enjoy with some jam or cream cheese.
