How to substitute eggs in Cakes?
The most commonly used egg alternatives for cakes will be silken tofu, yogurt, pureed fruit, vinegar (in specific recipes, strictly not for recipes that uses more than 1 egg).
Personally, I found a winning combination to substitute for eggs in cakes, which is a mix of yogurt and pureed silken tofu. It works out beautifully, especially in plain vanilla sponge cakes.

Why does some of the cake have vinegar and do I have to use it.
Vinegar is used in egg free baking recipes to give the fluffy texture that eggs give. Care should be taken not to use too much vinegar because it will give an after taste. But when used in the right quantity you will get airy and light eggless cakes/cupcakes.

The brand which is pretty popular is Ener-G but there are other brands too like Bob’s Red Mill egg replacer and here in Canada we get something else too, don’t remember the name now. These are easily available in stores in the US and Canada. Not sure about other countries.
HI Benji. lovely website. For the Vanilla Cupcakes, instead of Ener-G egg replacer power, how much butter milk can I use.
I have got mixed reviews about that recipe already. So not sure how it will work out omitting the egg replacer powder and using butter instead of that. It would be too much fat.

I love to bake eggless cakes and muffins as few members of my family are vegetarians, including myself. I did try eggless vanilla butter cake, orange cake and banana cake but they didnot turn out well. I really don’t know which part I went wrong. Please help.

My recipe for yellow cake calls for 3 eggs and I only have 2. Can I substitute something else? Time is short so I can’t get to the grocery.
Yogurt will work Debbie. You can use 1/4 cup of yogurt for the other egg.

I would like to make this cake recipe today. It does not however specify what pan size I should use. Maybe that something you should add to the site? I’m going to guess at the size once I see how much better there is. Hopefully I guess accurately .

You may have to cut back on the baking powder in the recipe. How much depends upon the recipe.

Yes it depends on the recipe Jayanthi. There is no hard and fast rules. But in general, especially sponge cake types a combination of yogurt and silken tofu works out well.

I used to love a spicy omlettes with chillies and onion but became a vegan.I have tried several egg substitutes like cornmeal, silken tofu, etc to make a good omlette like the original but have not been successful. Can

I here that there is something called the Vegg which is a great substitute for things like this. Since I hail from a family which never cooked eggs I haven’t tried that.

Check out the cake recipes, Shweta. Most of the recipes use only simple ingredients except for a few. You shouldn’t be finding it a problem to follow my recipes.

Nope. It works only when you have to replace 1 egg. I have replaced 4 eggs only so far, not more than that.
